How to Make Texas Sheet Cake for Two (Small Size Chocolate Sheet Cake)

- Small Batch Texas Sheet Cake is just the perfect amount for 2-4 people.

Cake Ingredients:
1/2 cup all purpose flour
1/2 cup granulated sugar
1/4 tsp salt1/4 cup butter
1 heaping Tbsp cocoa powder
1 egg yolk
1 1/2 Tbsp buttermilk
1/4 cup hot water out of the tap
1/4 tsp baking soda
1/4 tsp vanilla
Frosting Ingredients:
2 Tbsp butter
1 1/2 Tbsp milk I use whipping cream but can also use buttermilk
1 Tbsp cocoa powder
1 cup powdered sugar
1/4 tsp vanilla
Cake Directions:
Mix together flour, sugar and salt in a small mixing bowl.
In a small sauce pan combine butter, cocoa and water. Stir until butter melts and mixture comes to a boil.
Pour mixture over dry ingredients and stir to combine.
Add in egg yolk, buttermilk, baking soda and vanilla. Stir to combine.
Pour mixture into a greased 9 x 7 inch baking pan.
Bake at 350 degrees for 15 minutes or until toothpick comes out clean.
Frosting Directions:
As soon as cake comes out of oven mix up frosting.
In a small sauce pan combine butter ,milk, cocoa powder, and powdered sugar.
Stir until butter melts and ingredients are combined. Frosting will be thin. Do not allow it to boil.
Add in vanilla.
Pour hot frosting over hot cake out of the oven.
Spread to cover cake.

Hi Leigh Anne - Hubby and I went on a little picnic yesterday and so the night before I made this delicious Texas Sheet Cake for Two as our dessert! We also had fried chicken, veggie sticks and potato salad. He drank beer; I had water. WOW is this cake delicious - the frosting was wonderful. I cut it in six pieces and took four pieces on our picnic. It transported well wrapped in foil. We ate all four pieces and was glad there were two pieces waiting for us when we got back home! Thanks again for a really great recipe for two.

I love small batch cooking! I can't handle family sized meals when there is just the two of us and don't like leftovers in most meals (except for homemade vegetable soup and chili!). I don't like to waste food but this recipe, I'm going to try it! Thanks for downsizing meal portions to two or three people!
That is exactly why I started this you tube channel - got tired of eating too many leftovers!!
I use coffee instead of water it brings out the chocolate flavor.

I found you this morning (5-1-2023) I am very familiar with this cake! I have been making it for 50 years! BUT!! It was not introduced to me as that!
It was The Jenny May Cake!
I am not sure who Jenny May was! But I received it hand written by an older friend as The Jenny May Cake! Over time I guess no one knew Jenny May! So the name got changed to what it is now! It is absolutely delicious! Even without vanilla! It is good without frosting too!
I have never heard it called that - I wonder who Jenny May is too!!

Thanks for the great recipe! I used an 8 X 8 inch pan and it worked fine. (Your pan is 9 X 7, which in area is 63 sq. inches, and an 8 X 8 inch pan is 64 sq. inches - so they are very similar in size.)

I wonder if an 8” round would work?
Excuse my math geek out: Area of a circle is pi x r squared.
In this case, r=4, so:
3.1416 x 4 x 4 = 50.2656
So your round cake would be 78 % the surface area of the rectangular pan. (About 3/4). So it would be smaller and taller.

A 9 inch round pan is 63.5 square inches and would work well too. This recipe looks delicious 😊

I made this tonight because I was in a hurry!! I even forgot the butter (I put it in the microwave to melt & forgot about it)!!!😱… it was Still Delicious!! The icing Truly “Makes it Wonderful!!” 🙌🙌💓💓🙏🙏🥰😋😋🤗

We always called this "Texas Funeral Cake" because when someone dies, you can bake this in half an hour and take it to the family. I love the small batch recipe!

I was taught to omit vanilla when using chocolate or cocoa powder.
To enhance the flavour of chocolate add coffee dissolved in a little warm water.
Vanilla is to be used to flavour anything other than chocolate.
Never heard that before about vanilla and chocolate. I h ave heard about adding coffee to enhance the flavor. I'm not a coffee drinker so never have coffee on hand to try it.
Both coffee and vanilla can bring out flavors in the coco, it’s common for these ingredients to be used together. Like a black and white mocha or coffee ice cream.

