- Chilled Tofu Skin Salad
Ingredients:
A. Tofu skin, 300g
B. Sesame paste, 2 tbsp
Rice vinegar, 1 tbsp
Sugar, 1 tsp
Soy sauce, 1 tsp
Garlic, minced, 10g
Cucumber, diced, 50g
Carrot, shredded, 50g
Green onion, sliced, 20g
Instructions:
Blanch tofu skin in boiling water and immediately remove from heat.
Put tofu skin in a food container and add ingredients B. Shake well and it is ready to serve.
Cold Bean Thread Salad
Ingredients
A. Bean thread noodles, 1 bundle
B. Soy sauce, 1/2 tablespoon
Salt, a pinch
Sugar, 1 teaspoon
Black vinegar, 1 teaspoon
Sesame oil, 1 tablespoon
Chili paste, 2 teaspoons
Scallion, finely chopped, 15g
Red chili pepper, sliced
Garlic, finely chopped, 15g
Cucumber, julienned, 15g
Ham, julienned, 20g
Preserved vegetable, julienned, 15g
Instructions
Soak the bean thread noodles in water until soft. Cut into manageable lengths and blanch in boiling water. Drain and rinse with cold water.
Put the noodles into a container with a lid. Add all the ingredients in group B and mix well.
Cold Seaweed Salad
Ingredients:
A. 25g of seaweed sprouts
B. 1.5 tablespoons of soy sauce paste
Salt, 1/4 teaspoon
Sugar, 1 teaspoon
2 teaspoons of white vinegar
2 teaspoons of black vinegar
1/2 tablespoon of sesame oil
10g of chili shreds
15g of ginger shreds
15g of minced garlic
Instructions:
Put the seaweed sprouts into boiling water and immediately turn off the heat. Let it soak until it spreads and expands. Remove and soak in ice water, then drain.
Put the seaweed sprouts into a storage container, add the ingredients in B, and shake well.
Chilled shredded chicken:
Ingredients:
A. Boneless chicken breast 1 piece
Salt a pinch
B. Rice wine 1 tsp
Scallion 15g, cut into sections
Ginger 15g, sliced
C. Soy sauce 1 tsp
Salt 1/4 tsp
Sugar 1 tsp
Spicy bean paste 2 tsp
Steamed chicken soup 2 tbsp
Cucumber 100g, shredded
Garlic chives 10g, sliced
Garlic 10g, minced
Scallion 10g, minced
Chili pepper 10g, minced
Instructions:
Rub the chicken breast with a pinch of salt, and then place it in a heatproof dish. Add the ingredients B and steam until the chicken is cooked. Reserve the chicken broth.
Shred the cooked chicken into thin strips and place them in a fresh box. Add the ingredients C and mix well. Chill before serving.
Cold Tossed Bean Curd Skin Salad
Ingredients:
A. Bean curd skin, 200g
B. Vegetarian oyster sauce, 1 tbsp
Soy sauce, 1 tsp
Sugar, 1/2 tsp
Sesame oil, 1 tsp
Chopped celery, 20g
Chopped cilantro, 10g
Sliced chili, 10g
Minced ginger, 10g
Instructions:
Brush a little oil on the bean curd skin and steam in an electric cooker for about 5 minutes (brushing oil will prevent the skin from sticking together).
Take out the bean curd skin and tear it into small pieces, then place it in a container with a lid.
Add ingredients B to the container and shake well to mix.
