    I appreciate the reality of this. It makes me feel better seeing this when I know that a quick cook during a uni study session can cause me chaos. This also shows the actual retained skills and knowledge of the normals.

      Can they really be called normals at this point? I'd call them near or at the level of a restaurant cook. not fast food, and not a chef, somewhere where if they were put on the line at a steakhouse, they wouldn't have much difficulty.

    Oh brilliant dishes….I thought I was a reasonable cook (I’m 68) but I have learned so much from all of the team over the last year since I’ve had the Sorted app. My son came to live back home for a while last year after my husband very sadly died suddenly, and as Daniel enjoys veggie food midweek I needed new ideas and have never looked back. My cooking technique has improved and the simple things like grating garlic and ginger have meant my cooking tastes better and takes less time, plus I don’t have a kitchen full of pots before I eat …well, not always! A big thank you, Sorted.

      Kudos. No matter how well you can cook, you should be open to learning new cooking techniques and ingredients. The biggest thing is to get to a point where you have a bunch of very versatile "back pocket" dishes that you can throw together with minimal fuss. You get to the point where you are no longer "cooking to the recipe". It's kinda like knowing how to "season to taste" instead of relying on measured amounts of salt, pepper, etc. And the best thing is that grocery shopping can inspire you rather than having a set list of potentially expensive ingredients that might be out of season.
      The best thing is knowing how to use stuff you have on hand. You don't have to buy "chili seasoning" if you have cumin, cayenne, paprika, and oregano in the spicerack.

    This is actually a massively appreciated format. I do enjoy the other cooking excursions, with some creativity and a goal set in mind before it comes to the actual cooking, but it always lacks a bit of reality.
    You don't sit down with a team of chefs to discuss your next experimental dish, if you're a normal person. You just bring together influences and ideas and try to tie them up into an interesting and most of all tasty dish. That influence and the ingenuity required to pull it off get completely lost, when you make a recipe beforehand, try it out and then just cook it on-air without professional help.
    I do get that it's essentially required, so the show can actually present a dish, rather than just a jumble of ideas, which would require 5,6 or 7 revisions to really nail down a final product, but it's nice to see some actual creativity every once in a while.

      Yes, this was a very helpful format for the person at home to see how they can put together the different techniques and ideas they learned while watching this show. And as you said so well, in a realistic way with a normal being thrust into just throwing it together on the spot, no recipe, no food team testing, no proof it will actually work out, just like the rest of us at home cooking from the pantry and hoping it turns out tasty.

    I'm actually not too surprised that rhubarb worked for the curry base, amchur/mango is used in tons of curries and could fit a roughly similar niche of sourness to go along with Ben's tamarind comparison :) Serious props to Mike for pulling that one off though in the time limit lol

    Perhaps an unpopular opinion, but I think Mike deserves a little bit more than just the basic badge. Barry did a salad... a delicious salad, but still a salad, with time to spare. Mike went nuts, and did something which, in 15 minutes, I don't think anyone would dream of. Definitely Mike deserved the Advanced Speedy Cooking badge. *nods*

      Barry just used one speedy cooking hack (miso butter) and did not cook the steak to the level he aimed for (he could have finished on time had he let it cook longer instead of rushing to plate it). Mike used several speedy cooking hacks, had the added challenge of the unconventional ingredient combination and lack of coconut milk, but he still came up with a creative and perfectly cooked dish. Mike should've received the advanced creativity badge and maybe even a fish badge!

    I really love the idea of core ingredient picking order. You could really tell that while barry was more in his comfort zone because of first picking, it gave mike the perfect amount of time to think of something out there and how to make it work

    You know, I'd love to see a three-way battle where they're taking turns picking an ingredient to use, which the others can't. And this includes Everything in the kitchen. If someone picks eggs, the others can't use them. If someone picks butter, that's gone too.

      Oil salt and pepper should be the only ingredients everyone can use.. Or limit the use of spices otherwise someone can just grab every single spice available and use a tiny pinch of each just to screw with the others

    Here's an idea: how about a cooking challenge with limited space? I have a really tiny kitchen where I can barely get out a chopping board so prepping/chopping stuff gets pretty tough!
    Other than that, love this!

