    Wanton mee comes in many styles. Our version is pretty close to Singapore’s Pontian chain.
    Each of the wantons are filled with whole prawns, and noodles coated with aromatic pork lard. It’s a simple yet satisfying meal on its own.
    Try making this for your family, as you would never get such big wantons outside and making your own wanton mee gives you special bragging rights!

    is there a differences between Dark Caramel Sauce and Dark Soy Sauce? or Sweet sauce?

      Taste wise. If I am not wrong, Dark caramel sauce is for those char kway teow. Dark soy sauce is for Claypot chicken rice while sweet sauce for soon kueh.

      Sweet soy sauce (Indonesian: kecap manis) is an Indonesian sweetened aromatic soy sauce, which has a dark colour, a thick syrupy consistency and a unique, pronounced, sweet and somewhat molasses-like flavor due to the generous addition of palm sugar.[1] Kecap manis is widely used with satay. It is similar, though finer in flavor, than Chinese sweet bean sauce (tianmianjiang).[1]

    So this recipe is very similar to a dish I know as kolo mee, the elements are pretty much the same ingredients

    What can i substitute the wine and lard with?

      Hi! Never tried this before but generally in Chinese cooking, when the Chinese wine is used, it is to add fragrance to the meat. However, it could definitely be eliminated from the recipe without major issues. Also, you could try substituting the pork lard with maybe fried shallots? It's a different flavour but is still really fragrant and could go well with the dish.

      This is the Singaporean version. Malaysia's version is usually paler and less soy sauce centric in terms of flavour.

    In Singapore hawker centers, when you order this version, they always comes with a side bowl of soup. Can you please advise how to make this soup.
    Also when you order any dry noodle dish, they always comes with a side bowl of soup. Are these soups all similar or each is different according to the dish ordered ?
    Any clarifications greatly appreciated. Thanks.

    What brand of black soy sauce do you use, The Meatmen? I used the Tiger brand but it doesn't taste good with the other sauces.

      Taking a guess here, but maybe grate it and strain it? press it through a fine mesh sieve or something.

      you can grate it, or blend in it a food processor, then warp it in a cloth and squeezing the ginger juice out

    So why do so few shops in Singapore cook it this way then? (with the dark soy sauce)
