    We are having s much fun trying your recipes. Sept 1st I made the pickled eggplant and am waiting eagerly for taste test time. Today my husband bought 1/2 bushel of red peppers and we will be making this recipe tomorrow! Thanks for making preserving work an accessible skill for the home cook!!

    Definitely can roast garlic, and roast inside the peppers for a super taste.

    Another quick method is simply to plop the peeled roasted peppers in a large jar of olive oil/vinegar and
    garlic with spices and refrigerate. This ought to marinate for awhile. But this stays good while chilled. I
    use these in a number of pasta dishes.

    ❤️ this. The first time I ever Canned I used this method with a dish towel. My mother and grandmother used to can roasted pepper and tomato together and they made a delicious sandwich. Nothing else needed.

    You can use any pot with a lid instead of the plastic bag, to make the peppers sweat. Also, when making the salad, some vinegar, or aceto balsamico, makes them so, so good!

      Hi, For how long did you water bath them? And how much water in the pot? In the video I can see that the water doesn’t cover the jars. It’s that ok?

      Until the water becomes cold again
      If the water covers them even better

    I do same but add garlic olive oil salt and pepper in the glass bottle and leave for a few days.

    My goodness those are gorgeous peppers. I wish I knew what variety they are. I grow several different varieties of Italian sweet peppers but nothing I've grown has been that huge.

    Thank you for your excellent videos. I have grown lots of peppers this year and want to preserve some this way.
    How long do you keep the jars in the boiling water, do you just bring them to the boil then leave them to cool?
    And also do you seal the jars before you boil them?

      Yes 👍🏼 close the jars and when the water start boiling you count 5 minutes and after off the fire 😉 when the water is cold they are ready

      Yes but they will be very soft better on the fire 🔥 or maybe you can try with the grill

      in tunisia we make the sophisticated version we call it grilled salad or slata mechouia....pepper garlic tomato then cut to small pieces add olive oil extra virgin and lemon and coriander pwder plus capres and to serve we decorate with hard boiled eggs and tunsa fish ....ofcourse all must be cold and mama miaaaaa.

    Was wondering how the charred skin was removed without a trace. Thanks for showing us the right method and how you keep your prisitine white shirt cuffs from getting dirty. We are going to have a huge harvest of pumpkins in our garden between now and November and don't know what to do with them. Could you please post some of your great pumpkin recipes please? Although, they are an interesting flavor of raw of sweet and savory I would say and not to mention the great textures of the crunch, very good. I love peppers...

    I am growing this type of pepper this year for roasting. I usually freeze them. I would like to use this method instead and free up my freezer space. In the jar is just roasted peppers? Nothing else? Thanks. Just found you. Definitely doing the sun dried tomatoes in olive oil.

    Is it possible to preserve dried tomatoes like this peppers in jars without oil? Just by billing the jars?
    At least for 6 months would be fantastic, because I like dried tomatoes, but they have too much oil for me.

      Auch wenn er es (fuer seine Tradition) danach macht, weil alles frisch schmeckt, Knoblauch mit Olivenoel (und vielleicht Gewuerzsalz und/oder Kraeuter) lohnen sich, in das Glas miteinzubinden, damit sich das Aroma schon zuvoreinbettet. danach das Oel zum Dressing oder Kochen benutzen unter dem Motto: Aroma bis zum Koma, von Ontario hier bis zu ... hmmm ... Roma?

      @@Spectacular-cuoredicioccolato Even if you, understandably traditinal, enjoy to use oil and garlic fresh onto the bread, it is reasonable to use Olive oil and garlic already in the jar, especially if you want to use the oil later in dressings,omelette or cooking. I also recommended as a consideration to use herbs and a seasoning salt of choice to spice the mixture to her own liking.
      Short form: Thorough flavour vs. your traditional freshness (my humble apologize) and le mie umili scuse e grazie per l'ottima ricetta

    Hi. What do you estimate the ratio for the mass of raw pepper to volume of jar it will fill? For example roast 1 kg of raw pepper to fill a 1 liter jar, etc.

    Bravissimo! I never thought of doing it this way.
    Questions: How much time do you let the jars boil in the pot ? Why the towel inside the pot when you place the jars ? You don't have to season the peppers when you place inside the jars ? Is it because you can preserve better ?
    I will do this on my BBQ and see how it goes.

So, we remove the jars from the pot after the water boils for how long ? 5-10-15 minutes or more ? I just want to understand better. Then, next morning we taste the peppers with the seasoning we want. For how long can we preserve the peppers in the jar this way without any seasoning ? 1 year ? They can be stored in the refrigerator or even in the " cantina fresca" correct ? Thank you as always.

    After making the grilled peppers I've preserved them in jar. The pepper juice that came out, I reduced down into a thick paste. I intend to use it to marinate my chicken, do you think this could work? Or use it to flavor ice cream adding honey?

      I just did it with my broil in low. They came out really good. Now, I’m about to seal them. Hopefully everything goes well 😊

    Are you sure these are shelf stable, peppers are low acid and water Bath canning is not sufficient to make them safe.
