First of all, gorgeous cake! Secondly, the skewer method for the blue ribbon-brilliant, as well as imprinting the design to pipe! When I have to make fondant balls I make a snake of fondant then divide into equal sections to make sure they are all the same size. Thanks for another VERY informative video!

I don't do cakes anymore. I have mobility probs so, when I did flowers I made drop flowers. If I still did cakes, I definitely would buy pre-made.💜 now when hubby wants a cake, he doesn't care about decorated cakes. He just wants cake and frosting.
Beautiful cake Karolyn! And yes I can relate with the time and heaviness of cakes. I workout 6 and 7 days a week with strength training so I can carry heavy cakes. We don't just do cakes, we power lift so we can carry them too! 💪 🤣🤣🥰🥰💞💙💙
Hello, This is my first visit to your channel. From one decorator to another, you did a Beautiful job! My favorite way to make balls that are uniform is to roll out a snake consistent in diameter. Then cut that snake in equal lengths that will yield the desired ball diameter.

It terrified me until I tried it! I started with friends and family having small weddings and didn't really care so much about the detail. Then as I started improving, I was more confident in taking on larger wedding cake orders.
Phenomenal cake! I live in such a rural area. Nothing is 5 minutes away, lol. So I try not to take orders over 3 tiers. This cake is fabulous. Thank you and thank you Karolyns mom 😉 for another great tutorial.

Thank you Dara! I feel like you have pick the least stressful option. I feel like assembling a cake at the venue would be extremely stressful (for me) especially when it's warm out because the cakes will be soft and I would mess them up! I would say to start with deliveries of smaller 2 tiered cakes so you can get used to driving with them.

Do you mean stacking a fondant covered cake on top of a cake iced in buttercream? If so, I do it all the time with no problems. You want to make sure you properly build the internal support so it is stable. ruclips.net/video/VwD3RqCasxg/видео.html
I love this cake and all it’s details. I just didn’t like the fact of how it was transported, UNCOVERED! That is not very sanitary at all. It is fondant, not butter icing and could have at least be covered with a very sheer white breathable covering
I usually cover all of my cakes for transport, but this one was so big and I didn't have a box for it and it was 5 minutes away. I didn't want to take the chance of messing up the cake to cover it in plastic for such a quick trip.
Is the lemon extract a super strong flavor? I usually use vodka since it evaporates because I’ve been worried about a lingering (and unexpected lol) lemon flavor with the final cake product.
Glad you are successful, but fondant doesn’t taste good and has an unpleasant texture. Nobody seems to be making great buttercream (no shortening) cakes. Shortening and imitation vanilla have no place in fine baking.
The thing I love about cake decorating is there there are so many possibilities and options. And I also realize that opinions are subjective. I personally never eat fondant, I just eat the cake and icing and leave the fondant on the plate. I've had quite a few customers request fondant because that's what they prefer! The customer who ordered this cake wanted all of this fondant work and likes the flavor and texture of the American buttercream I make. So, while I understand it may not be for everyone, there are many people who like it! Those are the customers I target.
I remember a few months ago you gave me advice on my first 4 tier delivery! It was 100 degrees that day and a 45 min drive!!!!!! It got there perfect 🤩 thank you always for all the advice 😊
@@KarolynsKakes I have an almost two-hour drive to deliver a 4 tier wedding cake and stressing out as the temperatures have been 97 and higher so I know in July it's gonna be hotter. Any advice?? I always freeze my cakes and finish decorating the day before delivery day and most of those deliveries are an hour 30mins but only 2tiers.

You're welcome! I store it in the fridge until I deliver it. If it's hot outside, I don't recommend leaving it out for too long. Especially if you have a filling like cream cheese icing, which can't sit out too long. If the event is outside, I deliver the cake as close to the ceremony time as possible.
Well, luckily this cake was only a 5 minute delivery. If I had to drive really far with it, I would have had to cover the entire thing in fondant to help protect it during transport since it was so hot out! You have to drive really slow and take turns and stops carefully. I get a lot of horns, but I don't care, I'd rather have the cake get there safe LOL

Yes, they go in the refrigerator only after they are iced in buttercream. I usually leave them in there overnight before I start handling them. So they have at least 15-20 hours to solidify!
I box and wrap up (almost) all of my cakes. However, this cake was HUGE and I only had to drive 1 mile to the venue. Luckily it was nice out so I was able to get away without having to box it up. I usually don't take on orders this big because boxing them up and delivering them can be a huge pain in the butt!
Sometimes if there is too much corn starch on there, I will dip a paint brush in shortening (Crisco) and wipe that on the cake, then take a dry paper towel and wipe the excess shortening away.
Using fondant is a short cut in cake decorating. A talented cake maker does all of the decorations on the cake with frosting using the precision of a surgeon.
I definitely don't have the time (or desire) to make all of my decorations out of icing. I totally understand that's what some people prefer, so they would want to get their cake elsewhere. If that makes me talent-less in your eyes, so be it.
I had to transport a tiny 1 tier cake with big topper on it and I was so stressed and I held it in my arms whilst screaming them to take the turns slowly. Meanwhile you just drop your cake in the trunk 😂

