Recipe -
For the Coffee Brittle...
220g caster sugar
60ml water
15g cold butter
small handful of chopped espresso beans
For the Coffee Caramel...
210g double cream
1.5 tbsp instant coffee powder
1/2 tsp vanilla extract
180g caster sugar
110ml water
For the sponge...
125g caster sugar
125g self raising flour
1/4 tsp bicarbonate of soda
125g soft unsalted butter
2 large eggs
1.5 tbsp very strong espresso
For the buttercream
200g soft unsalted butter
320g icing sugar, sifted
1/2 batch of coffee caramel

Love coffee caramel. I make a 6 thin layer coffee cake, with caramel buttercream, and topped with chocolate ganache drip...awesome

I just made cupcakes very close to these by modifying one of your previous recipes! I had a little more cocoa in the cupcake part, used dulce de leche as the filling, and a mascarpone cheese/whipped cream frosting.

If anyone is looking for a sign whether to make these or not, this is it. Make them!! This is an amazing recipe, a great weekend baking project given the number of components in it. You can also try adding some desiccated coconut to the sponge or the caramel, it just increases the mouth-feel experience by a hundred times. I did skip the brittle as I don't have access to coffee beans, but all in all, a cracker of a recipe.

i just starting doing a personal cupcake challenge...i have never made homemade cupcakes before until a few days ago....i made lemon cupcakes with lemon buttercream frosting...then i made pumpkin cupcakes with cream cheese frosting...and the 3rd one i did was a chocolate cupcake with raspberry cream cheese frosting ( not what i was wanting to do)....here were my pros and cons....pro: my lemon, pumpkin and chocolate cupcakes turned out pretty good.. and my cream cheese frosting came out tasting good.....con: my lemon icing tasted fine at first but then after a few hours resting, it got too tart...the original frosting i wanted for my chocolate cupcakes was suppose to be a raspberry buttercream using homemade raspberry freezer jam my 17 yr old son made....but for some reason it tasted way too much like butter....i followed directions to the T, but it still came out too buttery.....so i made a 2nd batch using less butter, but no matter what, it tasted like i was eating a stick of butter....so i just added some raspbery freezer jam into the cream cheese frosting i made......this got me feeling like giving up on baking cupcakes but i also want to keep trying.....please tell me what i did wrong.....how can i keep my frosting tasting too much like butter..i want to make a carrot cake cupcake with spiced cream cheese frosting and a frappochino caramel cupcake with a caramel mocha frosting, but i want it to taste good..not like butter......ohh i also made lemon curd, followed the directions exactly but it as well tasted like nothing but butter....please help....
If I add more espresso coffee to the batter will it affect the consistency of the cupcake? Thank you.

Just use any regular cupcake recipe in a mini pan and bake for half the time. I would actually start checking it at 1/3 of the way through the time, but usually mine take about half.
Can I halve the quantities for 6 cup cakes? Also can you specify the measurements in cups?

I'm currently in culinary school for baking and pastry arts and I never used American buttercream it looks a lot easier to handle and make than Italian buttercream. Would you say its easier to use or would you consider it the same ?
