      I use a vegetable peeler to remove the skin, it does make it less chewy. Love your videos Becky. You’ve become a prolific blogger almost daily, your spoiling us 😅❤

    An even easier way is to break the end of the celery but not all the way through. Then pull down and all the strings come off with the end piece. Easy!

      Try tart apples in your chicken salad. We like cranberries too and walnuts or pecans.

    Thank you for encouraging me to have food in my freezer and pantry. I was sick for all of January (except the last couple of days) and my daughter and I were able to eat without shopping or cooking just heating up meals! I guess this was a different kind of pantry challenge but so worth it. My daughter really is supportive of the meal prep I have been doing. By the way I just turned 69.

    Becky you can store your extra bulk flours in the fridge or freezer to extend the shelf life up to 6 months . It keeps any of the natural oils from the flour (wheat kernel )from going rancid .

    Hey Becky. We southern woman are taught to pull the strings from celery when being taught to cook. My Daddy taught me to cook and showed me this trick. It makes eating the celery soo much nicer. ❤

    Hi Becky! 👋 You might try hitting the BAKE then START button on your ovens to see what your default setting is.... Mine is 350. So I never have to type in the “3 5 0” just the BAKE, START. (Sometimes I feel like I’m forever pushing buttons on my oven. ) 😂 I accidentally found this out and I know it sounds trivial, but it now saves me just that 1 step.

      I was going to tell her that also. Apartment living, mone of the electric ranges are level I guess. I also think it makes a difference in uneven temperature spots in the oven as well.

    Little old Southern lady here. My grandmother showed me how to pull the strings off celery when I was small. Green beans used to have strings. That has been GMO’ed out of them. So, cutting the strings off of green beans and celery was a much sought after kid chore because we got to use a knife. Happy stringing!

      Hello from Amherstburg, Ontario.
      I’ve just finished my January pantry challenge. I’m not a canner, so was relying on my freezer mostly. I allowed myself $10/week for fresh fruit & veg. Then one bag of milk & a container of yogurt for the month. I went over by about $4, but I needed eggs 🥚 🤷‍♀️Not too bad considering food prices 🇨🇦

    This is so funny to me, I have never peeled nor have I thought to peel celery. I seriously thought of the whole stalk as being stringy and fibrous. Who knew!

      Me too,she is so cute.
      i love how her eyes slide to one side and
      twinkle as a grin forms around her mouth and temples when she tastes her food. It's as if she surprises herself every time .
      Entertaining fun,educational,inspiring .I'm in the uk and probably will never make these kinds of recipes .I don't use alcohol and don't like capers, I never put salt in my food and rarely use sugar .my sin got a very bad salt stone under his tongue when he was 12 and he sobbed for a week with the pain of it so salt went out of our cooking now if I have food made by other people it tastes incredibly salty.
      We have similar ingredients in the uk just different cooking methods .
      What is the difference between broiling and grilling please ? To me a broiler is an older chicken needing longer slower cooking .

      Your mashed potatoes looked so good .my friend is French and they heat the milk before adding to the potatoes, I add cold milk to mine .
      And cheese is very pricey so if I cook with cheese it's usually the main Ingredient as in cauliflower cheese

    I peel celery for say a veggie platter. Makes it easier for guests to eat. But for cooking or fine dice, I haven't peeled it.

      It also removes the latex aspect from the celery.

    Becky that is the only way I will eat celery is to de-string it, I can not stand the strings, I also slice it down the center before chopping to make it smaller pieces. a texture thing with me lol. I need to make bread also, thanks for the reminder.

      We add pecan pieces and grapes in summer to our chicken salad, fresh dill is good too. My freezer door was left open, so I get to do that.....

    My car was in the shop for 4 days, so I was forced to do the pantry challenge for just those 4 DAYS and went stir crazy. You did it for 4 WEEKS! So amazing. BRAVA BRAVA BRAVISSIMA!!❤

    I find celery very bitter and it helps when you peel it so i use a potato peeler. It works surprisingly well. Very glad to see you finally have water! The longest duration i was without was five days. I had a bathtub of water for flushing and a camping porta potty but you don't realize how often you turn a tap during a day until you do and nothing comes out

      I’m Australian and lived on a property that caught rain-water in tanks. Over the course of two long, very hot years we ran out of water and had to buy a tanker of water. We were so upset having town-water in our beautiful tanks. You guessed it! Rained unexpectedly for almost three weeks the day after the town-water was pumped into our tanks. It was nice to have long showers again even if the water tasted like chemicals.🦘🇦🇺

    Becky, you have outdone yourself this time with the pantry challenge and not having water during part of the month, you are a true homesteader who takes what they have, and make a meal out of it, or makes the best out of any given situation, and for that I commend you tremendously, keep up the good work because you were teaching so many people how to take what they have, and make some thing delicious or teaching us how to garden how to manage our homes. Be blessed my dear young friend, along with your husband and your son.

    Had channeled my "inner Becky" and batched cooked a weeks worth of meals on Saturday and Monday in preparation for today's kidney stone surgery. Now I dont have to think about anything but getting healed! Just took my evening pain meds and went to bed. But..all I wanted to do was watch todays Becky video!     I never knew you could peel celery, that’s a game changer. I love stiffed celery sticks but hated the threads that seemed impossible to cut with teeth. Now I can just peel it.

    Love the videos Becky! When the world gets a little too much, you feel like a safe haven. You know what is almost as good? The chickens! I miss seeing the girls. Can’t wait until spring and new chickens. So sweet of you to give the older girls a break and an awesome retirement.

