Hi Dillon, thx for the granola recipe. I had been making an oil, maple syrup and vanilla based granola for years. When I switched to eating vegan and SOS free i had a really hard time adjusting the ratios to get a crunchy granola. Many batches i burned, turned to hard pebbles or remained too soft 😡😤. After many attempts i ended with a very similar recipe to this one you’ve shared. However... -suggestion- I bake it loosely instead of compacted in a 350 oven for 15 mins, brake them and toss with a spatula and finish baking for 15 more min. Once it has cooled then i add 3/4 c of dried fruit. That way the fruit doesn’t dry up any more and can stay soft and plump ☺️ Just a thought. I only have two baking sheets and i make this batch about once a week yielding aprox 10 -12 cups of granola for a hungry fam of 6 😬 Also, yes, i’d love a homemade from scratch yogurt recipe preferably made without soy. 👋 Monica from Colorado USA

I added 4 extra dates. It's really nice. Not as sweet for sure but super tasty and I love the texture (of both batches). Thanks!

Strain soy milk and boil it then let it cool till lukewarm, now add previous yogurt batch like 2 tbsp . Mix it and let it sit overnight in a dark and warm place. Next day it'll be done

I've yet to experiment with this once completed [1/4-1/2C] as a starter. Use the leftover water in pancakes or whatever. 'Cause it's fermented, it lasts longer than the 4-5 days with whole soymilk.

If it's a little bit drier, you can dump in some whole apple sauce too. Core the apps, soften with steam, then blend with the skins for all the C vitamins.

I was doubtful of this recipe at first but I tried it. When it dried and had that crunch I was still doubtful. But then I ate it with vegan yogurt and again as a cereal with oat milk. Boom! It’s awesome!

JUST made this (2 batches). Decent taste. I added ground golden flax and 4 extra dates to make up for the dryness to compensate. Will play with dried fruits as raisins and currants *used* taste bitter when baked. Thank you for the bones to this fantastic recipe. Now, on to making your falafel and Tzatziki sauce.
So, Dillon, I made the granola today. Just as your recipe suggested. I have a gas oven, so it is a damper heat than electric ovens. Anyway the drying part took about 50 minutes. I must say that I've written out this recipe, and will make it over and over and over again. Thanks for the info. You make this sos stuff so easy!

Great recipe. I took it out as it started to get hard and pounded it flat with a meat tenderizer. Then I stuck it back in at a lower temperature since the ends were cooking faster than the center.

Was thinking about sweet potato because it has a lower glycemic index number than banana and pumpkin. Wondering whether it is worth trying it raw though because sweet potato (like carrots) is edible raw. What were your experiences?

I've made this! This is my second time making it today. Not a huge fan of cinnamon so I added unsweetened Hershey Special Dark cocoa powder, toasted flax seed, sunflower, almonds, toasted sesame seeds, pecans, and white raisins. I hope it turns out good.
I made this today. The bananas were super ripe and sweet, and my dates nearly twice the size of yours so I put in half as many dates (I don’t like anything too too sweet). In hindsight I wish I would have put in a few more dates to make it a tad sweeter. The biggest trick is finding the sweet-spot in getting the mixture to crisp up. I have stuck them back in over and over to get it crisp but not burned. I’m at the limit of being able to put them back in, yet still it is a little chewy. I’m going to pulse the next batch more in the blender so the pieces are even smaller and perhaps they’ll crisp up better. It’s great, though, to find a recipe that doesn’t have oil or sugar. Thank you 🙏🏻

Ok so I made this sooooo good!!! Then I thought hmm,and subbed the banana with pumpkin and added pumpkin pie spice!! Oh yeah!!
How did you prepare the pumpkin? Did you just grind a raw pumpkin?
