How to Make Nigerian Suya Spice (Suya Pepper or Yaji) | Flo Chinyere

    Suya Spice (Yaji in Hausa) is the spice that I dapped the fillets in when making my Nigerian Suya: • How to make Nigerian S...
    Ingredients for Suya Spice:
    For 190g of Suya Spice, you will need:
    - 5 tablespoons crushed kuli kuli 110g (1 measures 25g)
    - 5 tablespoons ginger powder (75g)
    - 2 tablespoons cayenne pepper flakes (6g)
    - 1 small stock cube (4g)
    - 10 strands of uda
    - ½ teaspoon salt
    Notes on the ingredients
    1. The above ingredients are all you need to make your suya spice, no more, no less.
    2. The dry ginger should always be the same measurement (in tablespoons, not grams) with the Kuli Kuli. So if you want to make a large quantity of the suya spice, use the same cup/bowl/container you used to measure the crushed kuli kuli to measure the ground ginger.
    3. Though I listed the quantities for the stock cube and salt, you should add these two to your taste.
    The make of my coffee grinder is Braun. I think it has been discontinued. You can buy Krups which is a great alternative:

    I want to add that for people who live abroad, to achieve the best outdoor flavor, try boiling the meat first with seasonings, put it on skewers, add the suya spice on it and roast it using an indoor or outdoor grill. I use the indoor grill and it adds the smoke flavor to my meat.The reason I boil my meat is because I want it to cook well so I don't have to spend time on the grill. Because indoor grill doesn't use flames to cook, it take longer for raw meat to cook thoroughly. Just my own idea.

    On my way from Onitsha I stopped at Ore. As I asked the Mallam asked to sell some Suya Peppers to me, he gave me just the size in your video for 2000 Naira. So expensive. Now I have the secret and will make my own. Thanks very much for sharing this.

    Xylopia aethiopica is an evergreen, aromatic tree, The term Grains of Selim refers to the seeds of a shrubby tree, Xylopia aethiopica, found in Africa. It is also known as kimba pepper, African pepper, Moor pepper, Negro pepper, Kani pepper, Kili pepper, Sénégal pepper, Ethiopian pepper, Hwentia and Guinea pepper. The seeds have a musky flavor and are used as a pepper substitute. It is sometimes confused with grains of paradise. By far the most common name in Wolof is djar in Senegal, and this is how it is listed on most, if not all, Cafe Touba packages.

    @all nigerian recipes thanks for this recipe I finally got my suya spice. in place of peanut I used peanut butter squeezed out the oil as much as I could and rolled into shape when I try frying it melted in the oil lol! I decided 2 bake with low heat in the oven for some minutes and it came out Brown and dry but not crunchy I smoothen with hand and add other ingredients and it was perfect. I'll be sure to use real peanut next time it was hell to get much oil from peanut butter. will let you know how my suya turns out. Love how your make recipes easy to follow thanks

      +Lady vee you are welcome dear. Yes that's the problem with using peanut butter bought from the shops. It is too smooth and it is hard to squeeze out the oil from it that's why it never gets crunchy. Next time try grinding roasted peanuts with a food processor. Give it just a rough grinding, not too smooth. Then squeeze out the oil (if any), mold and deepfry.
      Well done for you efforts you are making to get the recipes right. I'm waiting for the feedback on the Suya.

    Hi Abiola! I'm glad you find the videos helpful. The only ingredient you need for authentic Nigerian Pepper Soup is Calabash Nutmeg known as Ehu in Igbo and Ariwo in Yoruba. That's all you need to get the classic taste. I discussed that in my Nigerian Peppersoup video. Pls note that it is not the same thing as ordinary nutmeg. They're usually hard to find outside Nigeria so you can tell friends and family to send them to you from Naija. :)

    i left Nigeria 20 years ago, and suya has been the biggest thing i have missed. i used to have it pretty much every week back home. but i have not had it since. im like if i can find anyone who makes it here i would travel for miles. no dice. so this is a cool video. what is that cube you crushed? i am gonna give it a try. thanks for the video.

    you can find "negro pepper" in Senegal and Gambia. it is used to make Cafe Touba- a delicious drink named after Touba Senegal. the pepper is also called djar in Wolof, one commonly spoken language in the region, and Guinea pepper.

    Well, for us living in the USA, I don't know where we can get some of these ingredients. But it's still nice to view. Perhaps Flo, you may make Nigerian spice mixes and we can purchase the mixtures from you so we can easily prepare Nigerian foods that require special hard to get spices and herbs. :)

      +Karen Cas you'll be surprised at how many of these you can buy in the States.
      For the Kuli Kuli and uda, depending on which part you live in, you can buy them in African food shops or even Asian and South American shops Just show them the image of it and you may be surprised. You can make the kuli kuli by squeezing out the oil from peanut butter (with a paper towel), then mold into shapes and deep-fry till crunchy. When it cools down you grind it. The other ones, you can get in your local supermarket. Someone even told me that there's something called powdered peanuts but I do not know exactly what it tastes like and if it will be right for this recipe.

    I really missed nigeria food in base in France but since I have been seeing all this video about how to prepare nigerian food I even miss it more cooking is not the problem but those real spices is very difficult to get here

    I see people adding lots of spices to kuli kuli: pepper, ginger etc but trust me, it is better to leave those out. I have links to videos that show how to make it in the description.

    Thank you actually I tried to do almost the same but different way & I've got the same results by using a peanut butter the crunchy one the remaining dry spices I could use the ordinary black pepper

    Not at all because it does not contain water. Even while in the freezer, it is always in its loose state, it never blocks. It will only be cold to touch. It may sound strange but that's science :) Try it and see.

    You finally provided me with the missing ingredient..the Uda spice
    I use peanut flour instead of kuli-kuli because that kuli-kuli is gold dust here in the UK
