      Yes, whenever she does these, I’m like I want a My version video to accompany it. Like when she first started doing these and had a bakery recreate her crayon cake. I want to see her take on these same cakes.

    As a decorator, if I tell you to keep something refrigerated, I'm likely doing so because I either know my cake needs the cold to keep it stable or because I've used fresh fruit in the filling. Shaped cakes when they are smaller in diameter can easily be overfilled and that may have also been the issue with the oozing. With strawberry shortcake filling, I would have kept it in the fridge regardless of fondant or buttercream because cut fruit adds so much more liquid especially combined with whatever sort of glaze they were mixed with. Cut fruit also spoils faster when left warm and out of refrigeration. And I also would have warned my own clients to pull it out right before they needed it so that they wouldn't get the bleeding and puckering from the moisture.

    Who doesn't refrigerate CUT strawberries? If the bakery said to put it in the fridge, it should have been refrigerated!

    With a fruit filling, it should be refrigerated. If not refrigerated, the fruit will release liquid. You can put fondant in the fridge but take it out of the fridge and let it sit out to become room temperature without touching the fondant to let the condensation dry.

      Yes. I've had years of experience with fondant, making my own and bought, and they have always been refrigerated, taken out the next day and have never even noticed condensation or has it been and issue

    I think the fresh strawberries was totally the reason they said to refrigerate the cake. Once they are sliced they won't last at room temperature overnight.

    I'm sure someone has already said it, but I think the home baker did the paper wrap on the soda to make it look like a cup from McD's, especially with that seam. Super realistic!

    I feel like the yucky strawberries in the at home baker one is their own fault for not putting it in the fridge... of course strawberries are gonna go bad if they’ve just been sitting around all night! Strawberry shortcake always goes in the fridge. That’s probably why they told you to put it in the fridge.

      Fruit can sit out for more than a day without going bad. Those were NOT fresh strawberries.

    These cakes 100% should have been refrigerated overnight! Also, I wouldnt say professional bakery. They are both professionals. One just has a store front and the other does it from home

    Im a cake artist and i always tell my customer to put the cake in the fridge.. the worst thing you could do is keeping it at room temperature

      Yes but if you have a fondant covered cape it can mess the whole thing up after it comes out and comes to room temp.

      @@berengereful i agree that it could have been better, but at 90 bucks you'd only pay for a minimum wage person to work on it for 6 hours... Including the baking and chilling. Not just the decorations. Someone earning over 15 dollars an hour would be spending even less time for the full 90 dollars.

      Bc it's a highly skilled job so you're going to be paying top dollar for the training that the person had. Even people who are not masters you pay for their skill, just like when you have work done by an apprentice or journeyman plumber.
      Then on top of that you are getting an artistic piece, so you are buying something you could technically resell and make money off of. So you pay more bc of the fact it is one of a kind. Then on top of that you are asking for something custom, which means that the creator will have to invent to execute your ideas. Again, you're not paying someone to make something they made 100 times but something entirely new.
      Even something not perfect it takes a lot of time and skill to be able to execute.

      The prices of these cakes are very fair. These cake were very difficult, time consuming, and had extreme amounts of detail. These are not typical cakes. Even when we if the cakes did fall apart, they were still incredibly difficult and time consuming to make. And in the baker’s defense the cakes did not look like this when they sold them. Kevin even said that. Complicated cakes like this never hold up to time, or being moved well.

    The way the first one was addressed is really rubbing me the wrong way because you did not follow instructions and put in the fridge like was instructed, especially since it was just laying there overnight. Definitely an unfair judgement there

      Exactly! And their justification of ignoring the instructions made no sense. The amount of frosting and fondant between the layers of the cup cake and hamburger cake are going to be different because of the level of detail on the hamburger one's layers. It literally looks like it melted and that wouldn't have happened if it was in a fridge

      I totally agree. They knowingly ignored the instructions. It was probably seeping because they included "apecial sauce". But regardless, they were told REFRIGERATE UNTIL SERVING and left it out OVERNIGHT. Just because they were the same flavors doesn't mean they used the same quality of ingredients. They probably didn't use preservatives or artificial stuff.

