Hi Becky! I used to own a little online bakery for four years and here’s some tips and reasons for why your mom did the things the recipe told her to do: when beating sugar and butter together, most recipes don’t state for how long to do this for but generally for cookies and sponge cakes, you want to beat this mixture for 7-10 minutes. The longer you beat the butter and sugar, the lighter and more aerated the mixture becomes. (This is the opposite of what you should do when it's time to add dry ingredients in cookies -less mixing is best, just folding the dry ingredients in with your cookie mix-ins to avoid developing the gluten in your cookies.)
As for mixing the dry ingredients in 3 parts with the wet mixture in between, it’s mostly for equal incorporating, to avoid dry lumps of flour without needing to overmix the batter. The wet mixture needed to sit for at least 3 minutes to allow the acids in the lemon to curdle the milk, creating sort of a sour cream/buttermilk mixture.
All that aside, just wanted to let you know I’ve been an avid follower for the past 3 years! I am sooo excited for your new garden. Sometimes I watch your old videos just because I miss your old kitchen and old garden so much. Your last day in your previous garden made me cry! But still so so very excited to watch your new garden grow 😍🥰
Wow this is so helpful! Thank you so much for taking the time to write this out for me and other to learn from!
I agree! How nice to share these amazing tips with them !
Your mom needs a channel of just her stories 😂 I love hearing them. Her witty banter kills me " my island has never-ever space"
The best is when Becky is cooking with her mom I do live moms story's
Love
I AGREE 💯
Awe, thanks!
Yes yes yes
Hello Becky and Susan!
Growing horseradish in a pot is highly suggested. If you put it in the garden, it will grow fast, like bamboo, and take over everything.
I agree that we all learn from each other. That’s why I love your videos. You’re always teaching us, and sometimes we can teach you, too.
Oh, good ro know. Ty
Isn't that the truth
YES!!! Jess over at Roots and Refuge Farm just shared that on her channel. It was in a bed that they removed and it was coming up where the bed had been at. She's going to plant it at the edge of the forest. Such a great community here!!! Love you and your mom's adventures!!! Reminds me of my sweet mother!!! You girls rock!!!!💖
TOTALLY agree with this! It took me several years to completely get rid of horseradish in my raised bed. Any little bit of the root that is left behind will sprout another plant!
Thank you so much for the suggestion!!
Love your dad sitting down to read in the background! 🤣Makes it feel like we're really there. Everything looks great.
@@gillgallon9631There’s a whole contingency of trolls on this channel that spend their time and get their jollies by being wonderful clouds of pitch black. Must be a great life, huh?
@@easeintotranquility7545 Ha! Nice one. I think it’s you who must be paid by some other channel because you’re all so motivated and predictable. There are hundreds of thousands of us who just love Becky and appreciate all this wonderful FREE content.

You probably heard this a million times but seriously your mom needs a RUclips channel of her own. She’s an absolute delight to watch 🤗
Awe, thanks! I’d rather just make guest appearances on Becky’s channel, all the fun, none of the WORK!
Love ❤️
@@susanjones3177I love watching you cook. And how organized you are. I search for the videos particularly featuring you.
Love a Becky and Mom cook-a-thon!
Awe, thanks!
Yes, I love you and your mom!! More videos of you two together, please. You are so blessed to have the mom that everyone should be blessed with. God bless you both!!
Yes, memories are so precious. They work well together don’t they? ❤
Your mom should have her own channel! What a knowledgeable, organized, and inspiring lady!
Awe, thanks! I’d rather just make guest appearances on Becky’s channel, all the fun, none of the WORK!
Okay I really enjoy your show
Want more party videos of you & your mom…I’ll be there watching !!
My Mom and I used to cook together for the holidays. She now has advanced dementia and hasn’t been able to cook for the past 4 years.
Watching you two together makes me feel like I am with family again. Thank you for sharing with all of us. 💗

It’s almost comical how Becky’s mom is an organized and to the book cook, while Becky seasons and measures with what makes her heart happy.
Together though, that is an amazing pair!!
Amazing teamwork!! ❤❤❤❤
When it comes to asparagus you waste a lot if you go by the snapping method, what you do it’s just cut a small piece at the base of it and see where the tender part starts and use as a reference guide for the rest. I learned that from Dan from the test kitchen.
I absolutely LOVE that!!!!!!
The videos of Becky and her mom shopping or food prepping are my favorite!! Love her mom! 😊
Same!!! 🙌
I agree! Her mom is absolutly precious and just makes me smile. Love your channel Becky, you do a fantastic job!
Mine too but I also love to see her Dad❤😊
Mine too, I've lost my mother and watching their cooking and shopping days brings back such happy memories.
I love the dinner party prep cooking videos with her mom. Cherished memories! Thank you Becky for sharing your mom & her wisdom with us! Thank your mom for us too please?
I loved Becky’s face when her Mom started the Leg of Lamb story. She’s like oh boy, here she goes. Haha. I get the exact look from my daughter
🤣
Becky's facial expressions don't lie 😂
I made you’re no-knead-bread for the 4th time and… it’s AMAZING! I don’t know why I waited to make it. YOU and your videos have made me a confident cook and not scared to try to cook new things. ❤ i watch ALL of you’re videos, in fact i watch your videos and i cook to give me ideas to make! I love your videos! 😊
It seems so much more fun prepping the food WITH someone rather than doing it all alone! Your Mom is so nice and a fun person to cook with. Your Dad is such a nice man...considerate of all that you both do! HAPPY EASTER TO YOU ALL

