    This video is so wonderful! I live a good distance from anyplace that makes cakes. We always need a cake in a pinch and this is it. I can bake it just fine and I'll use you're decorating techniques. You are a great teacher. You outline all of the details and explain it all so well. I'll buy you a coffee, several sure.     A little tip I learned: Viva brand paper towels are great at smoothing icing without leaving imprints. Also will not stick!

      Yes! Viva is the best, I just wanted to show that you could use a regular one (a lot of people don’t have Viva) because you add texture on top in this design. But I always use Viva for that reason! I should have mentioned that so thank you for that ☺️☺️

      I watch a lot of this videos across the web. I seen one that showed after the crumb coat and you ice the cake, get as smooth as you can, if you let set at room temp for like 10-20 mins till a crust forms on the icing, you can take a sheet of printer paper and a fondant smoother, to smooth it out. If the cake icing has a dry crust layer it should not stick to the paper....
      I have tried this before, and it somewhat worked but as a beginner I am sure I just didn't do it right lol.

      I love watching you videos, I have learned so much from you. I do not do cakes professionally, just for fun and family and friends.
      I normally use box mixes (being disabled I can only go so long before having to stop), to save time! So your quick hacks really help a lot. I love the print out idea. I don't have the ability to make the edible print outs so this is a great way to get kind of the same effect. Thanks!

      @@littlelady3895 That is actually how I ice my cakes! But this video was for beginners and I didn't want to do something that could be too challenging to learn, so I kept it simple. But the paper trick works really well!

    Hi Karolyn. I did enjoy your video and as a seasoned instructor of thirty years, your explanations are very good. The only thing I would change is colouring the icing before adding the sugar. I find it best to make a large batch of white icing, separate it into containers and add colour to that. This way you're not making full batches of one colour. I enjoyed your video and look forward to seeing more.

    Big lots sells a brand of aluminum foil that is the very best I’ve ever tried it’s Royal brand foil heavy duty it’s twice stronger and thicker than Reynolds . Hope it helps someone! And thanks for the awesome videos!

    Dear Karolyn,
    I've just started out doing some cake baking at home using some of the techniques you've shown in your video and found your tips to be most invaluable as I tried them for making a birthday cake for my elder of two son's who's nine.
    Given that my son is into things like nerf wars and soccer. If I were ever to attempt to make a soccer ball cake for him in the future. What advice would you give for baking a spherical cake?

    If it is a last minute thing, bakery closed or no time to order, a frosted & decorated cake may be all that is available, but if there is time & you only want a cake to decorate or even a cake with no frosting at all, I found most bakeries happy to help, I believe the price comes down too, so why buy one already decorated or even frosted JUST TO STRIP IT ALL OFF WHEN YOU GET HOME to waste it, time & effort, 'course if you save the frosting for reusing that's different.

      I make so much buttercream because I go through a lot of it. Just 1 batch is good for a cake this size. But you can freeze extra, put in an airtight container. Then I'd also wrap with plastic wrap. It can be frozen for about 3 months!

    I appreciate what you are doing, but if I have to do all that, why wouldn't I just make the cake s? You can get box mix for little more than a dollar a box. Taste s better than any of those cakes in a cosco, etc....

      This was just a tutorial for beginners who either:
      1. Don’t know how to bake
      2. Don’t have time to bake or
      3. Have a cake from a certain store that they like
      and want to try to decorate themselves.
      I get it that some people think this concept is weird though!