      Yes! Also I’ve had strawberries go bad in the fridge within a day or two of buying them . I can definitely see them going bad in a cake left at room temp overnight (in the SUMMER).

      Honestly, as a chef and a food handler myself, this really rubbed me the wrong way too. I couldn't ever leave something like this with all the strawberry sauce and frosting and stuff overnight on the counter it would drive me insane. I wouldn't feel it's safe to eat after sitting at room temperature - in the summer - for probably over 12+ hours... I don't know anything about fondant tho so I have to take your words for it but still, if the baker said to put it in the fridge, I would have put it in the fridge. They probably know better since they literally baked the cake... I mean, they could have trash talked their fondant the next day if they want but at least they would have followed the instructions HAHA. - But also, yeah, I think the cake wasn't well structured as well, but that's honestly not bugging me as much as leaving a cake with fresh fruits sauces and all on the counter to sit all night ?? XD

      Definitely this, cakes can easily get damaged during transport with things bumping around even within the box.

    As a person who has a home bakery business, this is quite disappointing. I think the criticism's are fair regarding the quality of the decorations etc, but to make a big deal over cakes collapsing when you are told on picking up on how to store it... then disregarding that advice... is not okay.

      if you watch the video she says multiple times that the cake shouldn’t have had to be refrigerated to not fall or ooze and that the cake should’ve been fine left out overnight even though the baker said to refrigerate it. it’s really weird to critique the cake over things that would’ve not happened if she just followed the instructions from the baker

      So as an at home baker you would be ok charging that much money for un unstructured cake. It fell because it was not scewered, not because it was not put in the fridge.

    You know.... It always amazes me how the "pro" bakeries don't look that impressive, they're just charging for supplies rather than time. They don't really give the love to cakes that home bakeries do. They don't focus on the texture and color (edit: and flavor). They get the basic shapes done and call it a day. And I hate that.

    Just a suggestion, maybe review the cakes when you get them, not a day after :) After all, people put a lot of work in them... Even if that was not the issue, not placing a cake in a fridge when you are specifically told to, is also not a good thing, at least review right away :) Love your channel though.

    I think you should start taking a photo when you first pick it up to see what it looked like originally and then see what happens when it sits for one day, since these keep falling.

    I’d love to have seen them before on the day of. I don’t think it’s quite fair to let them sit out for a day. Most people pick up their cakes the day of their event.

    if the at home baker started with very ripe strawberries, and you left them out for a day and half. They could turn like that. I love watching these videos. And I would be so so upset at a plain vanilla cake with sugar flavored frosting.

      I feel like if I leave my fresh strawberries out even for half a day, they go bad.
      Especially if they go from a very cold environment to room temperature.

      Especially if they are organic strawberries. Organic doesn't last as long and must be refrigerated.

      Oh 100%. once cut, fruit MUST be kept in the fridge. Food safety requirements in my area state that because once they're cut they're no longer shelf stable. Even regular strawberries are generally kept in the fridge. I wish they would've taken the home baker's advice.

      Definitely! Every cake I’ve ever gotten from a bakery has needed to be refrigerated. The one time my dad picked up my sweet sixteen cake for my big party and he forgot- it literally started sliding around and looked like a leaning tower.

    I always keep fondant cakes in the fridge. Of course you need structure too but I believe the fridge is what keeps the buttercream stiff which helps the cakes stay together.

    I always refrigerate my fondant cakes. They go in abox and then into the fridge. You should always refrigerate cakes with fresh fruit filling and you should follow your baker's instructions

      99.9% of people who order cakes don't make cakes. But they still expect it to look like their instructions. People send us pics all the time and say make it look like this. We either do it or tell them up front no way. But never in 20 years have I said to someone ordering to make their own version to show me how it's done

    The strawberry’s might of been the reason they told you to refrigerate the cake because in my experience if you take strawberry that have been in the fridge and then leave them out they can go brown and slimy really fast.