Hi Girls, to make a light Victoria Sponge you also need to fold in the flour - don’t use the mixer! Hope you had a wonderful party 🎉
Yes, this was going to be my suggestion!
Fold the flour in with a metal spoon. Keeps all the air in.
Love seeing your mother and you cooking together.

I lost my mum when l was 8 of cancer and my dad died 18 months later of a angina attack miss both of them every day but l have my loving family for support
Dear heaven! It is not surprising that you turned out she well as a person, Becky, when we get to spend time with your mum (and on occasion, your dad). You are all such lovely people! The effort that you go into for family gatherings is amazing. I truly believe the planning rivals a war time military operation, no word of a lie. I appreciate the time your mum takes to arrange the schedule for the roasts and the baking and so on. Plus … it needs to be said, your mum is such a natural in front of the camera. The two of you carry no pretence while you are demonstrating the putting together of the recipes. There is no doubt that your Easter family meal will be a success. I hope your family recognizes the effort that the two of you have put into the organization of this family event! Happy Easter!
I really wish I had this type of relationship with my mom, but for now I'll just live vicariously through the two of you. Thanks for posting Becky, and thank you Becky's mom for joining in the video fun. ❤️ I hope your family has a lovely Easter/birthday celebration!
Happy Saturday! Hope everyone has an amazing Easter tomorrow! 🐰🐣
Another way to get more juice from your citrus is to microwave for 10 seconds, then roll firmly on the counter and THEN juice it!
I put all my tough asparagus ends in a big ziploc in the freezer. Once I have a full bag I can make asparagus soup because if you blend with a high powered blender (I have a Blendtec) it will take care of those tough ends.
Becky,
It makes me smile and feel happy to watch you and your mother working in the kitchen together. You know how a married couple can finish each other
sentences, well, you and your mother, in a kitchen sort of way, help each other create the yummiest dishes and meals. You both look like you are throughly enjoying your time together.
Thank you both for such an enjoyable visit.❤😊
It is really sweet to see your dad behind y’all reading his book. Also, I always park boil my potatoes before putting my au gratin potato casserole together.
Great idea, would certainly cook faster!
GREAT IDEA!
My mom always recommended parboiling the potatoes before making scalloped potatoes.
@@AcreHomestead where did your mom’s 8” cake pans come from?
My favorite berry cake is a berry chantilly. Next time you need a berry cake recipe it’s for sure a crowd pleaser!
Always love watching you and your mom in the kitchen! Happy Easter!
Happy Easter, everyone! 💐🐇🍬🐣🍀
Enjoyed watching you and your Mom cooking together, so delightful! I bet her kitchen smelled wonderful. Happy Easter and Easter Blessings to your whole family.
I really love the times when you two shop and/or cook together, as well as other homestead activities. Also your Dad, Renée, Josh or either family members are involved.
Hi Becky. So wonderful to see you and your Mom in the kitchen. I am the youngest out of 6 kids and my Mom just turned 98 and I just cherish those days when we cooked and baked together. Enjoy the times with your Mom! ❤
If you put a towel or dry washcloth under the cutting board it prevents it from moving around.
Loved watching you and your mom shop and cook.
LOVE the Mama and Becky videos! Tell sweet Mama to look for a helix lemon juicer, she will LOVE IT, easier on aging hands!😉 Also! Tell her if she holds the lemon in the opposite hand & turns her zester upside down and drags it across her lemon, she can see how much of the zest she's getting off her lemon (not pith) AND she catches all the zest on top of the zester, seeing how much she's actually getting. It was a total game changer for me on only getting zest. 😊👍
Becky: "I've never made a leg of lam before"
My 4 year old: "I'VE MADE A LEGO HAM BEFORE!"

