    Here are the ingredients and the method for this recipe!
    Your ingredients should be room temperature.
    You will need:
    1 1/2 cups buttermilk (for homemade buttermilk, add 2 tbsp of distilled vinegar to 1 1/2 cups whole milk, stir and let sit for about 10 mins)
    2 extra large egg yolks
    3/4 cup sour cream
    1 cup all-purpose flour
    2 tbsp coarsly ground cornmeal
    1 tsp of baking soda
    5 tbsp of salted butter, melted and cooled (alternatively, use unsalted butter and add a good pinch of coarse salt)
    3 extra large egg whites.
    Method:
    In a large bowl, add 2 extra large egg yolks and mix together with 3/4 cup sour cream. Add 1 cup of all purpose flour. Then add 2 tbsp of coarsely ground cornmeal and 1 tsp of baking soda. Mix together. Add buttermilk. Stir, but do not over-stir. Whisk in 5 tbsp of salted butter.
    In another bowl, whip three extra large egg whites to stiff peaks. Fold half of the egg whites to the flour mixture. Fold in rest of egg whites. Do not over mix batter.
    Heat your waffle iron to high heat. Spray with non-stick cooking spray, ladle in the mixture and cook for about 6 minutes. A good way to tell if your waffle is ready is the steam: If there is still a lot of steam billowing out of the waffle iron, your waffle is not ready yet.
    A trick to keep the waffle nice and crisp: Toss the waffle in between your hands so that the steam can escape or simply use a wire rack. Serve while warm!

    Made chicken and waffles for dinner using this recipie. I added a little.sugar and vanilla extract. They came out peefect!
    I have a large family so I warmed the oven to 350 and laid the waffles on a rack until all were done. They turned out perfect and didnt dry out or toast to dark. Warmed some butter and syrup in a gravy bowl and served hot.
    Left overs were frozen for quick breakfast. 😁
    Thanks TJ!

    hint: if you're using a regular waffle iron, cut the time in half, and don't wait for the steam to stop completely. also a TB of sugar goes a long way. further, vinegar doesn't make buttermilk but it works in a pinch.

    I tried this recipe today and it stuck to the waffle maker so I washed it and started again. I made sure the iron was hot enough so water drops danced around the waffle maker. It was better but still stuck after the third try I just decided to make them into pancakes. I think the batter is thin . Followed the recipe to the letter though. I always thought that waffle batter is thicker.

    • @helpfulnatural
      @helpfulnatural 8 лет назад

      Did you spray your waffle iron with cooking spray? I just got a new Belgian waffle iron that is nonstick but my first waffle did stick anyway. After peeling it off of the grates, I tried again but thoroughly sprayed them first and it worked beautifully. Sometimes even nonstick needs a bit of seasoning. :)

    Milk + vinegar is NOT a good substitute for buttermilk. The two liquids have a different thickness! Milk/vinegar is thinner. If you can get real buttermilk, use that.

    • @kinngrimm
      @kinngrimm 6 лет назад +1

      or make it yourself by shaking milk, cream or double cream till chunks of butter form and then you press it through a cloth. That way you get butter and buttermilk.