      But wouldn't people keep them overnight for an event? You wouldn't really collect them the day of, too much could go wrong, so they would sit overnight. Also she explained why they shouldn't be refrigerated.

    I think it’s incredibly unfair to the first baker to nitpick so much on the burger cake structure when you didn’t follow their instructions to refrigerate it. Obviously the drink is a simpler shape so even if it’s made of the same components it had a better chance of not toppling despite also not being refrigerated.

    So let me get this straight....you let the cakes sit out overnight? 🤦🏻‍♀️ and did you say fondant cakes should never go in the fridge? 😒 I've never had an issue with fondant cakes being stored in the fridge as long as they are in a box and when I go pull it out of the fridge before an event I leave it in the box and leave it alone to avoid condensation. That's how I instruct my customers to do it also. This video got on my damn nerves 👎

      Is it customary to expect a client to have room in their fridge to accommodate these huge cakes? If I’m having a party, my fridge is already full. I’ve only gotten a few specialty cakes in my lifetime and I’ve always picked up the day of the party.

First of all you always pick out cake ON the day. Or you take out the bottom shelf and put it in the fridge. It is $400. When you had leftover cake from your birthday, did it go into a cabinet???

    I actually have insight on this one! My mom makes cakes with strawberries quite often, and they go bad soooo fast. A bowl of cut strawberries, even in the fridge, goes bad super fast. Especially when they're soaked in water/juice (from cleaning and cutting) and if they have sugar sprinkled on top (common way of prepping strawberries for desserts). When left outside the fridge after all the time it took to prep them and soaking up that sugary frosting, they will 100% turn brown like that. The seepage is probably from the strawberries going bad

    Probably the reason you should've put the at home cake in the fridge is because of the strawberry, idk where u live but if I leave some chopped fruit out on my house oh it IS gonna go bad and those strawberries were smushed in frosting and cake so I think the fridge could've fixed that problem, ALSO can we appreciate the fact that the coke cake is practically holding the burger?? I mean it could've fallen over too but nooo👏🏻👏🏻

    I refrigerate all of my fondant cakes. If you're not sure just place it in a sealed corrugated box and allow it to come to room temp in the box. I even put my fondant cakes in the fridge unboxed with no issues. It really depends on the humidity levels in your refrigerator. It's best to put a tester piece of fondant in your refrigerator overnight to see how it responds to your humidity levels.

    You know you can just accept your mistake, right? YOU messed the first cake up by not following a simple instruction, it's not hard to understand that strawberry shortcake made of fresh strawberries will start to drip if let to sit out for 24 hours and hence it would fall.
    I started watching your videos because you were fun but this review is pointing towards a bad attitude.

    With the strawberries, my thoughts are: part of the reason they wanted the cake in the fridge is because of the fruit. It can spoil quickly if not kept cold and inside of the icing, etc.
    Any time I make a cake with fruit inside it, I refrigerate it to keep the fruit fresh and from going "off".

    I question whether Laurie's ever used fresh strawberries in the filling and then left it overnight. Lol. They turn FAST! I'm a cake artist and I've experimented on how to best preserve fresh fruits at room temp if my cakes are going to be sitting at room temp for a long time. Letting them macerate in sugar and then adding just a bit of gelatin to stabalize the syrup helps to keep the fruit fresh for longer. But you still should keep it refrigerated overnight! Fondant cakes that don't have perishable fillings can be stored in air tight boxes at room temp over night, but absolutely not if they have perishable fillings! A lot of professional bakers make a point of this and give you tips on how to reduce risk of condensation or color bleeding on fondant cakes. Karolyns Kakes actually has a great video explaining how to best do it.

    I've never had issues with fondant in the fridge.... 🤔 I couldn't imagine not putting it in the fridge...if it can't go straight to my clients after I make it...i can't just let it set out. I'm a self taught decorator and never had a cake fall over.