    Becky, you made such a great point in one of your videos, several actually, about purchasing high quality really good ingredients, and not purchasing or preserving things unless it's great quality that you excited to use up or eat. I stopped buying store brand all purpose bleached flour and started buying organic unbleached flour. It took me a minute to get over the price difference, and let me tell you the quality of my dinner rolls, cookies, sandwich bread etc IS SO MUCH BETTER!!! I'm a believer. We also started buying grass fed butter and it's night and day to the generic regular old butter. You've opened my eyes to so many things!

    Glad your water is back up and running. I love making chicken salad with all you added plus halved grapes and dried cranberries and I sometimes add slivered almonds. Glad you destring your celery. It makes a huge difference 😊

    I think I would make creamed spinach separately. And leave that luscious onion, white wine gravy on it's own with the meatballs, yum!😊❤

      Last week made home made l lkea meatball and they gravy it was lovely found out while world was on lockdown in covid ikea shared there recipe for meatballs and gravy only found out last week have enough to put in freezer for another meal keep us going

    Hey Becky…just a suggestion….if you use your vegetable peeler, it is much easier to de-string the celery.

    When our water lines freeze it is for the entire winter. They froze a lot when my children were young because they would forget and turn the taps off that we let run a drizzle. We would go to my aunts and haul water every few days. Sponge baths only. Glad your water is back on.

    i've been freezing mushrooms for a few months now so i just have to grab a handful from the freezer and not have to worry about them going bad. Because of you, i also froze up some carmelized onion pucks into meal-sized portions. Now i just grab the onions and mushrooms from the freezer and half my veg prep is already done.

    Yay for running water!
    I always de-string the celery as part of cutting the ends off. You take the tip of the knife and cut the ends only half way through from the inside, then make a lengthwise slit thorough the discard part, then peel it like a banana.

    My mom used to peel the strings off the celery too, I do it if the ribs have a thick string. Becky the bread looks amazing and the comfort meals looked great. Doing pantry challenges helped us notice that we don't need as much as we have stocked and to pay more attention to stuff in the pantry or opened jars in the fridge that should be used up, it's all food we like but don't plan enough around it. Going into February we'll be paying more attention to reducing what we have. Thank you for all the great videos on the 4-week pantry challenge, lots of great ideas.

    For my chicken salad, I use celery and red grapes. For the sauce, mayo, lemon juice, and cranberry mustard when I can get it. What takes it over the top is glazed pecans. The acid from the lemon juice breaks down the glaze on the pecans. It's my husband's fave!

    I'm having to replace my main refrigerator, which makes for the perfect time for a deep clean and purging items. I found several things that have needed to get used up and I thought about you Becky. I placed those things in the front and changed up my menu to make sure I used them. That led to making creamy sun dried tomato chicken and my son was Very happy about that! Lol. Brownie Points for me 😄

    Becky, I so enjoy your videos, so thank you for sharing! I was actually surprised you didn't peel your celery that was being eaten raw. LOL I grew up learning that if you cook it, you don't need to peel it, but if it's going to be eaten without cooking the strings are unpleasant to eat. On the whole wheat bread - if you add in a half cup of plain applesauce (unsweetened, no cinnamon) the bread will come out more moist and will rise more like white bread. I believe it's because the applesauce contributes to hydration of the flour. Whenever I'm making bread, I "proof" the yeast by mixing it with about 1/4 to 1/2 cup of the warm water in the recipe, a teaspoon of sugar and let it get nice bubbles on the top before adding it to the flour. After just combining it with the dry ingredients and any remaining wet ingredients, allow it to rest about 10 to 15 minutes. Then knead as normal and add flour as kneading, rise as usual. The rest time between mixing and kneading hydrates the flour and helps the gluten awaken so you get that silky dough pretty quickly (at least that's what I've been told).

    Becky friends and the wandering doggos. When you make bread with 'other' flours (whole wheat pumpernickle rye etc) I find a slow cold rise (in the fridge) works best for taste and texture, usually over night, but it will never rise as much as a white loaf) To find your best personal mix you need to experiment.
    Since i learned to prepare veggies from julia child I peel whatever I can, Celery, Broccoli, Asparagus, Cauliflower stems. so everything cooks at the same rate. I use all the peelings for soup stock but you do have your Chickens.
    A bit of wine (any color) would have made the meatballs with the caramelized onions even MORE French. Moving in the Bourgignon galaxy.. Beer would move it to Germany and Eastern Europe.

    Great work! I am doing a pantry challenge of sorts, and low key failing.😆 I am busy resetting our home and starting seeds, and I just do not want to go grocery shopping. I still have to buy dairy. We're eating canned fruits, and we have lettuce and brassicas from the garden. I even found a frw carrots! Guess I'm not failing. I did go buy ice cream 2 days ago.🤷🏾‍♀️

    I normally do half bread flour and half whole wheat flour. Comes out more fluffy. Also you can freeze your flour.

    A tower garden in your sun room would be amazing and would give you fresh greens all winter! Herbs too. I'm going to make the chicken recipe but plant based. I love the idea of zuc relish.

    When I am making meatballs in a slow cook sauce I put them into the sauce raw and let them cook in the oven slowly. They seem to absorb the flavours from the sauce. The meatballs you made look amazing and I do want to try it. Thank you for the video!

    If I have celery, I dice it, place it in a quart jar and cover with apple cider vinegar. It keeps forever in the refrigerator and it doesn't absorb the ACV taste. Perfect for any mayo based salad... Chicken, potato, macaroni or even shrimp salad. Since it's already diced, I just use a slotted spoon... Easy peasy. 💖🌞🌵😷
