Stewed Eggplant

This is a very simple dish of stir frying eggplant with onions, garlic, and tomatoes seasoned with garlic salt. I hope you guys try it. It is a favorite dish of mine.

The color is really beautiful. I personally do not like the skin, but that's where all of the benefits of an eggplant are. That works well with a roti ❤🇬🇾🇬🇾💯💯💪💪💪💪