🤣🤣too cute
I don’t care what you guys make, I just love the relationship that you have. You are so blessed to have that strong bond. Blessings that you had a great dinner. Hope you show us the rest of the prep and final product, especially the cake. Happy Easter to you and your family.🙏💕💕
Awe, thanks!
"Cupboards" are freestanding units of shelves, some with drawers at the bottom and they can be open fronted or enclosed with doors like an armoire. Cabinets are permanently installed against walls or into permanently attached work islands. It's a bigger difference than between a sharpening wand or a honing rod which is merely linguistic, more like the difference between an "ice box' and a refrigerator which are different things.
Use a wire whisk to stir the flour in the wire strainer. It will help the flour pass through super quick. I used to do this when I worked at a bakery.
Hi Becki. I recently discovered Chef Jean Pierre’s RUclips channel and found under his Vegetable episode, he demonstrates how to prepare/cut several vegetables. I was intrigued by how he cleaned/cut asparagus and broccoli. I’ve tried both and was surprised at how little waste I had! Peeling the bottom 3/4 of an asparagus stalk vs breaking the ends off saved so much from going into the compost and stalks of the broccoli were so tasty. Thought I’d share this recent discovery 😊.
if not eating the "tough" part/stem of either asparagus, broccoli or even cauliflower..save in a freezer bags and use for stick making day!
then compost the cooked stems etc
cut once use thrice !

I love when you spend time with your Mom Cooking. It's nice to see such genuine respect you have for one another. I wish with all my heart I still had mine to cook with. You are a very blessed woman! Thanks for sharing your family!
Cherish these moments with her mom! It’s so nice to see the both of you on the kitchen together. I wish my mom was still here with me. She was an amazing cook and I learned a lot from her.
Becky you and your Mom have such a great relationship and you treat each other with such respect I just love watching your family meal preps!!
Awe, thanks!
I learned a new trick for scalloped potatoes...put the in your instant pot with the chicken broth and cook the sliced potatoes for 5 minutes and then pour the cheese sauce over and then bake in the over until you have your desired brown-ness.
Thanks for the tip! I had a hard time getting the potatoes soft the last time I made them. I didn’t think they would ever get done
How fortunate you are to still have your Mother. She is a beautiful and vibrant woman so enjoy her and love her, like she deserves. Have a great Easter.
Ever since I started watching your channel I have wondered how someone so young was so knowledgeable and smart. This prep video shows where you get it. Your mom is amazing and so organized. Love her!!
For my potato bake I always sauté the onions first whatever the recipe says it takes away that raw onion taste. It’s the one recipe that makes me glad I have a mandolin! Happy Easter ❤❤
I made a cake from scratch this morning, I picked up a few tips! Thank you Susan🌸
You are very welcome!
How Fun 💕!!! I learned something new at 60!!! To coat the berries!!! Thank You!!! My Mom and I used to cook the holiday meals like this up until a few years ago but now She has advanced Alzheimer's so we can't. She's 85 and I moved in with Her so we find other fun things to do. God Bless Your Family 🙏 and Happy Easter 🐣❤. Western Upstate New York here
I've made the potatoes many times but I used a food processed for the slicing of the potatoes and onions. It saved alot of time and came out pretty much the same size.
Love how you and your mom work together. Like best friends. Enjoyable to watch informative also.
Yay! Becky and her mom prep cooking for Easter while I’m prep cooking for Easter!! 🎉🥰
With you scalloped potatoes/potatoes au gratin you can also intersperse your potatoes with some squash carrots sweet potatoes etc. It offers variety in texture and flavour in finished product.
I really love the idea of having the potatoes slices upright! I bet it makes serving easier too! I love when you and your mom cook together😊.
A mandolin is great for doing thinly sliced vegetables and so fast ,much easier than hand slicing.
My favorite thing was to cook with my mom grandma and listen to their stories from when they were younger and how things have changed since then oh how I miss them so much rip
I know all about the PNW ! lived here for years and always had to be ready to hide eggs in the house for my kids. thank you for all the great recipe's . Happy Easter !! 🐰🌷🐇🐣💕
I always butter my dish before putting in my potatoes. Just helps clean up and does add another layer of richness to the recipe.
I love scalloped potatoes. I make the traditional without cheese, just a nice bechamel sauce with a tiny bit of fresh nutmeg. That sauce is how my mom got us kids to eat broccoli and brussels sprouts.😄 Y'all are fun to watch! Happy Easter🐇🐣💐
I absolutely love it when you and your mom cook, shop and are just together! The two of you are “the dynamic duo” in cooking/gardening! You are years younger than me but I have learned so much! Keep up your videos, so enjoyable!!!
Becky I love watching you and your mom. You are great together. There is one point in this video when your mom looks at you and you see her concern for you. It just melted my heart. I hope you got lots of rest when you went home.
Your parents’ kitchen is so perfectly planned. The giant island makes me think cooking is even more fun.
I just said to my husband, I've worked in professional catering kitchens that were smaller than hers!
Becky i make dump pizza it is so good
Becky my dump pizza is Biscuits and you cut them in to small pieces and then you fry your hamburger and you put your hamburger over the Biscuits and. dump your pasta sauce over the hamburger and add your cheese and bake for 20 to 25 minute. Until the Biscuits are done i hope you try it some times and the viewers make it to
I own a bakery and I put the cakes back in the pan after they have cooled on the rack and I wrap the whole pan. The metal helps it stay colder in the fridge. I dont ever freeze my cakes. They have a tendancy to have air blow outs in the frosting as the temp comes back up.
My mom's bday is April 8th she is 84 years old!! We are celebrating on Easter on Sunday April 9th... she is awesome like your mom!! We are having ham and scallop potatoes but with cheese!! So YUMMY HAPPY EASTER!
I love watching you and your mom!
When citrus fruits are in season, I zest in two forms (microplane shreds and vegetable peeler strips) and keep in jars in the freezer. I also freeze juice in icecube trays and store in bags. Then I have zest for baked goods and desserts all year long (cakes, pancakes, baked oatmeal, muffins, mousses, cheesecakes, …) and for cocktails and other drinks (great for gin&tonic, sangrias, lemonades,…). I don’t have a freeze dryer, so maybe you could try to make citrus peal powder and let us know how it turns out! I’m guessing it’s a flavor bomb!
Love seeing your beautiful mom! She is so enjoyable to watch cook and talk about recipes. I love her calm and kind spirit. Love the videos when you have her in them!
Awe, thanks!
@@susanjones3177 you are a gem! Please keep showing up in your daughter's videos!

