I tried this recipe with lamb's liver and it was FANTASTIC. ty Steve! Im not sure why there are negative comments. I love your enthusiam, friendliness, and love of a traditional cheap food! Ty for inspiring me! 😊🎉
Not only do I love this vid, I also love your energy and enthusiasm for liver and meat in general. As a liver skeptic, I'm going to have to give this one a try. Thanks for a another fabulous vid.
Wow, excellent recipe. I just made it but with a few modifications. I didn't have sage, so I used thyme. And for the sauce I added butter, cream and a touch of honey...Incredible!!! Thanks so much for this recipe Steve! You guys have a new subscriber here :)
I don't think I have ever had liver. I have had kidney pie. I was reading the health benefits of liver and want to give it try but have never cooked it before. What would you suggest I start with? This reciepe sounds delious to me.
Can you do a video on other cheap cuts like heart or skirt? I think Hugh touched on the offle with a stew but I'd like to see some more direct ways of cooking cheap meat like in this video. Love what you're doing :) keep the videos coming! Also I'm on my third batch of cured chaps;face bacon is a definite game changer in my kitchen!
Indeed. I too love my Mum, but she cooked lambs liver for nearly half an hour when I was a child, it was foul. Undertaken this way it is utterly different! Really nice.
Thanks for all the videos! I work at a fantastic kitchen in Montreal called La Salle a Manger. Every Monday and Friday we butcher a half pig and get our cuts for the week, make nitrate free charcuterie. I have a question about the best practise for head cheese, what vegetables and spices are classically used? And how can i best make it? thanks again
Hello there,Java here.. Well did this, what a treat!!...Also went out and bought some sage for the allotment Must try is with Calves liver......Carry non Steve...
I worked in a French 5 star in Philadelphia and the chef there made an absolutely exquisite sautéed calves liver in a raspberry vinegar Demi glacé that could make you cry.
Great video. I never cook with liver, but will be trying out tonight. I had chicken liver in tomato sauce on holiday in Poland and it tasted great and converted me. Determined to convert my family to it too. Husband thinks of liver as the tough variety!
Thanks Steve Lamb for a refresher on how to cook liver, that's how i cook it but it's been a long time...... So yeah i got some today and thats how it's done. ;-))
Hi Steve, great recipe & super tasty ! Can you please also do a video on how to fry / cook kidneys, as we are getting superbly fresh lamb kidneys here in Australia, but no-one really has a clue how to prepare them well ? Thank you !
I love liver but I was bought up in the sixties and seventies when you ate what was affordable plus there were six of us kids so either you eat it or go with out but I love liver and kidney beautiful in a liver and bacon casserole with mash potatoes delicious
Soak them in milk huh? That's interesting, I'll have to try that one day when I get my hands on some more liver! Luckily my mom is bringing liver and onions for this Thanksgiving so that'll fix my hunger for liver for awhile lol 😁. Thank you for answering my question 😊!
I tried to grill some cow liver today like I do ryb eye but it was so discussing I spit it out onto my plate and almost threw up. This way looks better then my way. I want to try lamb liver this way.
I like watching liver being cooked. I like watching people eat liver. But I can't appreciate its taste. I try really hard but I can't bring myself to like it and it really bothers me. Haha Great cooking tho. =)
Liver? Very tasty, very healthy. Rapeseed oil? Not so much. It's an omega 6 oil, which is inflammatory (will attribute to heart disease and heart attack unless evened out by an equal amount of omega 3) and when you heat a seedoil it turns carcinerous. I do wish the River Cottage kitchen would return to those age-old healthy fats like butter, lard and tallow instead of giving lipservice to that outdated and unscientific fallacy that saturated fats (which humanity ate to good health for millennia) are unhealthy while man-made seedoils (which can only be industrially extracted and are thus a very new 'food') are somehow touted as 'healthy'.
Smallpotato1965 Did you not see Steve put butter in the pan or were you too busy writing your comment? He's not drinking the stuff. He's frying off an awesome bit of liver and even mentions that he chose this oil for the taste.
I wish more people gave liver a chance! It's so delicious if it's done properly!
so tru I remeber my aunt torturing me with it as a kid .. but now find far better wa6s to cook it I can.t get enough of it

