  • I used about $35 for this meal plan and I was able to make over 30 meals, including 7 dinner recipes and 1 bonus lunch or light dinner recipe.
    I highly recommend looking for the least expensive grocery store near you, like Walmart or Aldi. I currently shop at Aldi, as it’s the cheapest option near me, but be sure to compare prices before shopping by using the stores’ app and searching for the products you need.
    Find all the recipes and a grocery list here:

    * Lazy Lasagna Casserole
    * Cottage Cheese Penne Alfredo
    * Easy Cheese Pizza
    * Chicken and Veggie Soup
    * Chicken Noodle Casserole

    I don’t know if you’ve ever seen the 10 pound bag of chicken from Walmart, but the chicken pieces come out to $.67 a pound. It’s such a great deal. Great video.

      The prices are much higher in San Francisco. I might print out the grocery list and see what this would cost buying the cheapest versions I can find locally. I'm not quibbling - this meal plan would still be really thrifty here, just a different economic. scale.

    Cottage cheese put in a blender/food processor is a much better substitute for sour cream, imo, taste wise. Also, utilize thrift stores for appliances if a bread maker is not in your house. I see them often (and grabbed a great one for $6!) This way, I can easily make bread or pizza dough for pennies (pizza dough takes 90 min and can be made ahead and put in the fridge for a day or two.) It isn’t hard to make from scratch with no bread maker, but the bread maker is fast and easy…just add the ingredients and press “go” and it done in the time given. Jewish dishes utilize chicken fat often, the same way Southern and Mexican dishes use lard. It’s delicious, and a “free” extra from boiling your own broth. Full of taste and inexpensive, plus uses things that may otherwise be wasted. Same from making a pot roast. The fat adds flavor, and all of our bodies need fat to digest and absorb nutrients effectively (if you have specific dr restrictions, of course follow those) but fat is not the enemy of food. Also, shredding your own cheese from blocks is less expensive, and it melts better and makes sauces better because pre-shredded cheese has corn starch (or similar) in it to keep the shreds from sticking. Corn starch is a great thickener for gravies…and it keeps the cheese from melting smoothly, and instead it holds it’s shape. The blocks are always cheaper and last a long time in the fridge (they taste better, too!)

      I absolutely love all those tips!! Those are great! Thank you so much for sharing! I’m going to head to my nearest thrift store this week and see if I can find any bread makers 😄

    Love cooking with chicken fat! It’s the best. I do a similar casserole to the chicken noodle one-just use tuna instead of chicken. I haven’t tried using cottage cheese in meals yet. I know it’s on trend. Gotta try it! Lower calorie and higher protein sounds like a winning combo.

      Yes!! That’s the casserole I used for inspiration! One of these days, I want to include that classic tuna noodle casserole in a meal plan. Looks great. You made alot of great food. Im confused about the "drippings" you used to make the broth. You get drippings when you roast meat in the oven and collect the fat. The juice in the instant pot is just broth. When you made your broth all you did was water down the broth you already had. The food still looked good.

    • @LauraLegge
      @LauraLegge  Год назад +1

      Yes, it was a bit different than just collecting the drippings from roasting but since it was just a cup of water, it felt odd calling it broth 😅 I used more of it with the water than I would have with drippings from roasting. I probably should have used the word broth with this one.
