Great video brother! I run flounder gigging charters in Mississippi and Alabama waters, a stainless-steel wire brush is the best thing I have found for scaling a flounder. Also a cheap thin doormat will keep those flounder from sliding around while you clean them! Gigging videos are challenging to film, I have several on my channel as well.

Flounder, brem, redbreast, and catfish heads, second best blue crab bait I've ever used. First is big shrimp heads and whole turned or freezer burned shrimp. Really anything that was hunted or caught in a net, on a line made decent bait variety. Kept a small chest freezer, like a four cu unit just for the varius baits.
I would add details like squirrel, rabbit, whitetail, hog, dove bits that were present after cleaning got bagged in burlap baggies or woven straw baggies that were in turn put into Ziploc bags then frozen. Bait up just remove from the plastic, put the whole baggie and contents in the bait holder for the trap/pot. Since it's a natural fiber, it'll rot out in a short while so no need to worry about littering.
Which thinking of, if you want to try and get your kids to making some bait baggies, just make sure that if you go with straw, soak them till very bendy to make it easier to weave.
But ueah, my guy. Oh baby Jesus, those flouder. I could almost taste em from where I'm at.

Nice flounders. I gig here on the Mississippi Gulf Coast between Long Beach and Gulfport when the moon and waters right. It has to be cloudy or a new moon and low tide because I wade and the flounders are real shallow, sometimes right up on the sand bars. I walk two miles gigging and always pick up a few walking back to the truck. What state are you in? Judging by the lack of a Southern accent, Fla maybe? Nice video.
