    Hello folks! And a very warm welcome back to What’s For Tea :) I made this incredibly tasty chicken & mushroom risotto! We really enjoy chicken & mushroom risotto, and I thought it was high time that I give it a go myself :) It was actually very easy to make….despite being considered tricky to get right. It tasted very indulgent with the addition of the cheese.

    Makes enough for 4-5 people
    ShoppingList:
    500g (2 1/2 cups) Arborio/risotto rice
    400g Mushrooms - diced
    400-500g Chicken fillets/tenders - diced
    100g (2/3 cup) Parmesan cheese - grated
    50ml (2 1/2 tbsp) White wine
    60ml (1/4 cup) Olive oil
    1.6 L (6 1/2 cups) Chicken stock
    30g (2 tbsp) Butter
    25g (1 cup) Fresh parsley
    1 Onion - finely diced
    2 Cloves garlic - finely diced or sliced
    2 Teaspoons dried Rosemary
    4 Thyme sprigs
    1 Teaspoon of black pepper
    1 Teaspoon of salt

    You started with a chicken and mushroom risotto?! You brave soul! I started with plain risotto for my first. I serve it with seafood Christmas Eve and it's such a hit.

    Having grown up with risotto being a common meal I'm amused at those who find it frightening. It's easy; just a bit tedious. Saute ingredients with rice being last. Quench with wine. Ladle in stock bit by bit. Arborio does the rest! Very filling and always delicious.

    I hope you enjoyed the risotto. I have always avoided making it because I can’t stand tending a pot on the stove. Now we make a mushroom and spinach risotto using the instant pot. It’s great, the recipe is on the Internet. Perhaps you’ll try it.

    I just been on a Baltic cruise with P&O I signed up for a Marco Pierre White master class one of the dishes we made was risotto The only thing he did different to you was just before you put the lid on he added lots of butter and grated Parmesan cheese then let it melt on the top of the rice when it had melted We mixed it in thoroughly It gave a wonderful creamy texture !!!!

    Looks very creditable. The key thing with risotto in my experience is being prepared to stand in one place for quite a while and give it your undivided attention. Also, stir vigorously! Oh, and if you can get carnaroli rice it's well worth trying.

    I have some risotto rice I’ve never used. This inspires me to try. I love how you use ingredients we typically have around the kitchen pantry. I think I’ll add golden raisins. Tapadh leibh, Cheryl. 😋

    Hi Cheryl, that turned out very well indeed for your first time! I don't know if you saw my comment the other day - I left a link for a video, but youtube often doesn't like that. It was for Diane in Denmark (another Scot) and her video doing risotto in the instant pot. If you have one, it will really save your arm! I was skeptical at first, but it really works well. We usually roast some cherry tomatoes in the oven first and add them after the wine, then cooked chicken or shrimp when it's finished being under pressure. If I was doing mushrooms, I'd fry them separately first as well. It really works beautifully every time! I've been making risotto the usual way for decades since my school friend showed me how (with her Italian mum's recipe) and I won't go back.

    I use porcine mushrooms to add flavour and a dark colour to the risotto

    Looks lovely. I have made risottos in the past, but not made 1 for a while. Like you have shown they aren't that difficult, just got to be patient. I like the way you have served it looking all fancy !! Another hit Cheryl

    My first try at risotto decades ago was an absolute disaster and I had no idea what I did wrong but it put me off risotto for some time! I did find a recipe for the microwave (I know sacrilege) which works great for me. I have one for polenta also. I did have to adjust the recipes when my original microwave died as it was 600 watts and my new one was 1000 watts and the first time I tried the recipes I had massive boil over. What a mess. Technically, the microwave doesn't shorten the time a whole lot BUT it does save me standing at the stove, stirring and stirring and stirring.

    Go look up "no stir risotto". It turns out we've all been lied to! You can literally just tip the stock in, let it sit, stir a tiny bit, the add a bit more stock if needed.

    Congrats for doing it Cheryl. I've eaten risotto a few times in my life and I think it's one of the most bland things on earth. I then decided to make my own and after ALL that effort it's 100% NO from me - won't cook it, won't order it in a restaurant). Too much effort for (WAY) too little taste. Same goes foe Paella - same reasons.
