    In this video, I'll be showing you how to make a delicious and easy mushroom risotto that's perfect for a weeknight dinner. This recipe is easy to follow and doesn't require any fancy ingredients. All you'll need is a few simple ingredients, including arborio rice, mushrooms, and a few basic seasonings.
    This recipe is perfect for a quick and easy weeknight dinner. It's a great way to use up those mushrooms in your fridge, and it's a comforting and hearty dish that's perfect for cold winter nights. Give this recipe a try and let me know what you think in the comments.
    Ingredients:
    1 Tbsp olive oil
    1 onion
    250g mushrooms
    1 tsp salt
    3-4 cloves garlic
    1 cup arborio or carnaroli rice
    1 cup white wine
    1 litre stock of your choice
    3-4 sprigs of fresh thyme or rosemary
    2 Tbsp butter
    A handful of grated parmesan cheese

As a step-mom, I make a lot of family-friendly comfort food, as well as a lot of simple, realistic dinners for one (or two).

    I remember watching this! Glad you brought it back, it's such a delicious meal! Everytime I watch a new videos of yours I go back and re-watch some random older ones, it just such a comfort for me, and I want to make every single recipe to be honest.

    I just finish making the Risotto, very good. I only had a few mushrooms so used a beef broth. Thanks again. I'll be making this again.

    Thank you! I’m definitely gonna try this soon! You say you like this better than instant pot risotto. I would love to know what recipes you DO like in the instant pot. (I made hummus in my IP from dried chickpeas last week and I loved it!) I’ve made your salmon chowder 3 or 4 times now. Still love it!

    oooooooooooooooooooooooooooooo I wanna try this but for some reason my taste buds are going to asiago instead of parmigiano. Salivating lakes at this point..hahaha

    I read that you can sub white wine for apple cider vinegar in recipes like this. True or false?
