That's not an italian bruchetta we never put vinegar nor pepper on tomatoes. The bread should be toasted in a cast iron pan with oil and salt or on a bbq in the oven it dries up, the bread you used also looks quite bad.

I make bruschetta with roasted peppers. I dress peppers with Olive oil salt black pepper a squeeze of lemon juice. Chopped parsley A whole clove of garlic just to give it the flavour leave it aside for as long as possible for the flavours to take. I remove the clove of garlic before placing peppers on the bread.
And make sure to use a good (aged) balsamic. I didn't know about difference in quality with balsamic vinegars and when I had it in a recipe for the first time, it ruined the whole thing and I thought that was that for the balsamic for me and that I just didn't like it. But then I had a friend make me something that had balsamic vinegar on it without me knowing. I loved the dish and asked for the recipe and was surprised the balsamic was actually one of the main ingredients 😮 but it was a beautiful 20 year old one 👌 turns out I do like balsamic vinegar, just not the cheap ones 😅
I love Italian food and I am having Bruschetta right now, except mines is a bit different. Cute up tomatoes,avocados and onions next get the bread and toast it.After that rub garlic and oil on it. Then put the tomatoes,avocados and onions on top with some salt and pepper.
