- OLD SCHOOL BAKED CHICKEN AND RICE
This is a very easy,quick ,delicious and cheap cost effective meal that feeds lots of people
I actually survived on this meal for years as i was growing up and moved out on my own
RECIPE:
6 legs and thighs quarters
3 cups white rice( i use uncles bens)
1 white onion chopped
6 cups chicken stock
Season and sear chicken on both sides in large pot
Remove chicken from pot,add onions to pot and saute until tender
Add rice and chicken stock to pot with onions and stir
Add chicken back to pot with rice and place lid on pot and place in oven for 45 minutes on 350 degrees or until chicken is nice and tender
Enjoy with your favorite green vegetable and bread

Chef Jeffrey that chicken and rice dish still to this day is one of my go-to meals to feed my family. My mother had different versions of the dish sometimes she added cream of mushroom I also had it where she's added tomato sauce to it and call it a Spanish dish it's so many different ways this dish can be ultimate to taste whatever way you want

Awwww man! This was my favorite meal of all time. And you said it with the picture of grape kool-aid . We didn't know that we were poor, cause with this meal we were rich. Hallelujah and Amen!!!

My mom made this too! It was ten of us plus 2 adults. A piece of neat for everybody. We were full too!! Koolaid with cut lemons we got fancy sometimes. Gonna fix this too!

Chef, when you revealed the prices of the chicken legs and thighs back in day, I just knew this video was on point. Plus, when you mentioned Kool-Aid and sugar, I was leaning in. The good old days were really the good old days, even if we struggled. But the struggles defined us and made us who we are today.

I enjoyed this chicken and rice video. Quick simple and easy. ( Boiled chicken and noodles is one of my favorite dishes from childhood.) I enjoy them both still to this day. You cannot go wrong with kool-aid. I remember it being 10 for a $1.00.

Good morning! Yep, back in the day. I used to pay 10cents a pack for kool aid & yes, chicken & rice, meatless spaghetti, pancakes, hotdogs & beans & scrambled eggs when I was raising my sons myself.
I used to use a pkg of Lipton onion soup back in the day.
I still love all those old school poor man’s meals & so do my sons & they are grown men now…🥰 I also cut back on the sugar in the Kool Aid to save some money & cut back on sweets…

When I was a kid, we are second generation American-sicilians, we ate cheap food like lots of beans, pigs feet, a pig "sheet's of skin, we would throw bread crumbs on it, roll it up, tie it with thread, cook in tomato sauce for about two hours. Then cut it up like cinnamon rolls. We ate snails. Almost never had beef. Chicken for DAYS, liver, and lots of pasta. My father made a garden to help. Sometimes, there was very little food for all 7 of us, we would throw an egg into water with bouillon cube and make soup. We ate cream of wheat for breakfast because it was cheap. We NEVER went to McDonald's or out to eat, that was for rich people. And we always donated at church. I could go on and on. We didn't eat any processed foods, and we are all very healthy.
My mother and father worked every day to provide for 7 kids my father could cook anything he knew how to stretch a meal and make it work. He passed that on to his children I know how to make it off just about anything. Miss my parents but the memories last forever…🦋🦋🦋
It's a classic that will always be delicious. One of my favorites, I love it with jazzed up Stove Top dressing and canned cranberry jelly.
Mornin Chef Jeffrey... you too me down memory lane. My daddy use to say "light bread" haha. Sometimes my momma would make smothered rabbit and rice, biscuits for breakfast. Absolutely delicious. Chicken 🐔 and rice 🍚 in the fall cool weather with a savory bowl 🥣 of chicken 🍗 and rice will warm your soul ❤. Thank you Chef for sharing this recipe. During these hard times this is inexpensive and goes a long way to feed a family as well. 😊🎉🎉🎉🎉 only difference is I boiled the chicken 🍗, used the stock from that. , add bouillon cubes to make stronger then cooked rice 🍚 in that add chicken shards. I can relate on those get by meals. Back in the day when things were very cheap, my go to meals were meatloaf or goulash. I'm talking about when ground beef was 89 cents a pound, bread was 25 cents a loaf. Even to this day I make meatloaf but only prepare it when ground chuck is on sale. Times have changed but if one cooks do meals that stretch, more economically to stretch the pocketbook/wallet to survive the inflation Era we are coping with. May God bless. Tfs
