People sleep on the dry roux method. My New Orleans family taught me this way 5 yrs ago and I'll never go back to the traditional method and it tastes exactly the same. You can also make extra and store it in the fridge and use it in the future to make gravy. They also taught me the oven method but it takes longer.
My 15 year old daughter and I made this delicious recipe for the first time and it came out as a smash hit with the family. Loved your trick for the rue. You are pure Awesomeness. Love your recipes!!!

Some people tend to think that making gumbo is long and hard process. Only thing that challenging is the reaux. Seafood doesn't take long to cook. It's a 30 minute at the most process. Yours looks delectable !!!

Definitely gonna try the roux method. Still takes a while but I like the idea of only having to deal with the flour in the browning process and the use of butter is interesting. I think with the long process of oil and flour you have to use oil Seems like butter will burn. But who wouldn't want butter in the dish. I will add some okra and some salt. Seafood needs salt in my opinion. I love your processes.
Also a question: When you say to set the burner on low for browning the flower do you mean the lowest setting, where it says "LO" on the dial or like a 2 or higher. Thanks.

You can also brown your flour in the oven in a baking pan and it keeps forever and you'll always have it at the ready
