I used this recipe to modify a previous (very similar) vegetable soup recipe that I've been making on the stove for awhile. That cooking method takes longer, makes our tiny kitchen swelteringly hot, and it makes me feel like I have to watch the pot almost the entire cooking time. As soon as we got an InstantPot, I tried to figure out how I could adapt my veggie soup recipe for a pressure cooker. Your recipe and instructions were perfect. Thank you so much!
I made this soup last night. It was delicious. It lends itself to substituting the veggies, greens, or spices for whatever is in your pantry, ie., chili powder for cayenne pepper 🔥🔥🔥 LOL. I will be enjoying this soup for the rest of the week. Thanks for posting!
I made the vegetable soup and added some additional veggies, it was great! My first recipe from this site. I am starting a healthier lifestyle and food plan for 2021, and will look for other healthy recipes.
if you don't mind sharing, what additional veggies did you add? I was thinking about adding spinach and red/orange bell peppers. this recipe will be my 4th instant pot meal to cook. so I'm excited to give this a try.
I just made it! Turned out soooo tasty. I subbed green beans for asparagus, spinach for kale and regular diced tomatoes for finely diced ones, cuz it's what i had in the house. You have a new subscriber 😊
Such a hearty soup. Today is the 2nd time I’m cooking this soup. The 1st time, the soup was a little diluted because I did not add chickpeas. This time round, still without chickpeas, I added 2 heapful teaspoon of tomato paste. Comes out lovely. Thanks for the recipe and the valuable videos showing the steps! And to add to that, this is not the only dish that I’ve cooked from yr recipes. There’s the chicken stew and Mexican Picadillo too! Came out perfect❤
Probably one of the best veg soup recipes I have seen, quick, homely and looks appetising, watched a few celeb videos, wow they just have to mess around with such a basic idea ! - I’d just add some diced potatoes as well, brilliant recipe big thumbs up 👍
I’m missing 2 Ingredients actually three so I have to get those before I can make it it looks so delicious I’m loving my new instant pot thank you thank you
Thank you so much, I made this last night and it was delicious!!! I added sweet peas for my hubby too. I may use chicken broth next time and add some shredded rotisserie chicken at the end. We also shared with some friends bc it makes so much and they loved it too. Excited to make all of your recipes!
Just made this soup, so easy and delicious! I didn’t used oil and added some other veggies I had on hand. Thanks for sharing! Subscriber! Going to look for some other of your recipes. 😄
Absolutely! Simply add 1/2 cup more broth to cook it in a regular pot on the stove. Follow all the same instructions of sautéing onions etc. Add all the veggies and broth, bring to a boil and then simmer until desired vegetable consistency. At the end add kale and remove from stove.
Awesome recipe! My wife's gut is very sensitive to tomatoes - the acidity does not bode well. Can you recommend any substitutes for the canned tomatoes please? Any recommendations would be greatly appreciated! She can stomach tomato paste used when making pasta though, but she reduces acidity by adding sugar in her sauce
Yes!!! I have a little bit of a hard time with tomato, too. The best replacement I've found is roasted red bell peppers blended with a little water. Tastes absolutely amazing and keeps it nice and red :)
because the instant pot often shows a "burn" warning with tomato-based products in it so we want to keep the tomato as far away from the bottom of the pot.
Just got my friends instapot for my bday! So happy. Cant wait to use it. Just watched a few videos on how to make soup with it..... just curious. Why do people use there instant pots pressure cooking setting for soup, and not the soup setting? Is that better for broth or something? The sautee onions and garlic, add broth and veggies, switch to pressure cook for 5 minutes all seems like the standard for everyone. Just curious when people use there soup setting. As I said, just got this, and will make my first soup now! I'm just curious why people use this method. Thanks
The buttons are essentially "preset" times but they obviously don't apply for all types of soup so in my opinion they are all somewhat irrelevant. I prefer setting cooking time manually so it's adjusted for each individual recipe.
5 minutes of high-pressure cooking time. The pot takes about 10 minutes to get to pressure first. So technically it's more like 15 minutes total cooking time :)
I’m making this right now. I just didn’t have the same veggies so a few had to be substituted. Can’t wait 😋 Also printed your quinoa burger recipe from your site and will be making that soon. Thanks for the recipes!
Don't be scared. It's about a million times safer than getting in a car and driving anywhere :) It has a top-notch safety mechanism which makes it impossible to open while still under pressure. Do the water test first and then get started with something simply like white rice :)
Oh yes, low carbohydrate vegetables definitely don't need more than 5 minutes. Make sure you manually release pressure, too. So it doesn't continue cooking.
Vegetables are such an amazing source of vitamins minerals and water, you can make delicious recipes with them, go ahead and check out my vegan veggie meatballs on my RUclips channel at lauraezeani healthy living
FIVE MINUTES...!? seriously...? I just bought an Instant Pot... I'm making soup... How tender or firm are your veggies you cooked for FIVE MINUTES...!!??
It's 5 minutes on high pressure but remember the pressure cooker takes a little to GET to pressure. During that time the veggies also start softening :)
There are many oils considered essential oils for good health, and she used avocado oil, which like olive oil, has a good source of Omega 9 fatty acids, which benefits heart health.
I’m making this with my mom for dinner as I’m now a vegan and I love vegetables! This looks so perfect!
This is an incredible recipe for a plant-based diet. It is a balanced meal with carbohydrates, protein, and abundant vegetables.

