I'm 71 and starting to bake cakes. One successful Victoria sponge and two edible sultana cakes but not risen as I expected. Used 200g plain flour plus 1.5 taps of baking powder, 125g each of margarine and caster sugar, 3 eggs 150g sultanas, 3 drops of vanilla extract. Fan oven at 150 degrees Celsius, 7.75" X 3.25" round light metal cake tin. I shall be grateful if you will comment and put me right where you see fit. Regards Tommy.

I made this cake today and it was excellent! I didn’t have any lemons so added a 1/4 teaspoon of a good lemon extract in with the eggs and it seems to have worked well to give a hint of citrus. Also, thank you for the tip on the sultanas! I soaked them as you did and it made them so much better. Thank you for the recipe Mr Paul!
This seems just the ticket, a very handy cake but I will put off making it until the Christmas cake has gone.Your baking tin seems to be nice and deep, ideal for my bread, a lot of them are quite shallow.Happy 2021 to you and I await your recipes throughout the year.

Nice recipe Mr. Paul... Take away the flour and add 30 grams corn starch. And sub berries or any fruit for the raisins. Perfect filling for a pre baked pie or sugar paste base 😍👍👍

Fill them almost to the top with water and weigh the water 900g is equal to a 2lb loaf tin

Yes, we used to bake thousands of them in the bakery, now it's all 'Cup Cakes' higher price and more profit I'm afraid.

Just made it. It cracked on the top. Apparently too much baking powder does that. It's also crumbly when cutting it. A bit dry. 😟
What is sultana? Are are raisins?
Similar, just come from a different variety of grapes. You can use raisins with the same results.
