Cheesy Quinoa Veggie Bake 4 pieces toasted bread, blended for bread crumbs 3 cups rinsed Quinoa, cooked in 6 cups water Bag frozen peas Cheese sauce: 3-4 cooked russet potatoes 2 onion rough chopped 6 cloves garlic rough chopped Sauté in water or broth 2 tablespoon miso 2/3 nutritional yeast 2 teaspoon crushed red pepper(optional) 2 teaspoons paprika 1 teaspoon pepper 1 teaspoon turmeric 1 teaspoon cumin 1/2 teaspoon curry powder 1 cup veggie stock Add some cashews if you want it creamier and richer Pour cheese sauce into sautéed onions and garlic to just heat up a bit. Add another cup of veggie broth to make casserole more moist. Blend. In a large bowl: Chop 3-4 cups broccoli 3-4 stems of kale chopped 1/2 pound cooked black beans Cooked quinoa Peas Add cheese sauce Add more broth if needed, needs to be wet Mix it up Place in 2 9x13 pans Put bread crumbs on top and season with salt, pepper, etc. cover with parchment paper and then foil. Bake at 375°F for 20-25 minutes, then uncovered and broil for about 5 minutes. Can be eaten with hot sauce on top if desired.

I'd be proud to take this dish to any gathering or make it when people come over. It's spectacular! And of course it is also great to make just for little ol' me. Yay! This cheese sauce is dope on baked whole mushrooms, steamed cabbage, roasted potatoes, roasted mixed broccoli/cauliflower/carrots! Yeah, that was dinner last night :) I do add tapioca starch for stretch and canned coconut for creaminess, but that's just me cooking! Keep the good ideas coming. Thanks!

This is a nice, versatile recipe. You could keep the beans then add corn and tomatoes. After cooking, add a side of avocado and top with cilantro for a Mexican style casserole. But, this version looks really great!

Well Your World I made a version (whole grain rice, broccoli, black beans, spinach) of this for an omni dinner party, last night, and I did not regret adding the bell peppers (1 yellow, 1 red) to the sauce. By the way, the omnis were having pizzas. Upon everyone trying my dinner (mainly out of curiosity), all their forks got stuck-in... To the point where I came home with empty containers instead of dinner for the next 2 days. 😂😂😂 Let's go ahead and add their thumbs up, as well, shall we😜 Well Done Elyse & Dillon❤️

Sriracha sauce has sugar and preservatives in it. Unless you make it homemade. I have bought organic sriracha sauce before I was sugar-free. No preservatives but still sugar.
I made this with High Carb Hannah's nacho cheese sauce and garbanzo beans instead of black beans. It came out really bland. Next time I will make your cheese sauce. It definitely made a ton of food, even with only two cups of quinoa.

Cheesy Quinoa Veggie Bake