    Based off your feedback about taste etc. I think the home baker wins it! Which makes me really happy to hear (despite the flaws), because I’m a home baker and it’s nice to see that we can create better products than the “big bakery shops”!

    Semi-professional baker/decorator here 🙋‍♀️ I have my own little cake business, I do maybe 24 cakes a year, and I'm 2 years in. I had a lot of help. My mom did the same thing I do when I was a kid, and my neighbor owns a much more successful business, and I spent as much time with her in my adult years and helping her with details as I did with my mom while she did hers. The first thing I was ever taught by both of them, was structure. I mostly do 6 or 8 inch single tier cakes. In the event I do have a 2 tier cake, 5 dowels in the bottom tier and a cake board on top when I go past 3 reasonable sized layers. Structuring larger layers for single tiers more than 3 reasonable layers as well. I don't advise my people to use the fridge when fondant is involved, but I do suggest so when it's just a buttercream cake. Structure is key. Most tiny little detail flubs can be forgiven when the cake is structurally sound. I can honestly say that I have been structuring since day 1, and anyone who has ever known enough to decorate a cake should have learned first and foremost that structuring is massively important.

    I have a BIG issue with the judgement here. HE knowingly ignored instructions. She said thry are thr same flavor, they AREN'T. They also probably don't use preservatives, which is why you need to REFRIGERATE. Also, just details, but a Big Mac doesn't COME with tomatoes, that was actually a LACK of attention to details.

    I bet that's the juice from the rotting strawberries. It needed to in the fridge so they wouldn't go bad so fast? But they probably baked and stacked the one day and then came back a second day to decorate and thennnn gave it to you the day after depending on the time you requested pickup I think.

    The edible paper on the entire outside of the "cup" actually helps it look like a paper cup -- it would be tough to, even with fondant, have that same matte paper appearance.

      You can use tapioca straws if it is a smaller tiered cake or dowel rods. Put your first cake board down and (let's say this is a 6" diameter cake) insert your rod or straw into the cake and cut to the same height as your cake layer. 4 rods are enough. Place them halfway between the center and edge of cake (2" from center) one on each direction (North, South, East, and West. Then place your next cake board on top and your next layer of cake. Always be sure that each cake layer is level (top side and bottom). Cut the rounded top off of the cakes before stacking. The wider the cake, the more rods you will need!

    I think the edible image on the cup could’ve worked as an entire wrap around if it was a singular sheet which would actually mimic the seam of a real McDonald’s cup. Sad day for the structure of those cakes...and sad day for those strawberries. Definitely appreciate the cookie fries. I’ve ordered cakes for my channel too and I’m surprised at the breakage that occurs! RIP to the melted sugar sheet I received 😬. Love your videos.     Hahah the most popular cake flavours are ones that sell the most, and they're usually not the best tasting flavour that a baker/bakery has to offer.
    E.g. my most popular cake is plain and red velvet. But my best tasting flavour is lemon blueberry and strawberry...

    I agree with others about refrigerating them. I always refrigerate my fondant cakes & they hold up fine day-of coming to room temp while on display, but sitting out overnight might be a different story. As far as execution of design I think both cakes were crap & not worth the prices. As a baker I would be ashamed of these cakes & could not justify over 3 or 4 hundred dollars for work like that. The dimensions were way off & details were poorly executed…etc. What you charge as a baker is justified not only by the time it took & supply costs, but for the quality of your artistry. You don’t get to charge the same prices as someone who would have executed this to perfection just because it took a lot of time & effort. Hone your skills & it will justify your prices.

    The At home cake definitely looks the best. That the burger is a bit crooky is just how all burgers from McDonald's looks like, when you order here in Denmark. Can't remember when I've seen a straight standing burger 😂😂🙈🙈

    The home baker definitely did it better. I've sold multiple cakes out of my kitchen and I find that an individual usually does it better and pays attention to detail more than a big bakery. I'm amazed that both never thought about structuring a very tall burger cake, it's crazy! (You forgot to taste the cookie fries, I was curious how it tasted.)
