I personally don't care for the taste of ricotta and Cottage cheese is more creamy so it might be a texture thing with me..I can't wait to have this small version. It's time for lasagna again!
i am so glad to find your channel. i have cooked for a large family for 50 years. now it's just hubby & me and i have found it's hard to change. i am subscribing because i like the simplicity of your meals, the fact that you take the time to write the whole recipe & ingredients in the description and it's not rushed or too slow.. it is a big help for people who aren't interested in going to someones blog for a recipe. so thank you for this and for saving me the waste of food i was using. can't wait to try all your recipes.
I made this tonight, it was DELICIOUS! Thank you so much! I'm trying to get my health in line so lasagna every now and then is fine, but having 12+ pieces of it is not the best for me. This is perfect to satisfy my craving and I won't have an entire pan of pasta haunting me for the next week.
I'm really enjoying all of your Small Batch Cooking recipes since my Hubby & I are now empty nesters....well, except for the brownies! My husband said they were delicious and he wished it had made more!! :) Keep 'em coming!!
Gosh! That looks so good. I know it was delicious! I'm ordering a 9x5 Pyrex pan and making Leigh Annes recipe, soon! So glad I found someone who shares recipes for 1 to 2 people. I know I will love this! Thumbs up. Beth (UPDATE 4/20/24. Tried this recipe, went exactly by the directions (we used 4 layers of lasagna noodles), and it turned out incredible)!!
You don't have to parboil the regular pasta, just add more water to compensate for the cooking process. Adam Ragusea has a video on this and I've tried it too. Works great, saves time, and makes clean up a little easier. Definitely check it out since the regular noodles are cheaper. I've been making freezer meals out of the "extras" that a regular recipe would make. Then I can have an easy night with a great meal still. Handy during canning season.
I made it today. I used six layers of Barilla oven ready noodles and had half the meat sauce leftover. The other ingredients were the right amount. Great recipe! Thanks!
I made this the night before last and it was delish. 3 meals for me. I had everything I needed except ricotta. My local grocery doesn't carry ricotta but I used cottage cheese, very well drained. Thanks for all the wonderful recipes. I live alone and these are very helpful.
That's a perfect size pan for making it. I agree about leftovers. Some amounts of leftovers are fine but not enough leftovers for re-feeding an Army Unit. I saved this video to my Private Playlist for referencing again and again. I'm sure I'll be making this recipe often. Thanks.
Oh my God I was thinking lasagna not too long ago. I’m definitely gonna make this for me and my husband. Thank you so much. I always make too much. That’s why I stop making it now that I saw for two I have the pan. I’m gonna make it thanks sweetie.❤😊🎉
Mh slow cooker cookbook is sold on Amazon but the only small batch cookbook I have is my Thanksgiving for Two ebook which is linked in the description above.
Leigh Ann, Thank you so much for all your small batch recipes. I don't want to stop cooking - but it's just me now. As soon as I figure out where to put it in my very small kitchen, I'm getting a toaster over. Are there things to look for besides size when buy one? I've never owned a toaster over.
Had this on Sunday and it turned out really well. Your time and temp is different than what comes on the box, but IDK i guess maybe they are thinking a full pan and we are thinking a loaf pan. But I did it your way and like I said it turned out well. Thumbs up.
A couple of suggestions. U need to make a small batch of bolognese that takes 3 hours. Also u need a small batch of bechemel, ricotta is not in lasagna. . The no cook noodles still need a 3 minute blanch. Try to use provolone. Use Mutti tomatoes if u can find them.
Do you happen to have any advice on how the instructions would change if i wanted to assemble the night before, store it in the fridge, and then bake the next day? Or, could this be assembled and frozen to be baked later?
For those that don't care for ricotta cheese, I use cottage cheese in place of ricotta. Works great!
Great idea!
Or you can do it the Italian way and use bechamel
It's great with cottage cheese!
I always use cottage cheese.. it’s great!

I don't have a toaster oven, I'd just make sure it fits on your counter and that it gets hot enough to bake in.
Looks delish !!!!
It's so yummy!

You actually don't even have to boil regular noodles, if you have enough sauce. I make sure I have it under noodles and on top. Works perfectly.
Good to know!
Appreciate
Enjoy!
Thank you for all the wonderful recipes
Glad you like them!

bake time may just be a bit longer if you bake it straight out of the fridge.
This looks great, but I have one question. Is the Sodium: 1625mg for one serving or for the whole lasagna? Thanks!
whole lasagna
I would have to use more sugar, because I can have a lot of tomatoes 🍅 because I break out in hives if I have too much
Hope you enjoy the recipe!
How much time should I add if baking from frozen?
Probably 5-10 minutes
Thanks for the idea, smaller batches for the win. I have no willpower to hold onto a large pan of lasagna lol
Hope you'll enjoy all the recipes! Thanks for following along.
Perfect recipe. I make lasagna, and it's too much. We are empty nesters.
So glad you love the recipe too!!
Enjoy!
Yezzzz 😋 .