      I don’t know if you do this already; but I have taken to buying frozen vegetables that are ready prepared. More so for me because I was getting a bit frustrated with fresh going off before I can use them, but it saves a lot of time and space etc. and given a lot of veg is harvested, prepared and frozen within a few hours it is technically fresher then fresh? It also seems cheaper for me; when I factor in what I was throwing out into the costs

      If you can find space for a box grater or a bar grater like a microplane (those are a little on the pricey side though), you can grate directly into bowls/pots. Also, get yourself some metal bowls, so if you accidentally knock something over, you won't have broken glass/ceramic/plastic bits to deal with on top of the food mess.

      Do you have the floor space to enlarge it? Because you can get a reasonably priced kitchen island at IKEA.
      Otherwise there's the old trick from the 60s (I think) with the "built-in" chopping board that pulls out like a drawer. But that'll require some carpentry skills.

      I always find yogourt separates when cooked, though I believe something can be done with cornflour in it?

      @@helenswan705 Adding it slowly (and sometimes even off the heat) and whisking it quickly makes a big difference. My family is Kashmiri. There are many Kashmiri dishes that use yogurt and end up with beautiful, velvety gravies without needing cornflour. I hope that helps you out 🙂

    This was great. Actually seeing them stuck in the reality of "random fridge ingredients need to be used up" really hit the spot. Now I want to see Ben do two meals with the same 6 to see how he'd change their choices and if he'd come up with anything totally new.

    I think Mike has turned a corner in his skill in cooking! Even under pressure, he didn't flap about.
    SO proud of him for pulling it all together there at the end. To me, it seemed like over time in the back of his brain he's been subconsciously absorbing the lessons & *today* they all came together in the front, producing a yummy winning dish!

      @@BuchanvanVeen There's definitely been a few videos where it starts with a "surprise" ingredient, then they send the boys somewhere to learn about said ingredient(or the other way around, learning about an ingredient, then it's part of a battle) and there are other times that they're preparing recipes made for them by the food team(idk how much input the normals have with these recipes). I still like those videos, but I love seeing what everyone is able to truly come up with on the fly.

      @@BuchanvanVeen Majority of videos they're preparing recipes that their food team developed. A lot of people think these guys don't qualify as "normal" anymore, but they're just good at following a recipe. When they have to improvise they're still exceptionally normal.

    The blooper was really sweet.
    Mike did a hell of a job in 15min. I wasn’t sure if he’d be able to finish. Glad he found the immersion blender instead of transferring to a blender.

    Mike absolutely proved that he can do amazing things when he puts his mind to it! honestly, I would have given him the badge but not Barry. Nothing he did really stood out to me as faster than usual

      Agreed. While it looked good, Barry just slapped a steak on a salad while Mike made a whole-ass CURRY in 15 minutes, that alone should get him the speedy badge.

      Definitely wouldn’t have given Barry the badge. If the gold is speedy cooking, you still need to actually cook the food well. Steak was under Dunn for what he was aiming for, and he didn’t actually do anything with the cucumber he just chopped it up and cucumbered it all over the dish.

    Badges well deserved! I identify with Mike so, so much. Under the pressure of time, he adapted, and although not the original plan, the final result was a success. Mike just needs to trust more in his cooking skills.

    The ultimate swap the ingredients battle, normals are given the same budget and they buy the ingredients and then they explain the dish they are making and then the ingredients get swapped randomly and then they had to make the dish which the other normal just explained

    Mikes thrown spices in without really being sure is so like how I cook. All I can say for people trying to work out how to cook like that is taste, taste and taste again. You would be amazed what you can ‘save’.

    This was excellent to watch. As so many others have said, I enjoy the battles where they work with the food team, but this was way more entertaining, almost the chaos of Pass It On but relying only on yourself. Barry was truly sabotaging Mike all the way through the selection, especially with the rhubarb, even though rhubarb cooked down with other aromatic flavors--particularly onion--makes an incredible sauce for red meat. I now want to try making a vegetarian version of Mike's dish.
