- This is a recipe that I always cook for my mom
She loves this
It’s actually very light and comforting
Recipe
2# chicken
1 sliced sweet onions
1 tablespoon lemon pepper
1 tablespoon garlic powder
1 tablespoon salt and pepper
1 cup olive oil
Coat chicken with oil
Coat with seasoning
Place in pan fat side up
Place in 375 degree oven for 45 minutes uncovered
Remove from oven and drain stock in pot
Add sliced onions on chicken
Slightly thicken stock and pour back over chicken and cook covered an additional 35 minutes
ENJOY WITH MASHED POTATOES AND CORN

I just finished baking the baked chicken for dinner tomorrow (July 9th, 2022) and I followed your directions to the letter. Mr Jeff, you are an absolute God sent. I made my okra and tomato soup using a honey baked ham bone, Jasmine white rice and baked chicken. I baked the buttermilk pound cake yesterday and half of it is gone. That recipe went into my recipe box. Thanks you

I wonder is this the process Luby's uses to make their baked chicken? I love their baked chicken and I know I'm going to just love this one. I don't have these seasonings in my seasoning pantry or my pantry, so I'm going to use my good ole Louisiana seasoning this time. I'm going to buy the seasonings you used and bake it exactly the way you did. I'm telling you right now my mouth is so ready for this chicken. Laissez le bon temps rouler, bon appetit!

Hi Chef. I really really really would like to know where you got that roasting pan that you are using. I am looking for one that is about half of that size. (I know use a regular pan.) But when you like somethings you like it. Do you use frozen corn or can corn? Enjoy your vacation. God Blessing...
Frozen or canned corn will work. I got the pan at bed bath beyond
