Instructions
00:00 Introduction
00:38 Preheat oven to 350F (175C) and thoroughly grease and flour a 10x15 jelly roll pan (or spray with baking spray).
00:43 Combine butter, water, and cocoa powder in a medium-sized saucepan over low heat and cook, stirring occasionally, until the butter is melted. Increase heat to medium and bring to a boil. Remove from heat and allow mixture to cool for 15-20 minutes.
01:42 While butter/cocoa mixture is cooling, whisk together flour, sugar, baking soda, salt and instant coffee in a large bowl.
02:39 In another bowl, whisk together sour cream and eggs and vanilla. Stir this into your dry ingredients until combined.
04:15 Once the chocolate mixture has cooled for at least 15 minutes, stir into your flour/sour cream mixture until mixture is smooth and completely combined.
05:23 Spread batter into prepared jelly roll pan and bake on 350F (175C) for 18-22 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
06:10 Once cake has finished baking (or several minutes before), begin preparing frosting.
FROSTING
06:24 Combine milk and butter in a medium-sized saucepan and cook over medium/low heat until butter is melted. Once butter has melted, remove from heat and whisk in cocoa powder until combined. Add powdered sugar and vanilla extract and whisk until smooth.
08:00 Pour over cake while cake is still warm. If using pecans, sprinkle over frosting now.
08:55 Allow frosting to harden (about one hour) and then slice and serve!

I made this it was by far the easiest recipe to follow, and it was delicious. My grandma made Texas Sheet Cake for us kids and it was an amazing memory. Haven’t had this cake in 20 years it brought back the same feeling. Thank you thank you
You are welcome! I’m glad you enjoyed it. 😊
When the instant coffee was added, you had me! It really brings out the chocolate flavor in any recipe. I am going to bake this for a party and I know everyone will enjoy it. Thank you!
It really does add an extra level of flavor! I hope everyone loves it! :)
It really needs to be instant. Someone asked if they could add regular coffee grounds. That’s would be a disaster as they wouldn’t dissolve. I could go for instant but I like the original cinnamon recipe. It’s a bit like Mexican chocolate. The icing is a fudgy texture when it gets really cool. It’s amazing. It’s my favorite cake besides hummingbird cake.
My mother-in-law taught me this recipe in the 80’s. I made it all those years my kids were little and I started adding a “splash” of coffee. My sweet mother-in-law passed away recently. Going to make this today. 😢❤️
I'm so sorry to hear that! :( I hope this recipe helps with your grieving.
You're such an underrated RUclips chef!!
Thank you so much! 😊😊
I know that this is one of your older videos, but I just had to comment on it. I have a recipe for Texas Sheet cake that is quite good, but decided to try yours. I am telling you that yours is the BEST Texas Sheet cake that I have had. Thank you for such amazing, tasty recipes. You, girl, know how to bake!!!
Thank you so much! I’m so glad you enjoyed it so much. 😊😊😊
My 87 year old mother in law makes this cake, it is so good! Especially with a big glass of cold milk! Luckily she gave me her recipe years ago and the special pan she always used. ❤️
Yummm!
TX Sheet Cake is my favorite cake of all time. Sometimes, if I have a craving and don't want to make a whole cake, I make the icing and eat it. Not all of it but spoons full over time. LOVE!!!
The icing is the best part for sure!! :)
Just made this today, and it's great! I have an old recipe, but can't find it anywhere..so came accross yours...it's a keeper!!
I'm so glad you enjoyed it! :)
Your videos are perfect: concise, to the point, excellent instructions, engaging personality, well edited with no unnecessary frills, and you always try a bite of your own desserts! Plus you explain why for certain things, such as your preference for real buttermilk, the importance of a hand mixer, etc. Thank you!
Thank you so much for your kind words! I appreciate this 🥰

You are so welcome!
I’m a new subscriber and I’m 71. I was so happy to see your take on the Texas Sheet Cake! I made this for all 4 of my children on their birthdays growing up. My youngest ( I have 4 in their 30’s and 40’s!), turns 37 tomorrow and I made it right alone side of your video! I made a mistake by adding the cocoa to the butter and milk and melting it. It coagulated and I had to start over. I thought I remembered doing that those many years ago!😓
Thank you so much for introducing us to your rendition of Texas sheet cake. It has made me the most popular person at the picnics!!
You are so welcome! I'm so happy to hear that it's been a hit!
Gonna add this on my list!
I hope you love it! 😊
Yummy!!! Thank you!
I will make this Cake. Looks Yummy!

Your amazing chef
Watching you make the chocolate sauce instantly reminded me of the "chocolate gravy" and biscuits my dad used to make us every Saturday morning for breakfast. We called it chocolate pizza. Your recipes are so delicious and your videos are a pleasure to watch!
Thank you so much! I'm glad you've enjoyed the videos. :)
Fabulous!!!