I love when you and your Mom prep for parties together. So many good ideas. So organized; I love it!!
Hi Becky, if you are truly considering growing horseradish, I suggest you either grow it by the woods or build it It’s own garden box! horseradish roots, grow very deep into the ground, and even a small piece can create a whole new plant. Guaranteed it’ll spread! wherever you plant it the first year is where it will live for all of time! Lol I am a northern gardener. horseradish is very prevalent here. I would assume even more so in a zone 7 climate. Be careful where you plant horseradish it’ll be there for your grandchildren!♥️ happy Easter 🐣
Y'all brought so much joy to this old woman's heart watching you both in the kitchen. I just loved it so much and I love your momma! And you're right, I learn so much from you and Susan and your followers! And I want to say a huge thank you to both of you for always sharing your recipes. The 5 layer Wedding cake y'all did last year for Easter, I made this year! Can't wait to try it tomorrow AND I'm going to decorate it just like your daddy did too. ❤

In New Orleans we have a Chantilly cake which is a white cake with mixed berries and a wonderfully light cream cheese, mascarpone cheese frosting. It is a favorite, especially around Easter
Becky, you and your mom have inspired me so much. From planning big meals, to freezer meals and meal preservation. I haven’t taped my recipes to my cabinet doors but I did create a cookbook in a 3 ring binder. All the pages are in page protectors and they are all handwritten. My kids will know if they are in that cookbook, they are ‘mom approved’!
Oh yeah, we’re cooking with Becky and Mom. Too fun. I have never eaten lamb. The menu looks so good. Love seeing you two together in the kitchen. 💜💜 BTW, anytime you throw away a plastic bag, tie it in some knots. This does help to keep animals from getting into them and suffocating or trapped in them. I have done this for yrs. Its a safety thing for the animals, domestic and wild ones. The potatoes 🥔 look yummy, I have got to try that recipe. 💜
As usual, you AND your mom is a really special treat. This meal had to be fabulous. I’m 63 and I’ve never done lamb. I’m so happy to see how you do it. Everything you made, caused the mouth jets to pop. I can’t smell since I had Covid but I can remember what so much of that meal smells like.
🙏✝️ Have a beautiful and blessed Easter Celebration 🙏✝️ He is alive ✝️🙏🙏♥️
Awe thanks!
Just a heads up, you can pre-prepare potatoes, just make sure to put them in a non reactive dish covered in water in the fridge - the potatoes actually get more crisp. I julienne potatoes for a side dish and sometime slice up too many or just can't finish them into julienne that day so I stick them in the fridge submersed and they haven't discoloured on me so far and I've been doing it for a long time.
Becky, we just love your Mom, she is wonderful cooking with you! As others have said she needs her own show too! She is a great teacher, so you must have learned how to be a great teacher from her!

Dear Becky...for all those potatoes you might want to consider a mandolin... It really is very helpful! Have fun
Becky, I can't believe you hand sliced all those potatoes. You have excellent knife skills but think about using a Cuisinart for slicing those spuds. Love the look of the au gratin dish with the potatoes alternating columns. Your mom is a hoot, love the dynamic duo in the kitchen.😍

Hi guys. Just a quick note on the two tools ... the second smaller item is called a 'steel'. You might see chefs and butchers pull one out and run their knife along it a few times. It doesn't sharpen the knife, it just gives it a quick clean up before using. It maintains the knife's sharpness for a little longer before it needs proper sharpening. Love all your recipes!!
