- Suffolk black ham gets its black crust from its curing process, using molasses, brown sugar, and a local black porter. Soaking the ham in this sweet marinade doesn't just turn it black; it helps balance the flavors of the ham and breaks away from the salty flavors of hams that are dry-cured using only salt. The whole process takes 10 weeks, in which the ham is first dry-cured, then marinated, and then smoked. We visited Emmett's in Suffolk, England, where the ham has been made for 200 years.

How English Black Ham Is Made Using A 200-Year-Old Recipe | Regional Eats | Food Insider
He made it loud and clear, folks!
"It's a ham, not a sham"
Yeah that repetitive quote was starting to annoy my patience 😂
Yeah nice bloke but I don't think i could work with him.
@@trevorwilk2726 Don't be a sham.
Love that guy... Ham not sham. These traditions are important and you can tell he's proud of his work. Thank you for the video.
O_o I was wondering what he kept saying, I always heard "Ham not Sam" and confused the hell out of me.
Lies again? Pornstar Berita Harian
This is a true craftsman, he's very proud of his product.
It's Ham, not Sham!
Great comment. His pride really comes thru, even in a humble way.
"I don't go to the gym I lift ham and bacon". Definitely a brother from another mother lol
Racist
That's a big family, brother! 😁
That's how you get real strength, manual labour
I don't think registered it as a joke to the host which is a shame because he seemed quite proud of it.
@@johnr797 A method which has produced 0 WSM champions.
My family gets a Suffolk Ham every year at Christmas. Can confirm it is amazing. A delicacy imo.
I have been a butcher for 26 yrs and and we process hanging beef, all exotics, bison and of course hogs. The pork we do, whether it's hams, bacon, or breakfast sausage is far above in quality and taste what you can buy at your grocer. I'm proud of my trade, and my skills. We are a dying breed.
How do I buy from you sir?
I got hungry just by reading your comment.
Unfortunately you're right. Due to modernization the art of butchery is almost fading away. But I know that a few will always remain. I for one don't like meat from supermarkets. I prefer the old ways of the butcher. Nothing and I mean nothing will ever replace the magic touch of a butcher shop.
England has lots of tradition in its countryside.
Looks like an interesting country.
I’ve lived rurally in the UK all my life, and your comment made me stop and come to the same realisation, then make me wonder how I hadn’t come to the same conclusion before.
It’s so true!! Although the whole island is only around the size of California, there are so many traditional foods, created in isolation - often over centuries - before the modern world opened us all up and connected everyone together to share them. Even in some cases from town to town. From what I’ve tasted and experienced so far, it’s really worth exploring if you ever make it over :)
yeah man england is like a patchwork quilt of quirky local traditions. lived here all my life and I still learn about new ones now and then. I grew up in the countryside and we did all kinds of stuff like a plum festival, dragon boat racing on the river, mayday celebrations etc. it's full of folklore and strange stories of local people, bits and pieces of buildings that span through centuries in a single place. where I live now doesn't have so much of that sort of thing so I do miss it sometimes. the countryside is rich with this kind of magic if you go looking for it, the modern world sort of obscures it but it's still there.
That’s because English traditions have been pushed out of our cities and the English countryside is the only safe haven left for them to thrive.
Britain may have spent a couple of generations being known for rationing, poor restaurants and poverty food in cans, but its traditional and regional food customs have always been first rate. This is a great and new to me example.
There is a reason that the British empire spread the English language and English sports all over the world but not English food
@@jb76489 mmhh
@@jb76489 English food has spread all over the world, the problem is it's made from the best quality meat in the world, not only can't people afford it in many countries they can't get the cuts.
@@hetrodoxly1203 what food would that be? Fish and chips? Beans on toast?
@@jb76489 I was thinking more traditional, Sunday roast with Yorkshire pudding, Stargazy pie, Lancashire hot pot, Suffolk black ham with some Shropshire blue washed down with locally made farm cider, etc, i could go on for pages, i suppose it depends on what you were given as a child, i can defend you here because most other countries have their equivalent to beans on toast, well made fish & chips are fantastic.
Similar to "country ham" in the Southern US. Cured for three months, some are salty and some are sweet depending on the region, and most are hickory smoked after curing.
The spiral cut country hams are simply to die for especially around holidays from say November 1st to New Years Day. Something my family always looked forward to every year
I come from one of those regions where "country ham" means "pork-based salt lick", and I still have a hard time eating sweet ham to this day lol. the ham I grew up eating for breakfast was like a ship's ration.
where do you think you got it from?
@@2chrono2 same, sweet ham disgusts me lol
I bet those hams are good
I like the way Claudia interacts with the people. She is supernatural, I believe that gives value to the documentary. On the other hand, the black ham process is fantastic, it looks delicious.
You have to love the very end. He is holding a small keg waiting for her to open the door. He then needs to balance the keg and open the door himself.
Well, she’s a woman, she’s very selfish.
😂
"can i have a glass?" -why he didn't give Claudia one 🤣
he missed out by not having a beer with Claudia. his loss :x
Shame! I wouldn't miss that chance.😁
Sigma male grindset 🤣🤣🤣
Women are temporary. Ham is eternal
That was an opportunity long gone. Poor guy.
His point about why the ham marinade is so sweet and so strong is really understated. Salt pork or other cured meats were so salty that many recipes of the era call for you to wash or soak your meats for hours to help pull some of the salinity out. This is that same process but also using things often seen as byproduct like molasses to help flavor the meat to take away from that saltiness
Wait, sugars are FOOD for the yeast in beer and alcoholic stuff
So it makes perfect sense
Yeah
Claudia didn’t understand half of the English gentleman’s subtle jokes lol
"Can I have a glass?" lol, I've never seen the lady before but I already like her.
27 years living In England and this is the first time I hear about black ham
25 years living in Suffolk, about 20 minutes from Peasenhall, and it's the first I've heard of it 😂 Looks bloody good though
And it is amazing. This ham is sooooo good.
Yeah! Great episode. 👍
British food is like our countryside lovely most everywhere apart from some wildernesses and exquisite in places. Not spectacular, its not the alps or the grand canyon, but very satisfying,
Wow, that looks really good!
Oh well i’d love to try! 🤩🤩🤩
"We have ham not sham!", he sure does like that line :-)
Jealous minnesotan here. That is a work of art and should be cherished and continually passed on. Cheers!
Always great Claudia!
I live in Suffolk and not heard of this 🤣 will have to try it!
I'm from Rome and i knew it, you're a local and you never heard of this ham? How old are you? 12 y/o? lol
@@AndreaMelk92 I'm 31 🤣 I guess this shop is the only place that sells it as it's not a huge thing in Suffolk definitely not in the dead ass town I come from lol I regularly buy meat from local butchers but never seen or heard of it, its probably a class thing more middle class people probably heard of it, I'm from the rougher parts of England lol, feel like Turkey products more linked with Suffolk/Norfolk (I live on the border of both) because of bernard Mathews lol
There are no rough parts of England. Even knives are banned

