Field recording is quite tricky subject. Signal emitted from a mic is absurdly low hence trying to capture quiet ambient sounds noise free is pretty difficult. One of the best sensitivity mics with reasonable price are Rode NT1-A. It will generate 36mV output signal at 94dB and self noise is 5dB. Those are impressive specs for a mic yet they are not very good for quiet nature sounds. For example if trying to capture sound as low as 10dB half of that signal is lost to mic's self noise. That is in an ideal situation without taking into account mic pre-amps etc. Taking that 36mV@94dB sensitivity and calculating signal for lets say 40dB sound would give about 0.05mV signal. That is so low level signal that most of it will be eaten by the pre-amp self noise and other component level noise in the electronics. So even with the best sensitivity mics you would not be able to capture quiet sounds in the nature without drowning them into noise.
Limitations in the mic technology is quite bummer as there would be lots of interesting sounds to capture for music production. Then again if you want to find something good from all of this you can't be thinking how awesome human hearing actually is by having hearing threshold as low as 0dB without too much noise and how it can selectively pick up conversations and all sorts of interesting sounds from background noise.

This mics I have here now are just great for getting realistic sounds (how we hear)on a budget.

mentioned this just before, but soundman + their small amp is outstanding even with low volume.
there is also a (I think berlin) company called soundman and they are pretty amazing as well! For me it makes a huge difference if recording in 96khz or lower. its like going from mono to stereo ;-)