Wonderful! :)
Good soup recipe. How refreshing that we don't have to watch long drawn out video with lengthy cutting of vegetables. Nice and short and to the point.

I love the cucumbers in that soup. It gives it a good color as well.
It’s zucchini not cucumber:)

Nice recipe... squeeze some lemon in the end before serving....😊

Hi where do you get the vegetable broth from ?
The grocery store.
Thank you for sharing. What can I replace chickpeas with?
Cut up chicken thighs or cooked lima beans.
@@Greenhealthycooking brilliant! Thank you
Hi
This looks very healthy and nutritious.
How many millilitres of water should I use? Thank You
1 US cup = 236ml
@Green Healthy Cooking
Hi
Thanks a lot for highlighting the quality of water needed. I will try this recipe now and see how it goes.
Thanks
Just made in cast iron dutch oven on stovetop with cover I added potatoes …ummm ummm good!
Would this work in a Slow Cooker?
Yes!
Yummy
Just made this! Turned out delicious😍
YAY! I'm so happy to read this :D
Simply the best
This recipe looks so healthy! Cant wait to try it!
OMG. That was soooo good. Leftovers for dinner tomorrow night. I sub’d the asparagus with potatoes, but it was perfect and quick. It’s a keeper.
Alex Azar I’m so happy to read you enjoyed it as much as we do :)
Yummy 😋
Hello there.. Love all your recipes . Is it possible to make it without instant pot ?
Absolutely! Simply add 1/2 cup more broth to cook it in a regular pot on the stove. Follow all the same instructions of sautéing onions etc. Add all the veggies and broth, bring to a boil and then simmer until desired vegetable consistency. At the end add kale and remove from stove.
@@Greenhealthycooking - Thank you so much for the response. Appreciate you spending the time...
Which Instant Pot are you using?
The cheapest 6-quart.
Looks delicious! Can I do this in a 3 quart instant pot? I cook for one.
If you half the recipe then yes. I doubt the full recipe will fit in the 3 quart.
can i use frozen cauliflower instead of fresh?
Most frozen cauliflower has been blanched so you can certainly use it but it might overcook.

Why do we not stir in the tomato sauce?

Does it only take 5 minutes to cook a soup in this
5 minutes of high-pressure cooking time. The pot takes about 10 minutes to get to pressure first. So technically it's more like 15 minutes total cooking time :)
I don't like kale (I do like J J Cale though) so I'll use bok choy instead and I might use canned beans as an alternative to chickpeas.
Cute
Yum👍🏼
Is this for a 3 qt. or 6qt. instant pot?
This was made in a 6-quart. You can make it in a 6 quart or 8 quart. If you only have a 3-quart I recommend halving the recipe.
Looks great!
I’m making this right now. I just didn’t have the same veggies so a few had to be substituted. Can’t wait 😋

Can i replace zuchini to cucumber?
No, cucumber is not good when cooked.
👍
Watching after following a recipe that said 12 minutes. Complete mush! Will definitely follow this one as 5 minutes seems to be correct
Oh yes, low carbohydrate vegetables definitely don't need more than 5 minutes. Make sure you manually release pressure, too. So it doesn't continue cooking.

I can tell this wont be good.
Sautéed food in oil isn’t considered as a healthy food. So don’t mention the word healthy and misguide people.
Stop misguiding people to believe that if they eat a tiny bit of oil, they are unhealthy. This is healthier than anything I've eaten recently.
There are many oils considered essential oils for good health, and she used avocado oil, which like olive oil, has a good source of Omega 9 fatty acids, which benefits heart health.
