    I just made this and it turned out amazing. I'm eating a small bowl hot, then chilling the rest. I just blended everything together, no straining.

    May I suggest something? Blend it for a little longer so as to get rid of most of the balance of the big pieces and then don't strain it. The stuff you took out will simply add to the bulk and the fiber of the dish. It will seem thicker (a bonus! ) and taste the same. I never strain my oat or cashew milk and it turns out Just fantastic! I like the idea that I'm getting more fiber with the milk. It makes me me feel more healthy!

      @@ISa-jy8ol Don't knock it until you try it. I use me oat milk so fast is never has a chance to get "Ew" worthy! This counts doubly when making a hot chocolate as its blend directly to drink!

      I made it without straining it and it was delicious! I couldn’t tell at all. I also added fewer dates and it was plenty sweet as well.

      @@festivalmama Well done DC! Its so much better not straining the milk when ever you can. Its thicker and it's a whole food with all that great fiber! It's also easier! Enjoy to all those wild ones who try it this way!

      Great suggestion, especially if you have a high speed blender! Sounds perfect to make it a whole food recipe! The fiber is great, but I’m sure there’s a lot of nutrients in all those date bits too, not just fiber. I don’t like the idea of trashing any of those medjool dates either for the simple reason that they’re so darn expensive (with at least $20/lb., I prefer to enjoy each little bit), LOL.. ☺️

    I made this today and loved it! I only strained it with the bigger strainer and saved the fiber for my morning smoothie. It wasn’t as smooth as yours, but it was still a treat. Every recipe I’ve made so far has been great!

    Finally got my popsicle moulds and made this. Anyone remember Jell-O Pudding Pops? They came out GREAT!!! Perfect after school snack. Perfect before bed snack. perfect, snack. Holds up well in the lunch box and makes nice littel pies with a dollop of cashew cream on top. Thank you Jill!

    This pudding is delicious. A bit of work, but well worth it. It wasn't quite sweet enough for our palette, so I added English toffee stevia and wow, it knocked it out of the park! I also soaked the nuts in hot water for a few minutes to make them more digestible. Thank you for sharing.

      OMG, Hot Fudge Sundae with vegan vanilla icecream sounds soooooo delicious! Have to try making that one day! Have to see if it would be possible to make a sugar free or low sugar fudge or caramel for it... LOL, I put my icecream maker away for most of the year, or else that compressor would have been running way too often, wouldn’t be good for me... Now it’s soon time to let it loose for the summer! ☺️ I love having it, it’s a lot of fun to make your own, delicous icecream, nicecream is yummy too, but it’s nice to be able to make a wider selection of frozen treats.

    Finally made this pudding! I doubled the dates as I didn’t have medjool .. blended in a Vitamix & strained once but there literally was no need to as there were no pieces left behind. I also added an extra TBSP of cocoa .. I will need to play with the dates as I would like it sweeter but, it’s a winner!

      I wonder if cooking honey into the recipe would make it sweeter. I use 100% maple syrup in my smoothies.

    I made this because I saw it in the cookbook, but I'm glad I watched the video because you added an extra step (straining through the nut bag). Also, I think I will sift the cocoa powder because I seemed to get some lumps. I don't think my kids will think it is sweet enough. It was fine for me though. Thanks for creating alternatives. I also loved the banana pudding.

    I tried to make a sauce once using cashews in the food processor and it came out all lumpy...I had written off trying any recipes that used nuts, as i was sure I couldn't mix the nuts fine enough using the food processor. This video has enlightened me that I could strain it! Hadn't thought of that before! Purchased strainer bag today and made this recipe - it came out delicious, will definitely be making it again. Thank you!

      Also keep in mind you do need raw cashews for this and they are hard to get since FDA allows listing raw even on pasteurized cashews. So it may have been labeled misleadingly since that's allowed. Might not be you :)!

    As a person of Indian descent from being a vegetarian it was extremely easy to become a vegan. Most Indian dishes are vegan except for paneer, ghee, yogurt and desserts. I substitute tofu( frozen and thawed) and vegan yogurt. I really miss ghee.

    I had no problem finding good sugar substitutes, but I don't like vegan butter. I was so glad to find this recipe since it calls for no butter.

