Hi Becky! I used to own a little online bakery for four years and here’s some tips and reasons for why your mom did the things the recipe told her to do: when beating sugar and butter together, most recipes don’t state for how long to do this for but generally for cookies and sponge cakes, you want to beat this mixture for 7-10 minutes. The longer you beat the butter and sugar, the lighter and more aerated the mixture becomes. (This is the opposite of what you should do when it's time to add dry ingredients in cookies -less mixing is best, just folding the dry ingredients in with your cookie mix-ins to avoid developing the gluten in your cookies.) As for mixing the dry ingredients in 3 parts with the wet mixture in between, it’s mostly for equal incorporating, to avoid dry lumps of flour without needing to overmix the batter. The wet mixture needed to sit for at least 3 minutes to allow the acids in the lemon to curdle the milk, creating sort of a sour cream/buttermilk mixture. We are from all over the world but it's like we are neighbours, friends and a creative team. I'm personally in New Zealand and while I love anything to do with feeding others but it's all self taught as my Mum didn't share my enthusiasm.

TOTALLY agree with this! It took me several years to completely get rid of horseradish in my raised bed. Any little bit of the root that is left behind will sprout another plant!

When it comes to asparagus you waste a lot if you go by the snapping method, what you do it’s just cut a small piece at the base of it and see where the tender part starts and use as a reference guide for the rest. I learned that from Dan from the test kitchen.

Dear heaven! It is not surprising that you turned out she well as a person, Becky, when we get to spend time with your mum (and on occasion, your dad). You are all such lovely people! The effort that you go into for family gatherings is amazing. I truly believe the planning rivals a war time military operation, no word of a lie. I appreciate the time your mum takes to arrange the schedule for the roasts and the baking and so on. Plus … it needs to be said, your mum is such a natural in front of the camera. I lost my mum when l was 8 of cancer and my dad died 18 months later of a angina attack miss both of them every day but l have my loving family for support

Another way to get more juice from your citrus is to microwave for 10 seconds, then roll firmly on the counter and THEN juice it! I put all my tough asparagus ends in a big ziploc in the freezer. Once I have a full bag I can make asparagus soup because if you blend with a high powered blender (I have a Blendtec) it will take care of those tough ends.

Great tip is pick up some shelf stable milk at the $tree(they carry whole, 1%, 2%, almond and oat milk. Then you always have milk for recipes without having to buy a whole gallon or time sensitive.

LOVE the Mama and Becky videos! Tell sweet Mama to look for a helix lemon juicer, she will LOVE IT, easier on aging hands!😉 Also! Tell her if she holds the lemon in the opposite hand & turns her zester upside down and drags it across her lemon, she can see how much of the zest she's getting off her lemon (not pith) AND she catches all the zest on top of the zester, seeing how much she's actually getting. It was a total game changer for me on only getting zest. 😊👍
"Cupboards" are freestanding units of shelves, some with drawers at the bottom and they can be open fronted or enclosed with doors like an armoire. Cabinets are permanently installed against walls or into permanently attached work islands. It's a bigger difference than between a sharpening wand or a honing rod which is merely linguistic, more like the difference between an "ice box' and a refrigerator which are different things.

I learned a new trick for scalloped potatoes...put the in your instant pot with the chicken broth and cook the sliced potatoes for 5 minutes and then pour the cheese sauce over and then bake in the over until you have your desired brown-ness.

I love scalloped potatoes. I make the traditional without cheese, just a nice bechamel sauce with a tiny bit of fresh nutmeg. That sauce is how my mom got us kids to eat broccoli and brussels sprouts.😄 Y'all are fun to watch! Happy Easter🐇🐣💐
With you scalloped potatoes/potatoes au gratin you can also intersperse your potatoes with some squash carrots sweet potatoes etc. It offers variety in texture and flavour in finished product.
For my potato bake I always sauté the onions first whatever the recipe says it takes away that raw onion taste. It’s the one recipe that makes me glad I have a mandolin! Happy Easter ❤❤

Hi guys. Just a quick note on the two tools ... the second smaller item is called a 'steel'. You might see chefs and butchers pull one out and run their knife along it a few times. It doesn't sharpen the knife, it just gives it a quick clean up before using. It maintains the knife's sharpness for a little longer before it needs proper sharpening. Love all your recipes!!

