As a former professional chef who gave up carbs for health, I am super impressed with your innovative approach to carb free meals. Those look amazing. I am so tired of cauliflower mash. I also love your music! Do you perform the tracks? Nice work man and congrats on the weight loss. Keep it up! IF is key for most men.
Thank you so much! I’m not playing these tracks but I try to pick guitar tracks that are a lot like what I play. Hopefully in the future I can afford to get into the studio and record my own background music.
From the first time I made this recipe I would toast a half cup of beef gelatin and keep it in a spice jar to have on hand whenever I wanted to make this recipe or add an umami flavor to anything, like gravy. I have always made this in advance and reheated before serving since it is too much work to be making at the last minute. Putting it in the microwave on low power for a few minutes heats it right back up.

That's the kind of heIpfuI hints I Iike the most, just keep cooking when you think they're done and then cook them some more. I'm a pretty good cook but it doesn't appIy to this type of "inventive" cooking. : )
Great video y’all! I’ve been making my version of your recipe since your last video and absolutely love it. I have hens so I use my own eggs and I’ve found I like some yolks in mine. I use 1 stick salted butter, 40 egg whites and 20 yolks. I make gravy with the 20 yolks leftover. I use all beef gelatin no toasted and cook it with the eggs so In a way it gets toasted a little. I use more garlic cuz I love love it. I add dried parsley. I use 8 oz of fresh mozzarella, black pepper, 1/4 c Parmesan Asiago Romano blend, 4 oz cream cheese, 1/4 c sour cream, 1 tsp pink salt, 1/2 c cream. I cook eggs really quick and don’t dry them out but I put in fridge and then next day all the egg smell is gone and they reheat wonderful. So basically I make them a day ahead always. It’s so fast and I appreciate you so much for your recipe. :). Oh and lots of chives! Lol! Thank you so very much for teaching us techniques so we can put our own spin on your recipes! You’re an awesome teacher :)

Made these "potatoes" last night to serve with salmon. I LOVE them! A bit more of a process than making the real thing from scratch, but not much more and so much healthier! I will cut the recipe in half tho, my blender wont hold the full recipe and there are only 2 of us.

I made these whipped egg white mash potatoes and my husband really liked them. I did not tell him what I had made, he said the mashed potatoes were good and cheesy. Then I told him and he was pleasantly surprised. I did have trouble with getting the gelatin to dissolve completely in the butter. The little bits browned up and looked like bacon crumbles. It all blended up well making my dish a light tan color. I will make these again. These were delicious and a recipe keeper for our carnivore menu. Too bad you couldn't package this and sell it. I'd buy it!

However, I tried improvising the recipe since I didn't have the exact ingredients or equipment. -I didn't have beef gelatin, just unflavored. So I used beef stock in place of water when needed. -Didn't have fresh mozz, used bagged. So I sub'd .5oz of the bagged mozz for cream cheese -Only had handheld food processor. End result was potato tasting grits. Couldn't get it to come to a smooth texture - which, I'm guessing, can be attributed to the bagged mozz and weak blender. So don't substitute. Looking forward to trying this again. Thank you for all your work, Chris!!
Made Carnivore mashed potatoes 2.0 for the first time tonight. I felt guilty eating them because they tasted so real. You knocked it out of the park, Chris! My husband who is not carnivore (yet) was also very impressed. Maybe he’ll convert so I’ll make more!

sheryI, I enjoy reading the comments and get many tips from others. Someone eIse commented they use a stick bIender, maybe that wouId work. OR do you have a food processor? I hope you find something that works for you.
I made this yesterday, mine were purposely thick. They were great but filling so I had lots of leftovers. This morning they were pasty so I decided to try to turn them into MCDs' fries and Pringles chips. I used a bag to squeeze out strips and pressed out some chips on parchment. They are in the freezer. Tonight or tomorrow I will see what happens when i cook them in oil. I still have enough for another serving of mashed potatoes if I add cream or water.
@@ChrisCookingNashville Fail on the fries. They fell apart as soon as they reached the oil. I ended up with what resembles grits. The chips I put on the grill in my air fryer. They tasted more like fries. Next I will try a few thin fries on the air fryer grill. Thanks for inspiring me to experiment. UPDATE: I decided to cook the remaining fries in the air fryer on the grill. I heated the grill and then turned to air fry and cooked each side for 10 min. They looked like those batter dipped frozen fries but tasted like tater tots. Not bad but room for improvement. Better than the keto almond flour ones.