    Thank you so much for sharing this. I tried making oatmilk a while back and I am an experienced cook and no dice. Adding that bit of fat will help a lot to stabilize the product, plus I get why you don't need a powder thickener since you have the oat thickening agent. Great tips! Also, you mentioned using any old cocoa powder. Given that your entire series is about health, I wanted to offer as a chef and a supply chain professional, that almost all chocolate products are made extremely toxically from cradle to grave of their processing and supply chains, nevermind with child labor and companies that take scarce water resources and ship them around the world to places that don't need water as much as the places it was taken from. Healthwise, most chocolate is very toxic, and any cocoa powder that's not raw (and most now that says it is, since it mostly isn't even then) has other toxins introduced through the heating process. I realize we are making a cooked product either way, but one can mix in a raw, human-rights-friendly cacao powder at the end of the cooking process to minimize that, or perhaps use your recipe for other non-choc pudding options as well. The buzz people are getting from their chocolate is mostly caffeine, not mostly theobromine or its phytonutrients, unless they get beyond-fair-trade made and raw cacao, or whole fruit cacao. For those of us who have been eating whole plant based for a long time, it's important that we communicate clearly with people who are new to it, that adding any old chocolate is NOT the ethical or healthy choice at all and that it still encourages the addictive adrenal response people are trying to get away from. I really appreciate finding your channel so please don't take that as a criticism - I just wanted to add context and I hope you could integrate those data points into future videos or to your writeup. Thanks again.

    Okay, just tried this recipe, it's still cooling off in the fridge, but warm-IT WAS AMAZING! Much more satisfying of a texture than the pumpkin banana chocolate thing I concocted. Wonderful recipe. Thank you for sharing.

    I made this today according to the recipe and it turned out very slimy, so I chilled it and it was still very slimy! I don’t know what I did wrong!!!

      I haven’t tried just vanilla but it would probably work to just leave out the cocoa and add 1/2 tsp more of vanilla 👍

      patty 8873 when we used to make it as a kid - Stove top method was all we did. Always loved those first few bites warm . Tapioca too. Wonder if that would work with the oat/cashew milk ...so many possibilities.

      Clever recipe using the oat milk for thickening! You could substitute another plant based milk and you’ll get something more akin to hot chocolate since only oat milk thickens enough to create a pudding like consistency.

    If I may say, I never strain plant milks. I just soak the oats and/or nuts overnight and blend it really well with just enough liquid. After it’s really creamy I’ll add the water to my desire depending on the recipe. This way you get all the fiber and it’s a lot less messy and clean up to do. Just saying 😊🌱💚

      Thank you so much for offering this. I had zero luck making oat milk even as an experienced chef recently, and I use oats all the time. Bob's organic currently doesn't sift well so lahhhts of chaff makes it in, but it's the brand that works best otherwise for my needs. I'll see if I can find one I trust as much without the chaff and try as you suggest. I love the idea of adding the cashews to stabilize and enrich the mixture; I do think that will help me. Thanks for your tip - since every milk, even the pure and pricey ones are adding tons of salt now, I gave up on milks. I'll try your idea :).

      I have only made it with the home made oat milk. I think the only reason it works is because oats have so much starch. =)

      I cant eat oats either, which is a shame. So I was thinking the same thing. Perhaps some cornflour cornstarch mixed with a bit of the milk chosen then added to the pan and stir. That should thicken it. X

      @@elainethomas1894 Yes you can make it with simple nutmilk and other thickener if you need to - it won't be as whole food of a recipe but it will make pudding :). I feel you! I've had to go to GF certified oats and since I know oats don't have gluten to begin with it makes me crazy that my body's gotten this sensitive. It's like the chemistry police :D.

    Liked this recipe but l think l should of let it warm up more and the cocoa tastes stronge could of been the one l got. But overall it was yummy trying different coca powder next time.

      Of course oat flour is just ground oats. You will have to play around with the measurements and use less oat flour per cup than rolled oats because it’s more dense than oat flakes.

      Just nake your own. 4 whole vanilla beans, sliced open, per 1C of brandy or vodka (I prefer vodka) let it sit as though you are making a tincture makindmg sure to gently shake it once a day. In one month its done.... the longer it goes, the better.
      Vanilla extract. No dairy, no added sugar.

    I usually make a chocolate pudding with bananas, dates, and a can of pumpkin puree, but the consistency of yours is probably more like generic pudding. Will give it a try. Thank you!

    I’m wondering if I could just use Oatley from the store instead of all the draining and straining? And, if so, how much? I was trying to see how much you ended up with in the video.

      I have only used my home made oat milk for this recipe. I think it works so well because of all of the natural starch in the oats. It is almost 4 cups in the end. =)
