Sasuke didnt kill Itachi, Itachi died of his illness. He was still alive after Sasuke was out of chakra and could have killed him if he wanted to. Itachi new he was gonna die from his illness so he let Sasuke think he won so he would have his "vengeance" and return to the leaf. Also Itachi planned to make Sasuke use all of his chakra so he could remove orochimaru from him with the totska blade. Itachi had the whole thing planned and it would have worked if Obito hadnt told Sasuke the truth about the Uchiha massacre which Itachi tried to prevent by putting Amaterasu in Sasukes eye but he didnt know that Obito could remove it with kamui.