Baking it right now hope it turns out great

Sounds like it was a hit! Enjoy ❤️
Im making this on Friday!!!
I hope you love it! ☺️
@@SugarSpunRun Sam I made them and it was delicious. Your recipes never disappoint😊
Late watching your video, but your recipe was delicious!! I did add some cinnamon in both the cake and icing. (Not much, but just for a subtle hint.)
For anyone wanting to try, I swapped the 1 cup of water, for 1 cup of Agave Syrup and skipped all the sugars in the cake batter. (Agave has a lower glycemic index.) Since it's sweeter than sugar, 1 cup was plenty. It turned out excellent!
I'm so glad you enjoyed it! Thank you for your feedback! :)
That icing looks perfect and great! I have an easy and delish dessert channel, and I have ventured into trying this style icing, but it never turns out. Your directions makes it seem so easy, I’ve gotta try it. I love how it gets that hard sheen top! What’s the difference in a Sheet cake recipe vs a normal chocolate cake recipe?
You could also add Mini chocolate chips to the batter to bump up the chocolate flavor!!😍🙌🙌👍👍
There’s no such thing as too much chocolate
Add 1/2 tsp of cinnamon to the batter. It totally kicks it up.
I'll have to try it some time! :)
That’s the original recipe…with cinnamon . It’s the ingredient that sets it apart from other chocolate cakes.
I sometimes add a little almond extract with the vanilla!
I have a recipe that I've been using for years but I came on here because I never know how long to let the chocolate cool so I appreciate you telling us. I wondered how come you didn't use your kitchen aid mixer I see in the background? I always use mine for it. I am just looking to up my game ! Thank you for your video. My recipe didn't call for the coffee granules or vanilla. So I added the coffee this time!
I add cinnamon, instead of coffee to my batter. I also use granulated sugar for the frosting, cooking it on the stove until the sugar is all melted and silky. I also punch a few holes in the cake so the icing will soak into the cake. So yummy.
I could too....eat the whole pan, that is. TY for this recipe...had it years ago at pot luck, but Texas lady would not share her family recipe w/us😊👍UR A ☆
Thank you so much! ☺️
This looks delicious! How do you store the left overs? (If any 🤣)
Making this tonight for my mother in laws birthday 🎉
I hope she loves it! :)
This was my Moms favorite cake! She told everyone to not touch the corners - that’s where the chocolate frosting gathers 🤭
She’s been gone a little over 16 years, I still make the cake…..her birthday is in April, I’m going to try this rect
I love that! 🤣 I hope my recipe brings back some sweet memories of your mom for you ❤️
Mom made these cakes all the time when I was a little boy, she also made what she call a turtle cake wish I had that recipe too....
This one is sooo good! I do have a turtle cake on my to do list. 😊😊
My family loves all your recipes they're amazingly toothsome but I'm in sad mood cuz yesterday I lost my small pet dog she was very special and part of the family. I do apologise for sharing it with you ma'am. God bless medical student Malaysia keep rocking ma'am.😋👍🙏
😔😔 I’m so sorry to hear that! Dogs are a special part of a family. 😔😔
@@SugarSpunRun 🙏
I love the way you give measurements and directions.
So I subbed.
A lot of people leave the measurements off or are hard to follow. Thank you.
Thank you! I hope you enjoy the channel. 😊
Sounds yummy, do you have a recipe for a strawberry cake without using a boxed cake mix?
I sure do! Here it is: ruclips.net/video/lMLbhn6nAB8/видео.html
Also add 1/2 tspn of cinnamon to icing
Yes that’s the classic way of making it. It’s how I learned and all of my family. I think I would leave out the coffee.
Hello from france. Can you tell me if you use 250gr or 500gr of butter i cant see it. And for how many person is the cake, thank you very much
226 in the cake and 113 for the topping. 😊
Now what if I do not have enough confectioners sugar? Could I add regular sugar with it for icing, or should I just reduce the entire recipe? I also do not have my baking pan. I do have two layer pants though can I use those?
You can make my chocolate ganache for a topping ruclips.net/video/MPlAzPMJ4fY/видео.html I’m not sure what kind of pans you are referencing but you will be able to bake it in a different pan but the baking time will be different
Regular sugar will not work. It would be too grainy and not smooth and fudge-like. Layers don’t work either. This cake really needs to be made in the classic way or it isn’t even a Texas sheet cake cake anymore. As a Texan who grew up with this cake we pretty much have it perfected. I hate seeing it ruined. You can purchase the right pan they aren’t that expensive. Also…. The sugar is very inexpensive.
"Someone ate my entire Texas Sheet Cake!" 😉
If you don't have natural cocoa powder, can you use Dutch processed cocoa powder?
I honestly haven’t tried it, but if it’s all I had on hand I’d certainly try it. 😊
I want to makes this for my roommate for his birthday in a few days. He lost his mom in December and he was saying yesterday how she used to make it for him. I can not get my hands on a 10x15 pan in time. Can I use a 9x13 and just watch the baking time?
