English Butterfly Buns

- English Butterfly Buns are a soft moist cakes topped with either whipped cream or a delicious fluffy butter cream, they sometimes have a little jam under the cream. Before filling the top is removed, cut in half then replaced by securing in the cream to resemble the wings of a butterfly.
Recipe:
100g Soft Margarine
100g white sugar
2 large eggs
100g Self Raising Flour. If using plain flour add an extra level teaspoon baking powder
1 level teaspoon baking powder
For the cream Topping
175g Soft Butter or Nargarine
35g Icing Sugar

Mr paul. What a delicious recipe thank you. I made both jam and nutella and a few where I put a drop of lemon juice in the butter icing. They are very light and super with a cup of yorkshire tea. I'm well chuffed with them. Thank you again.

Hi Sandra, bad news today I'm afraid. Things were not improving much after more than a month so went to a private clinic today and had 1 Cat Scan and 3 Mri scans and they confirmed my neck is broken. Seeing consultant over the weekend and may need surgery.

I have followed John for a long time, The difference between John Kirkwood and myself and the so called celebrity chefs is we've earned our living for many years actually doing real cooking not just leaning the theory then letting everyone else in the kitchen do the work.