Hi Leigh Anne, well I'm just getting to this sheet cake today (after a year goes by) but I've kept your recipe. The small batch recipe I'd like to see is a Roll Cake. I have tried and failed so many times to scale a full roll cake recipe down to 2-4 servings so I'm afraid to try again. So, any recipe or tips on small batch roll cakes would be great! I’ve seen it done both ways. You could easily add in some cinnamon To this recipe.
Chopped Pecans in the icing, also.
Yes that is the way my aunt Letha made it cinnamon in the batter and Pecans in the frosting. 🎉

I'm so glad I found your channel, it's so hard to find small portion recipes for baking. I'm a widow and when I feel for something sweet and delish, I usually buy a slice of cake from the store, which gets expensive and I used to love to bake. Any and all small portion recipes are appreciated. I haven't checked out your videos (yet) but do you do small portion cooking recipes as well? You might want to set up a channel specific to that so that people can search and easily find a channel set up specifically for those of us who aren't cooking or baking for families or (armies).

I've made this three times in the last month. It's a great recipe. I don't have buttermilk in the house so I use half and half. I also add one teaspoon of ground cinnamon to the batter. We're empty nesters so this is a perfect size.

My recipe calls for buttermilk, not cream. Make it every year for Christmas for my church. (The big size cake)😊 that frosting has caused more pants to shrink....

You can do either. It will last a day or so longer if you keep it refrigerated

My mother still has the cutout from when the recipe appeared in the local newspaper back in the 1960's. We've been making it ever since. It always had chopped walnuts (or pecans) in the frosting. I think all 9 of us "kids" would ask for it on our birthdays haha.
I love that she still has the original recipe! The recipe is an oldie but goodie!!

When the cake is removed from the oven, sprinkle mini marshmallows or spread marshmallow crème on top of the cake before icing the cake. Also, add chopped pecans to the frosting. This is called a Mississippi Mud Cake.

I was given a recipe over 45 years. I’ve made it plenty of times. I was in my first cookbook along with other recipes I had been collecting. I can’t find it and I have been looking online for any recipe that closely resembles it and your is the only that has both the cake and the frosting. The cake was always frosted warm with the newly cooked frosting, so delicious. I am so glad I finally found the recipe. Thank you for sharing and bring back an old recipe we use to have in our home so long ago. Have a wonderful day!

Thanks Leigh Ann for a great and simple recipe. My family of three often cannot finish most desert recipes so I half the recipes but even then, we cannot finish. This one was delicious and we consumed 70% of it. 3 more slices saved for tomorrow. I didn’t have buttermilk but used regular milk mixed with creme fraiche. Also added a handful of chocolate chips into the frosting to make it more milky. Love your channel!

I got the recipe for this cake from a coworker many years ago (I’m guessing 35-40 years) but it was for the full sized cake. In the years that followed as I moved to different jobs my coworkers loved it when I brought this in for all to share. Now that I’m retired and widowed I’m thrilled to see that you broke the recipe down to a small batch. I can’t wait to try it for the first time in probably 10 years. Thank you so much.

Depends on how hungry I am! You can eat it warm and gooey or you can let it set up at room temperature or put it in the fridge to hurry it along. Just depends on how you like your cake. Enjoy!

Why heat an entire stove to make a small cake when you could freeze what you don't consume.
Many people just don't have freezer space for things like that so this recipe is perfect.
This looks like the cake I had in school, the best cake I’ve ever had but the only difference is the cake was white with chocolate icing ,so can I make this recipe without adding the coco powder in the cake batter and if so do I still add the hot water?

I have a similarly sized Pyrex baking dish with a fitted lid. Perfect for small batch stuff, and it fits in my toaster oven.

I often make the full recipe and bake it in two disposable tin foil pans 13"X9" I frost one pan and freeze the second pan and frosting separately. They freeze beautifully, then heat the frosting a little and spread it on the defrosted cake.
