I'm unsure if anyone gave this tip before but: When cutting long fur, its less messy to slip your scissors between the rows of the fur and keep the blade super close to the base/backing/ whatever you want to call the fabric the fur is attached to. It helps prevent from cutting the pretty part of the fabric off and since you're not cutting too much of the actual fur, it shouldn't be as messy!
also using an xacto knife helps too!

If you lay the fur so the wrong side is facing you, you can make smaller snips to cut only the base fabric and not the long fur bits.