All organs are extremely delicious, But liver is number one ~
I never tried lungs tho, how about you show us a lovely recipe for it ?
Lungs are quite good, however, the texture (it is fairly sponge-y) might be off-putting to some.
uhチュンチュンマル Behind the ribs
Good recipe for lung is haggis.
Intestine
Lambs kidneys are my favourite organs
god I love liver, I've got half a mind to eat my own just watching this video

Can you use anything instead of flour?
Fantastic thanks Steve 🙏..!
WOW nice recipie.
Hi Steve. Loved the liver video. Have been cooking lambs liver that way for years, but never used pigs liver. Which is best?
Very helpful thank you
Great video, that's close to my personal recipe. I just use a few more seasonings and serve it with buttered rice.
Wonderful !thank you,
I generally don't like Liver, but I'd love to try it with some sage. Sounds great!
Try it as liver tikka masala, the best way to eat liver add the flavourings of masala to the flower too. Out of this world tasty.
Wow! Just a delicious way to prepare such a delicacy! Thank you and please keep enlightening us
Thanks Steve Lamb for a refresher on how to cook liver, that's how i cook it but it's been a long time...... So yeah i got some today and thats how it's done. ;-))

I like this guy.
Nice vid n tips
Question! Do you rinse the livers before you prepare them for cooking? I have never cooked liver before so I don't quite know what to do :( .
I normally rinse, I also then put them in milk for over an hour, takes away the bitter taste of the liver.
Soak them in milk huh? That's interesting, I'll have to try that one day when I get my hands on some more liver! Luckily my mom is bringing liver and onions for this Thanksgiving so that'll fix my hunger for liver for awhile lol 😁. Thank you for answering my question 😊!
@@TheMeloettaful No problem, better late than never 😀
More steve lamb videos
Sooooo good!
Drooling..
Liver really is so simple to cook and the flavour is so rich, I always buy "too much" and nibble on what's left over.
I tried to grill some cow liver today like I do ryb eye but it was so discussing I spit it out onto my plate and almost threw up. This way looks better then my way. I want to try lamb liver this way.
We all knew why you love sage so much, Mr Steve Lamb! 😉😉
Love Liver.
I’ve got to know the start Tuesday ready for Saturday night recipe 🙏mom
I like the video, but I was taught that you can add salt just in the end, because earlier it can be hard...
Pontosan👌
My family is a bunch of unsophisticated Koreans with unsophisticated taste palettes.
How do I get them to eat liver like what you have done? Any tips?

No way you can taste that little bit of sage with all that pepper.
He’s really funny 😭

Hi Mr Lamb, is that your own liver?
show the color inside
Try lamb liver with pomegranate molasses and onions. You won’t regret it!
When you deliver the liver, you are creating a zero sum.

Smallpotato1965 Trolly troll is trolly.
Interesting... Can you please state your source for this info?
Smallpotato1965 Well said bloke. U R dead right!!
Smallpotato1965 Did you not see Steve put butter in the pan or were you too busy writing your comment? He's not drinking the stuff. He's frying off an awesome bit of liver and even mentions that he chose this oil for the taste.
Smallpotato1965 do you know the chemical reason for the "goodness" or "badness" of saturated and insaturated fat?
Judging by the amount of liver, it's from something like a rabbit. :) My sheep livers are something like a kilogram each...
How camp is he.
Cold pressed rapeseed oil damn
Chess? Anyone? :,)
Shit..im watching this at 3am. Bad move....
So it's Lamb's liver lol?
Loved the clip but I hate liver :(
I find them very strong tasting.
Must try again. Maybe it was Mums liver sausage casserole that put my off. Being slow cooked..
i have never eat liver before so i cant say its nasty
I love sage, it's herbaceous... er yes and I think you'll find the liver is meaty...
Im out .. thought it was lamb liver
You didn't marinate the liver
Not enough sage. Seemed pointless putting it in.
