His judgement was affected by the caveat that they were complete novices. I assume if the challengers had been trained chefs with 10 years each under their belts the judgement would have been far more severe. As it stands I think the boys did surprisingly good for a first attempt, hence the high scores. All of them far exceeded his expectations.

If you watch the chefs' reaction video Joey's skill is apparently next level, because instead of using the more flexible Sashimi knife (the Yanagi) he was told to do it with, Joey accidentally skinned the fish with the significantly stiffer deboning knife (the Deba), but did it perfectly, something that astounds and confuses Chef Koji to no end

Chef Koji is the real MVP here, I feel like he really took consideration that the three of them are super duper beginners. I love how he actively praise them as well and highlighted the positive points instead of the negative ones. As a beginner it can be really discouraging to fail (even though it's very normal) and it can be nerve wracking to present your work to other people (let alone a Michelin star chef), so his positive reviews really warms my heart. He's a super kind and encouraging teacher.

Because thinking through the lens of his life, he probably didn’t get as much praise for when he started learning how to be a masterchef, since chef apprenticeship is very very stressful and chefs aren’t always the best at being kind with words (part of the reason, of course, is because they want their chosen apprentice to improve).

I think the chef being very positive and forgiving has more to do with the fact that he has been doing this for a very long time. Above anyone, he knows how long and hard it is to be able to perfect the cooking techniques and master the dishes. So when he saw the boys trying their best to replicate these very hard dishes that were only taught to them once, naturally he won't be too harsh on the techniques or the presentation, because that takes years to master. As long as the dishes taste decent and aren't completely inedible, I think that's good enough for him.
It's like when you speak to someone who's trying their best to speak your mother tongue. You don't really care about their wrong grammar or pronunciation, you care about the essence of what they say. If you can understand what they mean then it's all good.

As someone who doesn't eat fish I gotta say this was pretty entertaining lol. However from my point of view each of the boys had their own unique challenge to their dish. Joey had to kill a fish. Conner had to fry a fish which frying foods isn't that easy honestly. I'm sure fish is even harder to fry. And Garnt had a hefty cooking time to speed through as much as he could. And I'm sure deboning a fish while its inside of a pot of rice makes it even harder. Great job to them all for even finishing their dishes and not having a mental break down lol
