I realized it's easier if you're installing a new sink but getting to the bolts that screw up flush with the triangle shaped bracket there's no room for a screwdriver to fit at a 90° angle to the bolt head, how do get past that point?

That garbage disposal has a knock out plug for the dish washer hose. That was not covered in the vid.
This is a basic video about installing a sink, not a disposal. There are several more steps required for a disposal that aren't included here.