So the reason for adding the lemon juice to the milk / sour cream mixture and having it sit for 3 minutes is so that it can curdle and become like a buttermilk which helps with the richness and the flavor of the cake.
Hey Becky I always wonder why you use a knife for thin slicing and not a good mandoline with adjustable slice thickness? My mother in law gave me one for Christmas three years ago and it has been a game changer. It is so much tidier and quicker especially if you need to slice a bunch of stuff. But maybe you just enjoy using your knife more which is also totally valid, I just thought I mention it. Thank you for letting us be part of your life and giving us amazing content.
Hi Becki. I recently discovered Chef Jean Pierre’s RUclips channel and found under his Vegetable episode, he demonstrates how to prepare/cut several vegetables. I was intrigued by how he cleaned/cut asparagus and broccoli. I’ve tried both and was surprised at how little waste I had! Peeling the bottom 3/4 of an asparagus stalk vs breaking the ends off saved so much from going into the compost and stalks of the broccoli were so tasty. Thought I’d share this recent discovery 😊.
if not eating the "tough" part/stem of either asparagus, broccoli or even cauliflower..save in a freezer bags and use for stick making day! then compost the cooked stems etc cut once use thrice ! ☮️&🌱's -tracee (LeRoy's wife)

Hi Becky, if you are truly considering growing horseradish, I suggest you either grow it by the woods or build it It’s own garden box! horseradish roots, grow very deep into the ground, and even a small piece can create a whole new plant. Guaranteed it’ll spread! wherever you plant it the first year is where it will live for all of time! Lol I am a northern gardener. horseradish is very prevalent here. I would assume even more so in a zone 7 climate. Be careful where you plant horseradish it’ll be there for your grandchildren!♥️ happy Easter 🐣
In New Orleans we have a Chantilly cake which is a white cake with mixed berries and a wonderfully light cream cheese, mascarpone cheese frosting. It is a favorite, especially around Easter
I love watching you and your mom! When citrus fruits are in season, I zest in two forms (microplane shreds and vegetable peeler strips) and keep in jars in the freezer. I also freeze juice in icecube trays and store in bags. Then I have zest for baked goods and desserts all year long (cakes, pancakes, baked oatmeal, muffins, mousses, cheesecakes, …) and for cocktails and other drinks (great for gin&tonic, sangrias, lemonades,…). I don’t have a freeze dryer, so maybe you could try to make citrus peal powder and let us know how it turns out! I’m guessing it’s a flavor bomb!
Never made scalloped potatoes with the peel left on, but a few people here on youtube do, so next time I will leave peels on when I make my scalloped potatoes and ham! Love leg of lamb(my Mom always made with Eggplant Parmesan, because when we first had both was at dinner at a friends and that is what she made together. Yummy!). Love the idea of the peas and shallots(have never cook with shallots), will try that recipe for sure! Thank both you and your Mom!

Hello Bekky, your mum was saying about getting more out of the lemons, she is full of so much info but another way of getting more juice out of your lemons is to roll them and even putting them into the microwave for just a couple of seconds, you will really be surprised how much more juice you will get out of your lemons.
I own a bakery and I put the cakes back in the pan after they have cooled on the rack and I wrap the whole pan. The metal helps it stay colder in the fridge. I dont ever freeze my cakes. They have a tendancy to have air blow outs in the frosting as the temp comes back up.
Becky, I can't believe you hand sliced all those potatoes. You have excellent knife skills but think about using a Cuisinart for slicing those spuds. Love the look of the au gratin dish with the potatoes alternating columns. Your mom is a hoot, love the dynamic duo in the kitchen.😍

Great tip is pick up some shelf stable milk at the $tree(they carry whole, 1%, 2%, almond and oat milk. Then you always have milk for recipes without having to buy a whole gallon or time sensitive.
I really love the times when you two shop and/or cook together, as well as other homestead activities. Also your Dad, Renée, Josh or either family members are involved.
If you put a towel or dry washcloth under the cutting board it prevents it from moving around.

LOVE the Mama and Becky videos! Tell sweet Mama to look for a helix lemon juicer, she will LOVE IT, easier on aging hands!😉 Also! Tell her if she holds the lemon in the opposite hand & turns her zester upside down and drags it across her lemon, she can see how much of the zest she's getting off her lemon (not pith) AND she catches all the zest on top of the zester, seeing how much she's actually getting. It was a total game changer for me on only getting zest. 😊👍
"Cupboards" are freestanding units of shelves, some with drawers at the bottom and they can be open fronted or enclosed with doors like an armoire. Cabinets are permanently installed against walls or into permanently attached work islands. It's a bigger difference than between a sharpening wand or a honing rod which is merely linguistic, more like the difference between an "ice box' and a refrigerator which are different things.

I learned a new trick for scalloped potatoes...put the in your instant pot with the chicken broth and cook the sliced potatoes for 5 minutes and then pour the cheese sauce over and then bake in the over until you have your desired brown-ness.