Absolutely. It will take a little bit longer. 😊
Sugar Spun Run thanks!
Hi want to know that instead of sour cream. Can I use yoghurt? Please reply. Thanks
Greek yogurt should work just fine. 😊
@@SugarSpunRun thank you so much. 😍😍
I like cake. 🐢
Especially when it is sooo chocolatey!
I think I will try this but I'm going to brown the butter first
I hope you love it! :)
I don't have a jelly roll pan. Can I use a 9 x 13" pan?
As long as it will hold all of the batter that will work fine. :)
@@SugarSpunRun Thanks, I think it will. I have two 9 x 13" pans.
Can you suggest a place for me to purchase the clear ingredient cups you used in the video?
I got them all off of amazon. The bigger mixing bowls are made by Pyrex. The ones that you see holding cocoa powder in the beginning are pyrex 6 oz custard cups and the really small ones I believe are called pinch prep bowls, I got her who makes those. If you can’t find any of them I’ll check out my order history and send you a link if need be. Good luck! 😊😊
@@SugarSpunRun Great! Thank you! This is very helpful!
Can I use a 9 x 13 sheet cake pan?
I haven't tried it but as long as all of the batter fits in the pan I think it should turn out.
Is there a reason behind not mixing the liquids together first?
You don't want to cook your eggs and sour cream in with your chocolate mixture. It would be very difficult to combine them with the flour mixture. :)
A question: How do you take out the cake if you want to serve it outside the baking sheet. Do you cut it in pieces first?
You won't be able to flip this out of the pan. The only way to get it out is to cut it into pieces. :)
@@SugarSpunRun thank you !
Dumb question but I have a 18x12 jelly roll pan do I need to add more ingredients
You'll probably need to increase the recipe by about 25%. :)
@@SugarSpunRun okay thank you
Can you use regular coffee instead of instant?
Sure thing! I'm just not a big coffee person so I don't ever have it on hand. 😊
NO! Regular coffee would not dissolve but remain as grounds. People would feel the crunchy grinds. It must be instant to make it into liquid. That would be awful!
If I put less powdered sugar to frosting will it still work out?
It’ll probably be pretty runny
@@SugarSpunRun so put less milk butter I will try it out, its good but Diabetes runs in my family. Tfs
If you like liquid. If you worry about diabetes I wouldn’t recommend eating cake at all .
I know it wouldn't be right nor healthy, but I would/could eat that entire cake with a gallon of milk😋😂😉😝👍🙌🙌💃!!!!!!!
😂😂😂 I won’t judge!
@@SugarSpunRun 😉😂!
Mom always added a 1/4 tsp of cinnamon to the cake.
How come no one adds baking powder to help it to rise and be fluffier?
That's just not how a traditional Texas sheet cake is made. It's not supposed to rise and be fluffier. :)
DO sift that powder sugar for the icing or it looks like pimples in the icing. Ask me how I know this!!! Icing should be poured onto cake right out of the oven.
Texas sheet cake has cinnamon in it. :)
Not all recipes do! You can always add it though 😊
This is my family’s recipe they made it
I love this cake! So much chocolate!
We love cake and we usually make it for birthdays.
Yes me to
Did
My cousin didn't put coffee in hers but she put cinnamon in it
That sounds good too!
You didn’t put the chopped pecan into the frosting
You are correct!
It’s not really a TEXAS Sheet cake when you make all of those changes 🙃
It's my version of a Texas sheet cake 🙂
Sorry I made this and as the cake goes I’d rate it a 2. Frosting a 1 I’m a bit older and baking most of my life. I thought I was gonna taste something spectacular but not. Even the frosting was a let down.
I should have just made the chocolate frosting I’ve been making for years. Maybe one day I’ll share it. This frosting taste like a chocolate candy bar oh well I’ll stick to what taste great.
Woah this is probably the harshest comment this cake has received. People love this cake. Hopefully you'll try some other recipes. :)
Uhm yeah…people me it’s the best chocolate cake they’ve ever had. Multiple family reunions and pot luck dinners can’t be wrong. There’s never a crumb left, The frosting is a fudge frosting…not buttercream. It’s a fantastic cake. I’ve never seen anyone that didn’t love it. Have you thought about what you did wrong? This recipe is very old tried and true. I’m always suspicious when something this old and reliable gets a bad review.
It's NOT a TEXAS SHEET CAKE without buttermilk and cinnamon.........no sour cream. It looks dry.
It’s funny how particular people get about these things but it is definitely a texas sheet cake and it’s not at all dry 😁
Cinnamon in chocolate is gross. Glad she didn't put it in. That would ruin the whole cake.
I can watch you bake and cook all day wonderful instructor keep up the good cooking and baking
Thanks so much 😊