Nice to see something local to me! Nethergate brewery is in my village 😁
They feels weird. I’ve spent years and years dribbling over our beautiful European neighbour’s food and culture and I’ve stumbled across 3 for England. Couldn’t believe it. Love Claudia also. My favourite is those Italian black hams that live off acorns. Looks so so good

Rootbeer glaze.....oh yeah, I could handle that
Omg... " Claudia is so 🔥!
And now, i simply have to try so black ham.
This seems similar to a BRADENHAM HAM, which came from THE WEST COUNTRY.
I haven't seen one for 30+ years.
But it is vwry difficult to get REAL ham in England now. In fact it is easier to get Parma ham, or Iberoan ham, tgan it is to get real Emglish hams.
I shall make a pilgramage to Suffolk to find these gems.
As a good old Suffolk boy with friends in the west Country, we seem to have a lot in common. You'll be made very welcome in Suffolk I'm sure
Ahh 👌 Thee perfect recipe for diabetes and heart disease. Perfection
Can't even imagine the cost of one of those hams here in the states. Worth though I'm sure.
anyone know how to do this in your home. Looks amazing and would like to do this at my house on a smaller scale.
She’s my favourite reporter on RUclips… the accent the look the style… she’s gorgeous 😍💯👌
Yes she is very beautiful and like you said the accent the style just adds on to her beauty 👍🏾
1:30 Just a correction on why hands and feet winkle when exposed to water. It's actually a reaction to help gripping things in wet environments and is activated by the autonomic nervous system. If the nerve to your finger or toe were severed, the pruning action would fail to function on that appendage.
What is the name of that process, I would think it was due to osmosis as epithelial cells lose water from an area of high concentration to low concentration.
that is just a theory, they aren't sure exactly why this occurs.
@@Riddlestar93 if that were the case then the epithelial cells would GAIN water and swell. the surrounding water has no solutes meanwhile the cell is filled with solutes and components
@@ugiboogy1111 indeed you're quite right. The water in the bath tub would enter the cells and burst some after swelling. However after looking into it, the OP was right in that it is an autonomic response which shunts blood away from the periphery in a process called 'pruning'
Refreshing to bear witness to an intelligent and civilised exchange, for a change. Thank you both!

How is this served? Do you pan fry a bit of ham?
You can serve as it is (cooked but cold) with cheese and bread etc. You could serve it hot after a quick pan fry. Or dice it and use in things like you would any ham.
Personally, pan fried quickly served with fried eggs and chips
Roast

Yo am I the only one who caught what he said at 2:28 ? "Pure grade mollases, much blacker than you"
I thought he said blacker than usual
Glad I wasn’t the only one that caught that. I had to turn on the subtitles to double check.
It's quite clear from the stress that he was going to say something like "much blacker than you ... usually see" but for some reason got distracted and abandoned the sentence. There was no stress on 'you' so he was NOT comparing the molasses to Claudia.
My brain completed the sentance when I heard it with "much blacker than you think" which seems to be where he was going. Still, it's an unfortunate place to pause the sentance.
@@Mathemagical55 are we still allowed to find that funny or are you forbidding it?
