Dani, I just try this, it is absolutely delicious! Who'd thought pumpkin! Keeping them in the freezer is brilliant! I use ice cream scooper to scoop them, keep them in the freezer a bit before rolling into a ball; its easier in my opinion. Instead of regular dark chocolate, I substitute with unsweeten dark chocolate with powdered Xylitol for low carb option.
Made these tonight! ☺️ I didnt make em as large, so instead of 8 I ended up with 26. I also didnt have a glass bowl to do the double boil, so I put a dark chocolate chip inside each ball instead 😊

I've taken old fashioned oats or even quick oats and tossed them in the food processor to create a flour like consistancy. Do you think that would work in place of almond flour? Janine Jacobs yes definitely. A little extra pumpkin may give you enough extra moisture - but you'll have to play with it a bit to tweak. If you find something you love, I'd love to hear about it!

I think the whole theme of this recipe is pumpkin... If you don't like pumpkin I'd probably just make something else.
