I imagine Peach got jealous of Bowsette with Mario, and out of rage, decided if she (Peach) can't have him, nobody can, and so, kidnaps Bowsette, and tries to kill Mario, who had saved her from Bowser countless times.
I think someone should make an entire Rom Hack of Super Mario All Stars + Super Mario World where Peach is the villain, Bowser's the damsel in distress, Luigi's Player 1, Mario's Player 2, Yoshi and Lakitu swap places and the world environments are reversed. I would create it, but I don't think I have the skills, time or patience to do it myself.

Peach being the true finale boss would’ve been a fantastic twist 😂 Like you fight Bowser first and then Peach takes over and back stabs Bowser (who she pretends to be into after she’s kidnapped so she could take control of his army) With Bowser helping Mario defeat Peach in the true finale fight.

I can see Peach going insane after finding out Mario is hooking up with Bowsette or Rosalina. Peach seems pretty selfish and could be petty. My views/opinion comes from *MILD SPOILER* how Odyssey ended. Mario deserves some love for his effort, Bowsette seems like she'd give some Xs and Os. :)

My first guess for the ghostship was the Remnants of Bowser. (so basically Dry Bowser or Ghost Bowser) Peach killed him before taking over his castle and then he tried to get away with this airship she then shot down.