Hi there, I have made high end cakes for 50 years...... love the video; can I ask? Do you ever find your fingernails getting in the way? I've always had to keep mine short so they don't snag the icing, especially when making sugar paste flowers.
I don't have that issue. But I also hate making flowers LOL I've been wearing my nails a lot shorter recently. But I guess I know how to work around them and make sure I am constantly washing my hands so I don't have issues with it!

I did it for my Grandmother so didnt charge anything for it but I got a lot of questions asking me how much it would be. Would you be able to help me?
Thank you! Unfortunately I can't tell you how much you should charge. But I do have a video about that, letting you know what to take into consideration when charging for your cakes. You can start by calculating the cost of supplies and ingredients. Then figure out how many hours it took you to make the cake. I usually let the people at the venue know where dowels and straws are placed so they have an idea when they cut it. Hugs back from Philly!💜

The lemon flavor does stick with the piece. I’d stick with Everclear alcohol if you don’t want the flavor on the fondant.

It's 5,7,9,11,13 tiers on an 18" board. Each tier is about 5" high.

You're welcome! I store it in the fridge until I deliver it. If it's hot outside, I don't recommend leaving it out for too long. Especially if you have a filling like cream cheese icing, which can't sit out too long. If the event is outside, I deliver the cake as close to the ceremony time as possible.
How in the world do you keep it from falling over in the back ? What if you hit a bump ? How do you keep it from melting since it is butter cream ?
Well, luckily this cake was only a 5 minute delivery. If I had to drive really far with it, I would have had to cover the entire thing in fondant to help protect it during transport since it was so hot out! You have to drive really slow and take turns and stops carefully. I get a lot of horns, but I don't care, I'd rather have the cake get there safe LOL

Yes, they go in the refrigerator only after they are iced in buttercream. I usually leave them in there overnight before I start handling them. So they have at least 15-20 hours to solidify!

I box and wrap up (almost) all of my cakes. However, this cake was HUGE and I only had to drive 1 mile to the venue. Luckily it was nice out so I was able to get away without having to box it up. I usually don't take on orders this big because boxing them up and delivering them can be a huge pain in the butt!
Is a dry brush all you need to remove the cornstarch from the fondant? Thank you again for the detailed tutorials ...
Sometimes if there is too much corn starch on there, I will dip a paint brush in shortening (Crisco) and wipe that on the cake, then take a dry paper towel and wipe the excess shortening away.

Using fondant is a short cut in cake decorating. A talented cake maker does all of the decorations on the cake with frosting using the precision of a surgeon.
I definitely don't have the time (or desire) to make all of my decorations out of icing. I totally understand that's what some people prefer, so they would want to get their cake elsewhere. If that makes me talent-less in your eyes, so be it.
I had to transport a tiny 1 tier cake with big topper on it and I was so stressed and I held it in my arms whilst screaming them to take the turns slowly. Meanwhile you just drop your cake in the trunk 😂
You get used to driving with them! I still get nervous every now and then 🤣

I freeze them! The refrigerator can dry out cake layers (when they aren’t iced)
Couldn’t you use icing instead of lard?🤷🏻♀️
I prefer American Buttercream, but you can use other icings if you desire!

Powdered sugar can make everything sticky! Corn starch doesn't.

Hi there, I have made high end cakes for 50 years...... love the video; can I ask? Do you ever find your fingernails getting in the way? I've always had to keep mine short so they don't snag the icing, especially when making sugar paste flowers.
I don't have that issue. But I also hate making flowers LOL
I've been wearing my nails a lot shorter recently. But I guess I know how to work around them and make sure I am constantly washing my hands so I don't have issues with it!

I did it for my Grandmother so didnt charge anything for it but I got a lot of questions asking me how much it would be. Would you be able to help me?
Thank you! Unfortunately I can't tell you how much you should charge. But I do have a video about that, letting you know what to take into consideration when charging for your cakes. You can start by calculating the cost of supplies and ingredients. Then figure out how many hours it took you to make the cake. Subtract the cost of supplies / ingredients from the price you want to charge and you can see if the profit is a reasonable hourly rate!

I'm still a bit shy to charge for my work but then I look at what some of the bakeries produce and how much they charge and I can definitely do better!

When you back your cakes, what is the purpose for the pin in the middle
The metal pin heats up and bakes the cake from the middle so the cake bakes / rises more evenly!
