I love you showed the dough hook for making the cookie dough! I really prefer the dough hook to the cookie paddles because I feel it more gently incorporates the flour to minimize the amount of mixing, which prevents tough cookies.

The Bosch is definitely a beast in the kitchen for large batches. The only issue (more like nit-picking) is when using the whips or beaters. Unless you use the bowl scrapper attachment, you always have to scrape the bowl. This is due to the powerful torque of the motor. It tosses the ingredients of the bowl to the sides and the center pole of the bowl. So if you wonna get the most of mixing small batches with the Bosch mixer, ensure you have the bowl scrapper attachments.
Can I tell you I have been a KitchenAid girl because that is all I knew. In the last 25 years I have gone through 3. All the way to the professional. So now I need a new mixer and not doing another KitchenAid. KitchenAid did have a scrapping issue as far back as I can remember. FINALLY a few years ago that came out with paddles with rubber edges to scrape. That worked great but they didn't last long-term. I may go with Bosch.
@@DiannaAtherton sorry for the late response, you could of also considered the Ankarsrum Stand mixer. It has a 7 quartet bowl and a smaller dual whip bowl for smaller batches.

Bosch has a sister company, NutriMill, with a smaller mixer that is $199. If my research is correct, all the attachments on the NutriMill will fit on the Bosch. Something to look into.