I love scalloped potatoes. I make the traditional without cheese, just a nice bechamel sauce with a tiny bit of fresh nutmeg. That sauce is how my mom got us kids to eat broccoli and brussels sprouts.😄 Y'all are fun to watch! Happy Easter🐇🐣💐

With you scalloped potatoes/potatoes au gratin you can also intersperse your potatoes with some squash carrots sweet potatoes etc. It offers variety in texture and flavour in finished product.
For my potato bake I always sauté the onions first whatever the recipe says it takes away that raw onion taste. It’s the one recipe that makes me glad I have a mandolin! Happy Easter ❤❤

My Mom and I used to cook the holiday meals like this up until a few years ago but now She has advanced Alzheimer's so we can't. She's 85 and I moved in with Her so we find other fun things to do. I always butter my dish before putting in my potatoes. Just helps clean up and does add another layer of richness to the recipe.
Hi guys. Just a quick note on the two tools ... the second smaller item is called a 'steel'. You might see chefs and butchers pull one out and run their knife along it a few times. It doesn't sharpen the knife, it just gives it a quick clean up before using. It maintains the knife's sharpness for a little longer before it needs proper sharpening. Love all your recipes!!

Use a wire whisk to stir the flour in the wire strainer. It will help the flour pass through super quick. I used to do this when I worked at a bakery.

A mandolin is great for doing thinly sliced vegetables and so fast ,much easier than hand slicing.
My mom's bday is April 8th she is 84 years old!! We are celebrating on Easter on Sunday April 9th... she is awesome like your mom!! We are having ham and scallop potatoes but with cheese!! So YUMMY HAPPY EASTER!

So the reason for adding the lemon juice to the milk / sour cream mixture and having it sit for 3 minutes is so that it can curdle and become like a buttermilk which helps with the richness and the flavor of the cake.

Hey Becky I always wonder why you use a knife for thin slicing and not a good mandoline with adjustable slice thickness? My mother in law gave me one for Christmas three years ago and it has been a game changer. It is so much tidier and quicker especially if you need to slice a bunch of stuff. But maybe you just enjoy using your knife more which is also totally valid, I just thought I mention it. Thank you for letting us be part of your life and giving us amazing content.
Hi Becki. I recently discovered Chef Jean Pierre’s RUclips channel and found under his Vegetable episode, he demonstrates how to prepare/cut several vegetables. I was intrigued by how he cleaned/cut asparagus and broccoli. I’ve tried both and was surprised at how little waste I had! Peeling the bottom 3/4 of an asparagus stalk vs breaking the ends off saved so much from going into the compost and stalks of the broccoli were so tasty. Thought I’d share this recent discovery 😊.
if not eating the "tough" part/stem of either asparagus, broccoli or even cauliflower..save in a freezer bags and use for stick making day!
then compost the cooked stems etc
cut once use thrice !

Hi Becky, if you are truly considering growing horseradish, I suggest you either grow it by the woods or build it It’s own garden box! horseradish roots, grow very deep into the ground, and even a small piece can create a whole new plant. Guaranteed it’ll spread! wherever you plant it the first year is where it will live for all of time! Lol I am a northern gardener. horseradish is very prevalent here. I would assume even more so in a zone 7 climate. Be careful where you plant horseradish it’ll be there for your grandchildren!♥️ happy Easter 🐣
In New Orleans we have a Chantilly cake which is a white cake with mixed berries and a wonderfully light cream cheese, mascarpone cheese frosting. It is a favorite, especially around Easter

When citrus fruits are in season, I zest in two forms (microplane shreds and vegetable peeler strips) and keep in jars in the freezer. I also freeze juice in icecube trays and store in bags. Then I have zest for baked goods and desserts all year long (cakes, pancakes, baked oatmeal, muffins, mousses, cheesecakes, …) and for cocktails and other drinks (great for gin&tonic, sangrias, lemonades,…). I don’t have a freeze dryer, so maybe you could try to make citrus peal powder and let us know how it turns out! I’m guessing it’s a flavor bomb!
Never made scalloped potatoes with the peel left on, but a few people here on youtube do, so next time I will leave peels on when I make my scalloped potatoes and ham! Love leg of lamb(my Mom always made with Eggplant Parmesan, because when we first had both was at dinner at a friends and that is what she made together. Yummy!). Love the idea of the peas and shallots(have never cook with shallots), will try that recipe for sure! Thank both you and your Mom!

Hello Bekky, your mum was saying about getting more out of the lemons, she is full of so much info but another way of getting more juice out of your lemons is to roll them and even putting them into the microwave for just a couple of seconds, you will really be surprised how much more juice you will get out of your lemons.
I always love watching you, but it is such a treat when it’s you and your mom. It all looks so delicious.
I own a bakery and I put the cakes back in the pan after they have cooled on the rack and I wrap the whole pan. The metal helps it stay colder in the fridge. I dont ever freeze my cakes. They have a tendancy to have air blow outs in the frosting as the temp comes back up.

Becky my dump pizza is Biscuits and you cut them in to small pieces and then you fry your hamburger and you put your hamburger over the Biscuits and. dump your pasta sauce over the hamburger and add your cheese and bake for 20 to 25 minute.
