It's interesting our animal friends communicate so much to us but we continue to ask them what they think about that. SHE is clearly clearly showing us how it tickles her beak from inside out as she mimics the sensation vibrating her feet to her beak. She is really confused but it's obviously super fun and extremely alien a sensation for her big brain to enjoy. I love it. She is telling us so much in her actions.
it's difficult to say because that scratching is a normal grooming behaviour to clean their beaks

Possibly, but it's common for Toucans to do that with water, simply to clean their beak all the time. He even mentioned it on the side, otherwise I imagine he would have been more surprised by the behavior.
She likes the sparkling water but is confused because they don't know what the fizz is so she thinks her beak is itchy. Interesting though.
