Meatless Mala Stir Fry Vegetables

  • The intense spiciness of mala dishes, be it mala hotpot or mala stir fry, can only be described as "torturously" delicious. If you have low tolerance of chilli heat like me, the best option would be to cook the mala dish yourself and adjust the spice level to your preference. There are many brands of mala spice packs available out there and the one that I have been using is by Lee Kum Kee. A box contains two packets of mala paste, one pack of dry spices and a smaller pack of additional chilli. In this recipe, I have used only one packet of mala paste, half portion of dry spices and omit the additional chilli altogether. To keep it vegetarian, I've excluded meat and added Japanese firm grilled tofu for protein. A side note, Japanese and Korean tofu are best for stir fry and braised dishes as they seem to be able to absorb the gravy flavours well.
