For years I’ve been enjoying similar sandwiches. Along with the chips I use raspberry jam and a cheese slice but the cheese slice obviously goes between the bologna and the bread, not in the middle with the chips. Or for something completely different…PB and Jam!
I do mine with a solid half pound slab of Wunderbar deli bologna, fried on medium low long enough to get it steamy hot all the way through then turn up the heat to get a nice burnt crust on both sides, finishing with a 1/8inch thick slice smoked gouda on top and covered till the cheese is fully melted. Then put it on buttered toast with dukes mayo and mustard with a spicy dill pickle on the side.

I hate to ask, but is there some way you could slow motion the part of the video where you are actually using the knife to cut the bologna? Maybe if there were just some way to temporarily stop the video and then start it back again from that same spot, that might help me to be able to see exactly what you are doing. I want to make this, but I want to do it right, so again, if I could see you cut the bologna again, that would be great. Now let me get this right, you can use the same kind of knife to spread jelly AND cut bologna? Wow! What will they come up with next? Come to think of it, I didn't actually see you spread the jelly. I mean you say you did and I saw that it was spread, but hell it could be camera tricks or something. I can't really think of a reason to fake that so I'll give you the benefit of the doubt, but actually seeing footage would certainly make it more believable.
I would recommend that you download the Boomerang app on your phone and record from 3:32 to 3:53. Then just set it to play back and forth on loop. Best practice would be to stare at that for about 5-6 hours before you try practicing it on your own. I did use one knife for the whole recipe, however I would typically use a dedicated knife for each step in the process for proper sanitation. With stuff like this you sometimes have to simplify to make it accessible to the common cook. You got me though, shrewd eye... the jelly spread was done with CGI. There is a fantastic After-Effects Plugin specifically for this purpose called JamTime 4.1. I find that version 4 generates much more realistic clumps than version 3. I tried to find the download link, but it seems like it is no longer available. If you do try the recipe, I wish you great success!
