      My biggest concern for this version is the lack of acid (since the acid "cooks" the meat by denaturing proteins), but this otherwise looks delicious!

    Hi! Professional chef here that often makes tartare.
    Please use FROZEN beef tenderloin when you make this and make sure you SHAVE OFF the exposed surfaces of the meat to discard. Never consume the shaved pieces raw as this is where most of the surface bacteria like to hang out and grow by the minute. (this is normal) Work fast as this should be eaten immediately after serving.
    Consumption is safe at 12-15°c. The frozen beef chunks would have warmed up enough by the time you finish fabricating the meat after seasoning. Do NOT use ground beef. I repeat, DO NOT attempt to use ground beef unless you want to get sick. Best part to use is filet mignon.
    You can still recycle the leftover chunks and shaved top, but please PLEASE cook them. It needs to undergo heat for it to be safe to eat.
    Enjoy! Tartare is a good experience for those that are adventurous when it comes to food. I personally like my marinade with more worcestershire and a hint of balsamic.

      @@Amacherasu fresh raw beef by itself is a bit metallic to me, though only a hint of it which I often get as an after taste. It's really more the texture that I can comment on than the taste (chewy, soft) . You know it's not fresh if it's a bit gummy and there's a noticeable sour smell and taste, apart from the graying color.

      @@Amacherasu normally when you eat tartare there are other components such as capers, diced onions, seasoning, garlic etc. (as shown in the video) which is why it really depends on what you add to it. The beef it self has a subtle almost bland (?) taste and if it is fresh you won’t really notice the meat flavor. The combination of the ingredients in the tartare are what creates the flavor profile

      @@dinconium2570 you mean tartare in general? I personally like the dish so I don't mind the extra prep. There is always a risk when consuming raw products but there are ways to reduce that risk if you know what you're doing. Food safety is important for both cooked and uncooked food, though!
      Eat what you want to eat. Good food is meant to be enjoyed no matter how it's prepared 😄

      Huh? But isn’t steak tartare a somewhat difficult and time consuming dish? Since the chef has to make sure the meat is sanitized, since raw meat gets contaminated easily

      @@nacitalatincirli793 especially with bacteria and food poisoning. They can have all sorts of bacteria from E. coli to salmonella.

    Y’know, I sometimes imagine learning this dish, getting isekai’d into Teyvat, befriending the Traveler, using the Traveler to get close to Tartaglia, and finally, befriending Tartaglia, all so I could be able to appear on the day of his birthday - which also happens to be on the day of my birth - and say, “Happy Birthday, Mr. Toy Merchant! Look what I got you: Steak Tartareglia!”

    I'm from Poland, this very common dish is maked bit different but still very similiar and yes, it is from raw beef and YUMMY!
    Key to make it safe is fresh high quality beef and high hygiene. Nope you can't use raw chicken or pork because these are very unsafe and need be cooked, so beef is only one!

    おいしそう!
    ただ食中毒の危険性があるので、一般の方が真似して作る場合はブロック肉を使用し周りだけ焼く→焼いた部分を取り除き中の生の部分を使用して作ると良いですね

      You should really try, but I'd recommend to try it in France or Switzerland. We have less intensive farming due to the population being smaller. So less risks of bacteria with raw meat. It's really good, and since the pieces are small, they are tender, unlike an entire raw steak

      It's essential to make this dish with meat from a cow, but if you're going for an alternative then use the horse meat!! Please do not use pork (ham or anything of the likes). I was taught that only red meats can be safely consumed raw (like a rare steak!).
      I really hope you try tartare though, it is quite lovely when prepared right 😊
      another commenter also suggested to sear the sides of a big cow steak briefly and then cut off the sear, and then use the raw meat inside - that way the risk is lowered a bit ❤ you could also use a sous vide at a low setting but I can't say if that'll be good,,

    I heard that chefs make the raw meat safe to eat by putting the meat in boiling salt water and into ice water for about 10 seconds each.

    I like Tartare but Korean version, Beef tartare. It's soooo delicious.
    You guys should try it, don't be afraid of raw meat if you choose the restaurant that is clean and up to standard

    To avoid the risk, simply cooking the beef with those seasonings is okay. You can also replace some of the seasonings into what is more suitable for cooked beef. It would be another dish but also delicious:)

    Good think you placed those warnings in the video. People should realize that just because something exists it doesn't mean that its safe to eat. A lot of old dishes are actually not safe for consumption and only exist because back in the days people didn't know better.

    it looks so good !! just some ways to improve it, I think the sauce on the plate is actually the same as the one in the meat (we don't eat it with mayonnaise in France), and it's really common to eat it with french fries instead of chips, you should try :D

      I mean salad is just raw veggies/fruits, Sashimi/sushi is raw fish and the amount of raw egg recipes around the world is staggering.

      In term, every meat can be eaten raw, if the animal provider grew in a secluded and hygienic place, and was fed healthily.
      But the risk of a DTA isn't zero, tho it is significantly lower than common cattle sold in every market.

      Also, eggs who are used raw in recipes are pasteurized to prevent salmonella.
      Definitely do NOT use any egg bought in market raw.

      It actually is and not only in that dish. In germany, some people eat some raw meat called "Mett". I mostly see it on bread with onions
