Finally found a recipe without tons of oil, fat or concentrated liquid sugar. I was thinking about using dates or bananas but I didn't want to waste them experimenting since the dates costed nearly $10/lb. Update: be careful not to put too much banana like I did or else the oats will suck up the water and turn into oatmeal instead of granola :(

I don't know if I told you that I made the banana granola and it was scrumptious! Loved that it is just lightly sweet, so I don't feel guilty like I am eating candy. So good, and I need to make another batch! Yum!
I really like this recipe, and when its still too moist after the 45 min in the oven I just turn the oven off and leave the granola in till my oven is cool and voilà! Super crispy lovely granolas for breakfast. Thank you!
This is an improvement on Ellie Krieger's Nutty Granola recipe I've been using for many years! It uses maple syrup for the wet and I used to feel fairly virtuous, but the more I learn and eat sugar with its fiber, the better I want to do in my cooking. This is right on time as I have some almond milk yogurt in the fridge waiting for a buddy. Thank you, Jill!

I’ve just made a huge batch of granola with maple syrup and coconut oil in it (about the only time I use oil) - wish I’d seen this first! I can’t wait to try this one, with no added sugar or oil. It looks absolutely delicious! I would definitely add cinnamon because I love it, and probably a bit of ground cardamom too. It will be a while before I try this because I’ve got a LOT of granola to chomp my way through first!

I made a few changes to the recipe in terms of ingredients, but the use of bananas + dates + water + vanilla instead of oil is awesome! Granola still came out crispy :) I put mine in the oven for 25 minutes only as they were getting burnt, though!
Mine came out somewhat burnt tasting after cooking for 50 min @350. Didn't realize how much crunchier the granola got after cooling down. Would try 40 minutes next time.
This video inspired me to finally try making my own granola. It was good, but I had trouble making it crispy and crunchy, and the cooking time was a bit long. So after a lot of experimenting, I came up with the following combination which I really like: 160g rolled oats, 60g banana, 40g maple syrup, 20g peanut butter, 12 + 12 mins at 310F on the lowest oven rack.
Tried it and it's great. Thank you for the recipe that actually doesn't have sugar in it. I'm personally omitting dates (replaced them with prunes the first two times as dates are expensive and it's still nice) as well. Still tasty. Edit: I just made it with no water or dates but with two scoops of coconut protein powder- it's more chewy but tastes godly.
Made the granola, followed the recipe exactly, it didn't turn out so good, so need to tweak it a bit. It was mushy from the start so keep adding oats, but was always mushy. Didn't turn out nice and crunchy like yours. My bananas we really ripe.

One thing you didn't mention is how long you can store this? I'm guessing it won't be too long since it contains banana & dates. Most of the time I make a lot of granola and you can easily keep it for two weeks (by that time it is all gone anyway). Would i store this in the fridge or just an airtight container?

I actually just made this and it was super easy. I didnt have pumpkin seeds or dates so I used more walnuts and raisins. It was easy and very good.

It will keep for about a week in a sealed container. It will last a bit longer if you store it in the fridge. :)

You can leave it out. The banana will help it stick together.

Yes it stores very well. It is eaten in less than two weeks at our house and It was stored at room temp in a ziplock bag.