Just made these today. I have to say it’s actually amazing! After being Carnivore for just over six months, I haven’t had anything like mashed potatoes. When I tried them I got full very fast. I had forgotten what a side to meat will do. Bravo Chris, these are a must try!

Licking mashed potatoes off your finger is the only way to test for seasoning, LOL!! I've always done it that way, even with these carnivore mashed potatoes. I make these (original recipe) often so I toasted up a bunch of beef gelatin so I can just measure out what I need when I make them. As far as I can tell the only difference between this one and the orginal is toasting the gelatin in the pan first, then adding in the butter to melt and adding the egg whites. Is that correct, Chris? A single recipe makes a lot so I freeze the leftovers if we aren't going to eat them within a couple of days. I thaw, reheat and fluff them back up with a hand mixer. I absolutely love these!
I've made the previous versions twice, there is just me here, so I kept them in the fridge and would just get out a portion to reheat, in the microwave, or in a frying pan, worked well for me, lasted about a week. I think you have cream cheese in your first recipe, not here, just wondering. I will try these, thank you so much, they are a godsend. I like the idea of browning the gelatin first, saved me an extra step for sure.

Yes the substitutions don’t work unfortunately. Also, beef gelatin is unflavored so no need to use beef broth. It’s just from beef instead of pork.

I made this yesterday, mine were purposely thick. They were great but filling so I had lots of leftovers. This morning they were pasty so I decided to try to turn them into MCDs' fries and Pringles chips. I used a bag to squeeze out strips and pressed out some chips on parchment. They are in the freezer. Tonight or tomorrow I will see what happens when i cook them in oil. I still have enough for another serving of mashed potatoes if I add cream or water.

@@ChrisCookingNashville Fail on the fries. They fell apart as soon as they reached the oil. I ended up with what resembles grits. The chips I put on the grill in my air fryer. They tasted more like fries. Next I will try a few thin fries on the air fryer grill. Thanks for inspiring me to experiment. UPDATE: I decided to cook the remaining fries in the air fryer on the grill. I heated the grill and then turned to air fry and cooked each side for 10 min. They looked like those batter dipped frozen fries but tasted like tater tots. Not bad but room for improvement. Better than the keto almond flour ones.
I wondered. Protein tends to dry and crumble when cooked too much, so it’s going to require a solution to combat that I think.

Just made these today. I have to say it’s actually amazing! After being Carnivore for just over six months, I haven’t had anything like mashed potatoes. When I tried them I got full very fast. I had forgotten what a side to meat will do. Bravo Chris, these are a must try!

Licking mashed potatoes off your finger is the only way to test for seasoning, LOL!! I've always done it that way, even with these carnivore mashed potatoes. I make these (original recipe) often so I toasted up a bunch of beef gelatin so I can just measure out what I need when I make them. As far as I can tell the only difference between this one and the orginal is toasting the gelatin in the pan first, then adding in the butter to melt and adding the egg whites. Is that correct, Chris? A single recipe makes a lot so I freeze the leftovers if we aren't going to eat them within a couple of days. I thaw, reheat and fluff them back up with a hand mixer. I absolutely love these!
There are multiple differences in the recipe (no sour cream, no cream cheese, different gelatin amounts, etc.). All is on the recipe card. 👍🏼

I've made the previous versions twice, there is just me here, so I kept them in the fridge and would just get out a portion to reheat, in the microwave, or in a frying pan, worked well for me, lasted about a week. I think you have cream cheese in your first recipe, not here, just wondering. I will try these, thank you so much, they are a godsend. I like the idea of browning the gelatin first, saved me an extra step for sure.