    Hi. Love how you are transparent and don’t gate keep. I’m no baker but i totally took on the responsibility of my daughters first birthday. I want to do three 6”. I don’t have a turn table, mixer, or that skinny spatula. Any advice? Can I get this done with a hand mixer? I want to do something simple but elegant. I was thinking fondant but that seems like a big risk so I was thinking just buttercream the whole thing but what decorations would be best to cover the cake for imperfections? TIA 🥰

    I bought a Harris Teeter devils food chocolate sheet cake, removed the rather thick icing. I use small saucer and got 5 circles of what turned out to be already 2 layers of cake and ended up with a 10 layer cake. I whipped the icing with a little water and it turned blue. I iced each section with it and put in refrigerator, putting 2 in the freezer to quicken the chill. I then began stacking and icing with canned Hershey chocolate icing. The process worked great but.... as you know it began to lean. My husband ran to the store and got me a dowel and we cut it and put 2 in it, topped it with sprinkles. It was the leaning tower of chocolate but a great hit and one of the best cakes I've ever eaten. I kept it in the fridge until shortly before dinner and singing, etc. My granddaughter just had to see it cut from top to bottom. You know, that cake stayed up until it was 3/4 cut like that. That last dowel did the trick. I had a great time and it was a great hit. My 41 year old son loved it. Next morning he hit the kitchen with coffee and cake. Thanks.
    NOT NEARLY AS GOOD AS YOURS. but I'll do it again.

I ordered a letter/number pan and may use that but will probably do another grocery store cake to my own creation. I enjoy your videos so much and its time. I"m on go.

    Would you use dowels for a cake this high? I have found that dowels are necessary- especially in warm weather, so the cake layers don’t shift

      In warm weather I would! It's not necessary in the cooler months because the icing doesn't get very soft.

I’ve tried to replicate the icing on those bought from the bakery and I can not get it right. It’s driving me crazy. Love all your this videos

      Some bakery icing is AMAZING!! I remember the icing on this one wasn't great. It tasted like shortening. So it was much better with the fresh icing on it! I would love to be able to replicate that icing you're talking about!

      Thanks Ruby! This icing can last up to a month stored properly in the refrigerator. Make sure it is in an airtight container. It can also freeze well up to 3 months. If you freeze or refrigerate it, take it out and leave it on the countertop to come to room temperature. Then I would add a little more vanilla and put it in the mixer to mix it all together again, as sometimes the butter can separate when it is stored.

    That icing u have in the air tight bowl do u leave it out until your ready to use the icing again

      You can leave it out for about a day. I usually refrigerate it if I know I won't be using it for a little bit. But if I am going to use it in a few hours, it is fine sitting out.
      You can pop it in the microwave at 15 second intervals to soften it out of the fridge!

      It just gives a smooth surface to work on. I have found that it turns out better if you add the texture onto smooth buttercream rather than try to do it right on the cake in one shot. But that's just me, I'm sure it works the other way for many people!

      Always butter and shortening because the shortening makes the icing more stable.

    I don't see the point of buying a cake and scraping the frosting off just to redo it. Buying a box of cake mix costs less and it takes something like 5 minutes to mix it then pop in the oven. Redoing a store made cake costs more and takes more time. So what is the point?

      I've never personally worked with ghee, so I'm not sure. From what I understand, though, is the texture is more like oil? If so, you could have issues if you just replace the butter with the ghee. Other ingredients may have to be modified so the texture remains the same.

    It's a shame you couldn't reuse the roses. Take them off when you first take out the cake or freeze it a little then leave the cake. Use the extra icing for cake pops

    but I really can't understand why you'd buy the cakes!?! I could bake the cakes in about the same time and have less work and mess

      The cakes were $16 each, the cost of making the icing was about $4. And the topper that I got was $12. So it cost just under $50!

    Where do you purchase your sweetex? I can't find it here in Texas and when I do happen to find it, it's soooooo expensive! 😔

      They have it in a local store here, but you can get it online. It is more expensive than regular shortening. But it's sold in 50 pound blocks, so it is a lot to shell out at once, but it lasts a while. You can use regular shortening, I just feel like the high ratio shortening has a smoother mouth feel and is structurally stronger and holds its shape better than regular shortening.

      I agree! I actually tried the icing once I removed it and it tasted like chemicals! I really made this video for people who are either beginners, who don't want to or don't have the time to bake, or who have a certain cake that they like but want to make it their own.😊
