Really nice recipe!!
Try this method:
take some water and add 2.5% salt to it. (ex. For 100g of water we multiply it by 0.025.. therefore we add 2.5g of salt and mix it).
Now if you want to apply it for cucumber, put it in the jar with a little of black pepper and dried chilli with a little of oregano then cover it with the water.
Leave it for 4 days to ferment.
After the 4 days, take off 1/3 of the water and replace it with vinegar.
Leave it 3 days.
And you will be amazed with the result.
if you want to apply the same recipe to chilli..
Leave it more days to ferment.
Try it and you won't regret it!

Can you please do a recipe on homemade tapenade? I have seen many recipes on both youtube and (swedish) recipe sites and they all vary... I rather want to see one from an italian home cook that I trust! Please do one!
Also this was a great video, I have fermented peppers before (lacto fermented) and made sauce out of it but never like have I put them directly and whole in vinegar and later transferred to olive oil. Look forward to the next video and will for sure try this one once I harvest my peppers in a couple of months. :)

I imagine you have to refrigerate,since it isn't traditional canning? I've never done it cold like this. I like the idea of crunchy peppers.
The most important thing is to keep everything under the oil, not necessary to refrigerate

No but I will try 😉
Personally, when I ferment chillis it's because I want to turn them into hot sauce. It makes the flavour much more complex, but it also makes them soggy. Preserving them in vinegar keeps them crunchy so it depends on what you want to do with them later.

I see you said you like crunchy texture but should note if you do not apply cuts to the peppers to allow pickle in sometimes the peppers can rot from the inside.

When it is ready to use
In theory, immediately! I do this with my chillis and I usually use them from the next day onwards. It's just a way of preserving them, but since you're not fermenting them you don't need to wait for the flavours to develop.

This year I grew so much chilly(really hot ones), I don't know what to do with it. Frozen some chillies, dried some, picked some, made some into sauce, eating some raw and putting them in dishes. I'm a chilly lover, i eat 3-4 raw chillies every meal. I still have so much chillies that are spoiling..

We can & dry foods. I would imagine these peppers should be stored away from light. Leaving our glass jarred canned foods in the open causes loss of color.
