    I use leg quarters for chicken noodle soup but I boil the leg quarters and make the stock/broth. So much better than store bought and you can control the salt, fat and save a few dollars. We love carrots and always put them in soup. My family loves veggies. Sometimes for a change I add cheese tortellini in the soup instead of noodles.

    Store bought chicken broth is yuk .. so you need to make stock then this soup .. a labor of love

    Dimitra you truly are a Greek Goddess. I love your recipes, the idea that I can make a delicious meal from simple good quality ingredients has literally been life changing, I kid you not! Spinach and Feta is truly the food of the Gods. My partner who is a great cook couldn't believe that I made the Spanokorizo and chicken dinner last night, he was searching the bin for the takeaway cartons. There is no TV chef who is a patch on you and if I could dine anywhere in the world it would be your kitchen table, the only problem being I would never want to leave.     Love your recipes! Thank you so much! By the way I noticed the bottom of your pot was very dark. Baking soda, soft sponge and a little bit of water should remove all the stubborn stains:) ❤️

    Add star anise when you add the broth you will see the difference. I put star anise when I cook chicken soup, and feels like I am in flavor town, as Guy Fiery says when he tries flovorfull dishes.

    A suggestion to "hide" the veggies ... once cooked, run them through the blender with some of the broth and add them back in. The blitzed veggies add some body and γευση to the broth, too.

    You notes said 535* to brown ckn in oven but you said 325* in video!

    What is it about parents these days that they don't make their kids eat things they don't like? I never made mine eat copious quantities of something, just a tablespoon, but the house rule was they had to eat a tablespoonful. Eventually their palates will change, but if they never try things, they will most likely never like them.

    If you don’t like celery: the seeds taste the same just use a teaspoon dried celery seed!

    My Dad ALWAYS put cheese in his soup and stews! Gross: parm- stinky feet cheese! Took over the meal!! I never did!

    We ate what my mother put in front of us. Whether we liked it or not did not figure into the equation. My mother was a fantastic cook, and she baked, loved to make jams and compotes, candies, so it wasn't like she made us eat awful food. But, we did eat.
