- OLD SCHOOL CAFETERIA STYLE TEXAS VANILLA SHEET CAKE
This cake really will bring you back to your childhood
We all had this in our cafeteria and schools
Its a very moist and fluffy cake and also easy to make
RECIPE FOR CAKE:
2 1/4 cups all purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
3/4 cup unsalted butter, room temperature
1/4 cup vegetable oil
1 1/2 cups sugar
4 large eggs
1 tbsp vanilla extract
1 cup milk
Vanilla Buttercream Frosting:
1 cup unsalted butter
1/2 cup shortening*
6 cups powdered sugar
1/8 tsp salt
2 tsp vanilla extract
1 tbsp corn syrup (or honey)
4-6 tbsp water or milk
Pink, Peach and Ivory gel icing color
Sprinkles
Instructions:
1. Prepare a 12×18 inch sheet pan/jelly roll pan with non-stick baking spray. Preheat oven to 350°F
2. Combine the flour, baking powder and salt in a medium sized bowl and set aside.
3. Add the butter, sugar, and oil to and large mixer bowl and beat together until light in color and fluffy, about 3-4 minutes. Do not skimp on the creaming time.
4. Add the eggs two at a time, mixing until mostly combined after each addition. Scrape down the sides of the bowl as needed to be sure all ingredients are well incorporated.
5. Add half of the dry ingredients to the batter and mix until mostly combined.
6. Slowly add the milk and vanilla extract and mix until well combined.
7. Add the remaining dry ingredients and mix until well combined and smooth. Scrape down the sides of the bowl as needed to be sure all ingredients are well incorporated. Do not over mix the batter.
8. Spread the batter evenly into the prepared pan and bake for 12-15 minutes, or until a toothpick comes out clean.
9. Remove the cake from the oven and allow to cool.
10. To make the frosting, beat the butter and shortening together until smooth.
11. Slowly add half of the powdered sugar and the salt and mix until smooth.
12. Add the vanilla extract, corn syrup and 4 tablespoons of water or milk and mix until smooth.
13. Slowly add the remaining powdered sugar and mix until smooth. Add additional water or milk, as needed to get the right consistency of frosting.
14. Color the frosting to your desired shade. I used a little bit of pink, peach and ivory gel icing colors.
15. Spread the frosting evenly onto the cooled cake and then top with sprinkles. Cover the cake well and store at room temperature. Cake is best when eaten within 3-4 days.

Chef Jeffrey, I salute you! I've been baking for over 70 years, and made an awful lot of cakes, and this that you have shown us is what a cake should look like. Beautiful crumb, and no skimpy frosting. I love all kinds of cakes, but you can't do better than a good vanilla cake with vanilla frosting. I don't know who complains about too much frosting, but you go right ahead and slap it on there, it looks good and it tastes good.

😋You bring back the best memories for me,Chef J❤👨🏽🍳. We had real live cooks at our school. Their cakes were my fav. In fact,when my mom transitioned 🙏🏽🕊in ‘09 one of our retired cafeteria ladies baked a delicious poundcake just for us. Miss Gertrude made it clear that the cake was specifically for us & “not for dem hungry folks at the repast”😂.
Brings back memories, I remember when they also did the strawberry shortcake the same way. Really miss those days.

Our school had alot of yellow sheet cake with chocolate icing....yum! I'll be sure to try this....I think the kids in our church's Youth Group would enjoy it. Thank you for sharing! I was blessed with a mother-in-law who was a stay at home farm wife until all her children were in school, then she became a "lunchroom lady". Every summer she helped cook for 70-100 campers at a Bible Camp. That dear lady could cook!

Always loved a school house sheet cake. They were always the best cakes. They don’t make them any more in schools though and they really should. This generation don’t know about good school food. Government messed that up. Great video.

This Texas sheet cake goes way way back. Old school days!! In the 60s we had to choose off a menu what days we wanted hot meals. I always made sure I chose the days that had the Texas sheet cake!!! Lol. My mama made my lunches the rest of the days. She caught on after awhile why I only wanted hot lunch on those days. I wanted the Texas sheet cakes!!!! Lol. I havnt had one in years!!! Dont think nothing of a big mess...im a baker also...first time i used one of the big floor mixers...the manager went back into.the office...left me by myself...well you guest it ...i had dough every where...i didnt even know how to turn it off...he comes flying out the door and says...what the h are you doing...i was so upset.
