There was more dough than paste balls so for some dough I made a thumbprint with a luxardo cherry in the middle. I found the paste balls to get a little tiny bit lost on the filled cookies so next, I rolled the dough out to about 1/4 inch thick and cut out some small circles, baked at 375 for 5 minutes, took them out, turned them over, spread a bit of paste on some of cookies and raspberry jam on the others, baked for another 6 minutes, let them cool and then sandwiched them together. Pistachio and jam sandwich cookies!

Hello, I was wondering if it´s neccesary to put the dough in the freezer before bake it. Is it? Because some recipes suggest to do this but some recipes skip this step. Thanks for the tutorial it will help me a lot of.
Hi! Do you want to bake them straight from the freezer? If so, it's better to thaw the dough for at least a few hours in the fridge. Baking temperature and time remains pretty much the same.
How many grams of pistachio did you use to make that much paste? I know the paste grams for the cookie and filling but how many grams of whole pistachios are needed?
I used 400 grams of pistachios to make the paste , this is more than you need for this recipe but you need at least 300-400 to make a paste (depending on your blender). You can find more information and tips on my website.
You could just an egg replacing powder and add some water. There are other things to replace eggs in baked goods. Such as making a flax egg or adding banana. Some egg substitutes work differently than others and can add a different flavour.
It would have been nice to let your audience know that you bought pistachio paste. The pistachio butter you made might have been nice, but nowhere near as smooth as the paste you were using later on - to say nothing of the colour difference. That really gives me trust issues regarding the rest of the recipe.
@zarainify He didn't use store-bought pistachio paste. The first one he mixed some of the paste with the white chocolate and that gave it a lighter color then he had some more that was not mixed with the white chocolate that's why it was darker and you thought it was purchased.
video shows that he mixed this pistachio butter with white chocolate, there's your pistachio paste that he made himself. why does this comment have 20 likes lol
@@Ash-or5xf yeah he did. But his seems to be more thick than what he actually used so it might just be him showing us how to make pistachio paste. Homemade pistachio paste will never be as smooth as what he used in the video though, commercially made ones are specially grinded for 6-12 hours for it to be ultra smooth. So I think he should’ve mentioned it so it wasn’t misleading. Good luck on your attempt! I’m gonna try them out too!
I tried this recipe from making the pistachio paste but need to add a bit of oil to make it a bit like yours..lol Actually, when I was adding the brown sugar, I was really hesitant to add the white sugar bcoz it was way too much sugar already... so, I still put the white sugar same as what you put and after...OMG ..too sweet.. diabetic ingredients you are sharing here!! Sorry! But this is not for me!! I tasted it and just gave it to sugar kids..lol 😂 Even the filling was already too sweet because of the white chocolate and then needed to put too much brown sugar and white sugar 😅😅 Hahaha 😆 DIABETIC INGREDIENTS I can say to this.
Just wanted to say that there is no "white chocolate" Cacao beans are brown. Therefore chocolate Is brown in colour.. not white. The white stuff is a mixture of cream and sugar.. I may be wrong 😮
@margaretclark4091 it's made of cocoa butter, sugar, milk solids, vanilla, and lecithin. Make sure that if you purchase it, you check the label that it contains cocoa butter because some cheaper brands use oil.

Umm maybe milk/dark chocolate. Also you can try using Pistachio paste only fir the filling (without white chocolate).
Pistachio pairs well with any chocolate.

Made these today. Nothing showed up in the center. All chocolate and pistachio paste cooked into the cookie. Very moist in the center tho. Lol

Also struggled with pistachio paste. Used Ninja smoothie maker - that was a mistake.
I think the creator used pre-made pistachio paste, homemade would be difficult to get that smooth using just a blender.

It has cocoa fat, otherwise it's not chocolate
